TUNA SPINACH BRAID
This versatile recipe can be served as a main dish or as an appetizer. Usually, I have most of the ingredients already on hand in the refrigerator and cupboard.

- In a small bowl, combine spinach, tuna, cottage cheese, Parmesan cheese and garlic; set aside., Unroll crescent roll dough onto waxed paper; do not separate dough. Press to seal seams and perforations. Cover with another piece of waxed paper. Roll dough to form a 14x10-in. rectangle., Transfer dough to a greased 15x10x1-in. baking pan, discarding waxed paper. Spread filling down center of dough lengthwise in a 3-1/2-in. strip. Top with mozzarella cheese., On each long side, cut 1-in.-wide strips almost to edge of filling. Starting at 1 end, fold alternating strips at an angle across filling; pinch ends to seal. Combine egg with water and brush over top. Bake at 375° for 18-20 minutes or until golden brown. Serve warm.

- Mix all the ingredients for the salad and set aside. Heat 1 tsp oil in a large non-stick pan and fry the garlic briefly. Stir in the spinach to wilt, then mix in the tomato purée, tuna and cottage cheese. Set aside.
- Beat the eggs with the flour and 2 tbsp water. Heat the remaining oil in a medium non-stick pan, add half the batter and swirl round the pan to coat the base. Cook briefly until set, then flip over with a palate knife to cook the other side for 1 min. Repeat with the remaining batter. Put the pancakes on serving plates, spoon the filling down one side, roll up and serve with the salad.

CREAMY SPINACH TUNA CASSEROLE
This tuna casserole is anything but basic. We took a classic recipe and dressed it up with cheesy crescent pinwheels and spinach. And thanks to rotisserie chicken, your tuna noodle casserole can easily be transformed into chicken noodle casserole.

- Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package.
- In 12-inch skillet, heat soup and 1 1/2 cups of the cheese over medium heat until cheese is melted. Stir in cooked noodles, tuna, spinach, milk and lemon peel; heat until bubbly. Spoon mixture into casserole.
- Unroll dough; firmly press perforations to seal. Sprinkle dough with remaining 1/2 cup cheese. Starting at short side, roll up dough; pinch seam to seal. Using serrated knife, cut roll into 8 slices. Place slices, cut side up, on top of tuna mixture.
- Bake 20 to 25 minutes or until filling is bubbly and dough is deep golden brown.

SPINACH ROLLS WITH PUFF PASTRY
A vegetarian version of mini sausage rolls but made with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.

- Heat oil in a skillet over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir in spinach and cook until warmed through, 3 to 5 minutes; season with salt and mix well. Transfer to a bowl and mix in feta cheese.
- Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
- Lay 1 sheet of puff pastry on a lightly floured surface and cut in half lengthwise. Roll 1 half out with a rolling pin so it is wide enough to fold twice lengthwise. Mix egg and milk together in a small bowl.
- Spread 1/6 of the spinach mixture lengthwise in the center of the puff pastry. Roll one side over the filling and brush the other side with egg-milk mixture. Roll over again to seal.
- Brush top of roll with egg-milk mixture and sprinkle with sesame seeds. Cut roll into 6 small rolls. Repeat with the remaining puff pastry. Place cut rolls onto the prepared baking sheets.
- Bake in the preheated oven until spinach rolls are puffed up and golden, 20 to 25 minutes.

This is from an old Pampas cookbook I found while op-shopping. Sounds like a great vegetarian alternative to sausage rolls, but not recommended to freeze.

Steps:
- Combine, spinach, tuna, onion, mayo & black pepper; mix well.
- Cut each sheet of pastry in half and divide filling between pastry sheets spooning it down the centre of each.
- Brush edges of pastry with water and roll pastry over filling, seal edge firmly.
- Using a sharp knife, cut each pastry roll into 4. Place rolls on a lightly greased baking tray and glaze with beaten egg.
- Bake at 180.C for 30-35 mins or until golden brown.

SPINACH-TUNA PEPPERS ROLLS
This is a real celebration of summer colours. Red and yellow bell peppers, green spinach and white garlic! Try this easy made Roasted Bell Peppers Rolls as appetizer.

