CHEESE AND SPINACH PUFF PASTRY POCKETS

Steps:
- Preheat the oven to 400 degrees F.
- Line a heavy large baking sheet with parchment paper. Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes. Using a small knife, cut out the center of the pastry shells.
- Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl. Stir in the spinach, Fontina cheese, Parmesan, and green onions. Spoon the spinach mixture into the baked pastry shells. Bake until the pastries are golden brown and the filling is hot, about 25 to 30 minutes. Transfer the pastries to a platter and serve.
POFFERTJES (DUTCH MINI PANCAKES)
An easy, no-yeast recipe for Dutch pancakes, which are called "poffertjes" in the Netherlands. They are traditionally made in a poffertjes pan which has indents, but you can use a large frying pan and scoop a small tablespoon of batter per poffertje into the pan. Serve the poffertjes warm with a knob of butter and powdered sugar.

- Combine flour and salt in a large bowl; gradually whisk in milk. Add eggs and maple syrup and mix until batter is smooth. Spoon into a piping bag.
- Heat a poffertjes pan over high heat and lightly grease indentations. Fill the holes 3/4 full with batter in the piping bag and cook over high heat until golden brown; turn them over with a fork and cook the other side until golden brown.

- Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

SPINACH POFFERTJES
Savoury version of Poffertjes, dutch pancakes. Just posted the sweet version also. Haven't tried these either but posted in honour of Aussie/Kiwi world tour. Recipe found on Typical Dutch Stuff.

Steps:
- Wash the spinach. Let it boil down in a large pan.
- Use a food processor to puree the spinach.
- Add the spinach and the remaining water in a
- measuring cup, and add milk until it reaches 4dl (400ml).
- Mix the self-raising flour and the salt in a bowl.
- Stir the spinach mixture in the bowl.
- Add each egg, one by one, while stirring.
- Add 75g of the grated cheese.
- (To make actual poffertjes you will need a poffertjespan, but if you do not own one of these, then you can also make small pancakes.).
- Heat the pan, and grease it with butter.
- Pour in a small amount of the mixture.
- Flip them when the top is almost cooked.
- Repeat this step until all the mixture has been used.
- Serve with grated cheese and butter.

DUTCH OLD-FASHIONED POFFERTJES (MADE WITH YEAST)
This recipe is an old Dutch recipe. It is originally in metric measures (see footnote for metric measures) that are converted here. To bake poffertjes, you need a special poffertjes pan. I have used a blinis' pan, others have used a Danish "aebleskiver"pan or a "donutfactory". Serve with butter and powdered sugar.

- Combine yeast with 3 table spoons of luke warm milk in a bowl and allow to dissolve, about 5 minutes.
- Combine flour and buckwheat flour in a bowl. Add yeast mixture, remaining milk, and water; stir to combine. The batter has to be slightly thick. Stir in melted butter and egg. The batter needs to be luke warm. Cover bowl and set aside in a warm place to rise for about 30 minutes.
- Heat poffertjes pan and put some oil or butter in there to make sure the poffertjes don't stick to the pan. Put a little batter into each hole. When the top side of the poffertjes are almost dry, turn the poffertjes over to bake the other side. The poffertjes need to be light brown on each side.
