1 large red onion
Light colored oil such as peanut, vegetable or canola, for drizzling
Steak seasoning blend or coarse salt and pepper

Steps:

  • Trim the a thin slice off the side of the whole, unpeeled onion. Set the onion flat on the cut surface for stability. Cut the onion into 4 (1-inch thick) slices. Remove the outer ring of skin from each slice. Drizzle the sliced onion with light colored oil and season both sides with steak seasoning or salt and pepper, to taste. Grill on hot grill or on a nonstick griddle for 5 to 7 minutes on each side until onion is tender and has begun to caramelize.

Spinach is served two ways in this salad: Sauteed with meaty shiitake mushrooms and raw. Red onions pickled in white balsamic vinegar lend brightness, while toasted sesame seeds make an unexpectedly delicious final flourish.

1/2 cup white balsamic vinegar
2 teaspoons sugar
Kosher salt and freshly ground pepper
1 small red onion, thinly sliced into rounds (1 cup)
2 pounds spinach (from 3 large bunches), tough stems removed, thoroughly washed and drained
1/2 cup extra-virgin olive oil
1 pound shiitake mushrooms, stemmed and halved, or sliced if large
1/4 cup sesame seeds, toasted

Steps:

  • In a saucepan, bring vinegar, sugar, and 1 teaspoon salt to a simmer. Remove from heat; stir in onion. Let cool completely. If desired, refrigerate in an airtight container up to 1 week. Drain, reserving onion and 1/3 cup liquid.
  • Place spinach in a large bowl. In a large straight-sided skillet or shallow pot, heat 1/4 cup oil over medium-high. Add mushrooms, season with salt and pepper, and cook, stirring occasionally, until tender and golden brown in places, about 15 minutes. Add about one-quarter of spinach and cook just until collapsed, about 1 minute. Immediately spoon mushroom mixture over spinach in bowl; add reserved pickled onion and pickling liquid, remaining 1/4 cup oil, and sesame seeds. Toss to evenly coat. Season with salt and pepper; serve.

1/2 cup water
1/4 cup white wine vinegar
3 tablespoons tahini (sesame seedpaste)
2 tablespoons coarse-grained mustard
1 teaspoon honey
1 small garlic clove, minced
3/4 vegetable oil
Salad
2 large red onions
12 cups (packed) baby spinach,trimmed
10 large radicchio leaves

Steps:

  • For Vinaigrette:
  • Combine all ingredients except oil in blender and blend well. Gradually blend in oil. Season to taste with salt and pepper.
  • For Salad:
  • Cut onions lengthwise into 1/2-inch-thick wedges, leaving root ends intact. Place onions in 15x10-inch glass baking dish. Pour 1 cup vinaigrette over onions, coating evenly. Let marinate 3 hours. Chill remaining dressing. (Can be made 1 day ahead. Chill onions.)
  • Prepare barbecue (medium-high-heat) or preheat broiler. Sprinkle onions with salt and pepper. Grill or broil onions until golden. turning occasionally, about 12 minutes. (Can be made 6 hours ahead. Let stand at room temperature.)
  • Place spinach in large bowl. Toss with enough vinaigrette to coat. Season with salt and pepper. Fill radicchio leaves with spinach. Top with grilled onions. Pass remaining dressing separately.

1 large red onion, cut into 12 rings (1/4-inch-thick)
2 teaspoons dark sesame oil, divided
1 1/2 tablespoons fresh lemon juice
1 tablespoon low sodium soy sauce
1 tablespoon honey
10 cups baby spinach leaves (about 10 ounces)
1/4 teaspoon freshly ground black pepper, or to taste
1/8 teaspoon salt, or to taste
crushed red pepper flakes, to taste
1 tablespoon sesame seeds, toasted

Steps:

  • Prepare grill.
  • Combine onion and 1/2 teaspoon oil, tossing to coat.
  • Arrange onion on a grill rack; grill 9 minutes or until browned and tender, turning frequently.
  • Combine remaining 1 1/2 teaspoons oil, juice, soy sauce, and honey in a small bowl, stirring with a whisk.
  • Place spinach in a large bowl; sprinkle with pepper and salt.
  • Add onions.
  • Drizzle oil mixture over spinach, tossing gently to coat.
  • Sprinkle with sesame seeds.

Cooked Spinach Salad with Soy and Sesame image

2 pounds spinach, well rinsed, thick stems removed
1 clove garlic, very finely chopped
5 scallions, green parts only, trimmed and finely chopped
2 tablespoons balsamic vinegar
2 tablespoons good-quality soy sauce, such as Kikkoman
1 tablespoon Asian sesame oil
Squeeze of fresh lemon juice
Coarse (kosher) salt, to taste
2 tablespoons sesame seeds, toasted (see Note)

Steps:

  • Wilt, drain, and squeeze dry the spinach. Chop the spinach into large, uneven pieces.
  • Place the garlic, scallions, vinegar, soy sauce, and oil in a large bowl and whisk thoroughly to combne. Add the spinach and toss to evenly coat the leaves. Season with a good squeeze of lemon juice and salt and pepper; taste and adjust the seasoning.
  • To serve, divide the salad among four bowls and sprinkle each with a portion of toasted sesame seeds.
  • Note: To toast the sesame seeds, preheat the oven to 350 degrees F. Scatter the seeds on a baking shseet and bake until lightly browned, 3 to 4 minutes.

4 skinned and boneless chicken breast halves, grilled
1/2 cup sesame and poppy seed vinaigrette (recipe follows)
6 cups shredded baby spinach leaves
2 roma tomatoes, diced
1/2 cup sugar-glazed almonds (recipe follows)
1/4 cup minced red onion
2 hard-cooked eggs, sliced
salt and pepper, to taste
3 leaves romaine lettuce, for serving
additional wedges roma tomato, for garnish
4 tablespoons red wine vinegar or 4 tablespoons white wine vinegar
1 tablespoon granulated sugar
2 tablespoons sesame seeds, lightly toasted
1 tablespoon poppy seed
1 tablespoon coarsely chopped onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 teaspoon salt
1/3 cup canola oil
1/2 cup sliced almonds
2 tablespoons sugar

Steps:

  • Cut the grilled and cooled chicken into 1/4-inch pieces and combine with the vinaigrette, spinach leaves, diced tomatoes, almonds, onion and eggs. Add more vinaigrette as necessary to reach desired level of coating. Add the salt and pepper, to taste, and toss again.
  • To serve, arrange some of the Romaine lettuce leaves on each of 4 plates, then divide salad mixture between them. Garnish with additional tomato wedges, if desired, and serve.
  • SESAME AND POPPY SEED VINAIGRETTE: Place vinegar into a blender or food processor. Add sugar, sesame seeds, poppy seeds, onion, Worcestershire sauce, paprika and salt. Blend until most sesame seeds are ground (stop motor a couple times and scrape down sides of container). Scrape contents into a small bowl, then whisk in canola oil. Makes 3/4 cup dressing.
  • SUGAR-GLAZED ALMONDS: Place a sheet of waxed (or parchment) paper on counter. In a nonstick skillet, roast sliced almonds over medium-high heat until golden, shaking and tossing pan to evenly toast almonds and to prevent scorching. As nuts turn golden, sprinkle on about 2 tablespoons sugar and, stirring and tossing as necessary, cook until sugar melts around almonds. Remove from heat and quickly scrape almonds onto sheet of waxed paper to cool. Makes 1/2 cup almonds.