Steps:
- Heat oven to 210C.
- Put the peppers into large baking dish and roast for 30 mins.
- Peel the peppers and divide into 3 parts each.
- Heat olive oil in a pan.
- Wash the spinach and add to the pan.
- Leave the spinach to wilt for 1 min, stirring once or twice.
- Peel and slice 2 garlic cloves.
- Put the tuna, capers, spinach, garlic and Basil leaves into the blender.
- Puree.
- Lay the peppers pieces on a work surface and put a teaspoon of the spinach-tuna mix over.
- Roll up the pepper pieces put on a plate.
- Peel and slice the garlic clove.
- Mix the garlic with the olive oil.
- Sprinkle the garlic olive oil over the pepper rolls.
SPICY TUNA ROLLS

- In a large saute pan over medium-high heat, add 2 tablespoons of oil. Add the onions, carrots, mushrooms, garlic, sriracha, soy sauce and lime juice. Cook until the vegetables are softened, stirring frequently.
- Remove from heat and transfer to a medium-sized bowl. Add the cilantro and allow the mixture to cool.
- In a small bowl combine the egg white and cornstarch. This will be used as an egg wash.
- Preheat oil in a deep-fryer to 350 degrees F.
- On a flat work surface, lay out 1 egg roll wrapper. Add a layer of vegetables to the lower part of the wrapper and top with 1 strip of tuna. Brush the sides of the wrapper with egg wash and roll up tightly once, bringing the sides over, and then continue to roll until finished. Put the roll on a large plate and repeat with remaining wrappers and filling.
- Fry the egg rolls, in batches, until golden brown, about 2 minutes. Remove egg rolls to paper towels to drain. Transfer the rolls to a serving platter, garnish with scallions and orange slices and serve with Citrus Dipping Sauce.
- In a small bowl, mix all ingredients and reserve.
SEARED TUNA PEPPER STEAKS

- Press 1/2 teaspoon cracked pepper onto each side of each tuna steak and sprinkle lightly with salt. Heat oil in heavy medium skillet over medium-high heat. Add tuna to skillet and sear until cooked to desired doneness, about 3 1/2 minutes per side for medium. Transfer tuna to plates; tent with foil to keep warm.
- Add butter and shallots to same skillet. Sauté over medium heat until shallots soften, about 3 minutes. Remove skillet from heat. Add broth, then brandy. Place skillet over high heat and boil until sauce is reduced to 1/3 cup, about 8 minutes. Season with salt and remaining 1/4 teaspoon pepper. Spoon sauce over tuna.
PASTA WITH TUNA, SPINACH, AND HOT PEPPER
The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :)

- Bring a large pot of well-salted water to a boil over high heat. Add the pasta and boil until al dente.
- While pasta cooks, heat olive oil in a large skillet on medium-low heat. Add the garlic and hot pepper flakes and cook until garlic is fragrant and sizzling. NOTE: start with the 1/4 teaspoon of red pepper flakes, then work up from there with your taste.
- Add tuna and shred it into fine flakes with a spoon in your sauce. Season with salt and lemon juice, if desired. Lower the heat and keep warm while waiting for the pasta to cook.
- Just before the pasta is ready, set aside 1 cup of the pasta water. Drain pasta and return it to the warm pot set over moderate heat.
- Depending on the size of your pot and skillet: add the spinach and the tuna mixture to the pasta in the pasta pot, or add the drained pasta to the skillet with the tuna mixture and add the spinach.
- Toss all of this together with tongs, moistening with some of the reserved pasta water. The spinach will wilt in the heat of the pasta. Divide among warm bowls and serve immediately.
- Top with some parmesan cheese (if desired) and enjoy!

- Put the rice on top of the seaweed and spread it down. Flip over so rice side is down. Place tuna mixture in center of the seaweed. Using your fingertips, roll it up. Use a bamboo mat to push roll into a shape and push ingredients in on each side. Use a sharp knife dipped in water to cut into 6 pieces.
