Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
- Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
- In a large bowl, beat together eggs and cream. Stir in salt, pepper and nutmeg. Pour into pie pan, top with shredded Swiss cheese. dot with remaining 1 tablespoon of butter.
- Bake 25 to 30 minutes until set and golden brown. Cool 5 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish.
- In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges.

Steps:
- Preheat oven to 400°F (205¹C).
- Lightly grease 10-inch pie plate.
- Heat 1 inch salted water (1/2 tsp salt to 1 cup water) to boiling.
- Add spinach, cover and heat to boiling.
- Cook spinach until almost tender (about 5 minutes).
- Drain spinach thoroughly.
- Mix spinach, onion and cheese in pie plate.
- Beat remaining ingredients in blender on High until smooth (about 15 seconds).
- Pour into pie plate.
- Bake at 400°F (205°C) about 30 minutes or until knife inserted in center comes out clean.
- Cool 5 minutes.
- Garnish as desired.
- NOTE: High altitude increase baking time to 35 minutes.
GREEK SWISS CHARD PIE
You may be familiar with Spanakopita, the Greek spinach pie, and this is very similar. I prefer sturdier greens like chard to spinach, because they retain their dark green color and fresh flavor better when cooked for a long time in the phyllo dough.

- Bring a large pot of generously salted water to a boil while you stem and wash the greens. Wash them in 2 changes of water, lifting them from the water so that the dirt stays behind. Fill a bowl with ice water. When the water comes to a boil, add the chard and blanch for 1 minute. Using a slotted spoon or a skimmer, transfer to the ice water. Let sit just until cool, a few minutes, then drain and squeeze out excess water by taking up bunches of the greens, making a fist around them and squeezing. Chop coarsely and set aside.
- Preheat the oven to 375ºF. Oil or butter a 10-inch tart or cake pan (I like to use a ceramic dish for this). Heat the olive oil in a large skillet over medium heat and add the onions. Cook, stirring often, until tender but not browned, about 5 minutes. Add the garlic and cook, stirring, for another 30 seconds to a minute, until the garlic is fragrant. Stir in the greens, herbs, and 1/2 teaspoon salt, and stir the mixture for a minute, until the greens are coated with oil. Remove from the heat.
- Beat the eggs in a large bowl or the bowl of a food processor fitted with the steel blade. If you are not using phyllo dough for this, remove 2 tablespoons of the beaten eggs, for brushing the crust, and crumble or blend in the feta. Toss with the greens, and season to taste with salt and pepper.
- Line the pie dish with two-thirds of the dough, or with 7 pieces of phyllo, lightly brushing each piece with butter or oil and turning the dish after each addition so that the edges of the phyllo drape evenly over the pan. Fill with the greens mixture. If using phyllo, fold the draped edges in over the filling, lightly brushing the folded in sheets of phyllo ,then layer the remaining 5 pieces on top, brushing each piece with butter or olive oil. Stuff the edges into the sides of the pan. For pie dough, roll out the other piece of the dough and place over the filling. Crimp the bottom and top edges together, then pinch an attractive fluted edge all the way around the rim of the pie. Brush the top with the beaten egg you set aside, and make a few slashes in the top crust so that steam can escape as the pie bakes.
- Bake 40 to 50 minutes in the preheated oven, until the crust is golden. Serve hot, warm, or room temperature.

- Set a large saucepan over moderately high heat. Add large handfuls of the spinach, tossing constantly with tongs until the leaves are partially wilted before adding the next handful. Drain the spinach and let cool, then squeeze out as much liquid as possible. Coarsely chop the spinach and transfer to a large bowl. Return the saucepan to moderately high heat and repeat with the chard leaves, squeezing them dry.
- Wipe out the saucepan. Add 2 tablespoons of the olive oil and heat until shimmering. Add the Swiss chard stems and ribs and cook over moderately high heat until crisp-tender, about 4 minutes. Add the scallions and sauté until tender, about 2 minutes. Add the scallions and Swiss chard stems and ribs to the bowl and stir in the feta, cottage cheese, parsley, dill, lemon juice and nutmeg. Season with salt and pepper and stir in the eggs.
- Preheat the oven to 350°. In a small bowl, mix the clarified butter with the remaining 2 tablespoons of olive oil. Lightly grease a 9-by-13-inch glass or ceramic baking dish. Spread 1 sheet of phyllo dough on a work surface and brush with the butter mixture. Cover with a second sheet of phyllo and brush again. Continue until you have a stack of 8 buttered phyllo sheets. Repeat to form a second stack of 8 buttered phyllo sheets. Line the baking dish with a phyllo stack. Spread the spinach filling evenly on top. Cover with the second phyllo stack; trim the top layer of phyllo flush with that of the bottom layer. Roll the phyllo edges inward to form a border. Using a sharp knife, lightly score the top stack of phyllo to divide the pie into 8 even servings. Brush any remaining butter over the top.
- Bake the pie in the bottom of the oven for 1 1/2 hours, or until the phyllo is golden and crisp. Let stand for at least 10 minutes before serving.
