SPINACH BEAN BURGERS
We like bean burgers and I decided to do these to try to incorporate more spinach into my kids food without completely hiding it so that they will try to accept it more easily in dishes that it doesnt hide well in.

Steps:
- Add navy beans, lentils, breadcrumbs, minced onion, garlic powder, and eggs to food processor. Process 1 minute or until thoroughly mixed.
- Removed from food processor into large bowl and mix the spinach in with a large spoon, or with your hands. If you have some who don't like spicy food, go ahead and shape a couple burgers now. Then add red pepper flake and mix thoroughly.
- Add oil to large fry pan and preheat. While heating pan, shape mix into burgers. These do not shrink like ground beef, so make them the size you would like the finished result to be.
- Fry 3-5 minutes per side until golden brown.
- Serve with your favorite hamburger toppings.

These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
- Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

- Heat a large saute pan over medium heat, and add olive oil. Add diced onion, and cook until translucent, about 2 minutes.
- Add garlic, and cook 1 minute. Add beans, and cook until hot and slightly softened, about 3 minutes. Add the spinach and vinegar, stirring frequently until spinach is wilted, about 3 minutes. Add the thyme, and season with the salt and pepper. Serve.

- Preheat oven to 400°F (200°C).
- In a sauté pan, heat the olive oil and add the spinach and a pinch of salt. Sauté until wilted. Set aside.
- Butter the English muffin and toast in the oven for 5-10 minutes or until brown.
- Heat a pot of water over medium heat. With a wooden spoon, swirl the water in the same direction.
- Quickly add the egg into the center of the swirling water, cover, and cook for 3-5 minutes or until egg white is set and yolk is still runny.
- Remove egg from water with a slotted spoon and set aside.
- In a blender, add the egg yolks and pulse for one minute. Add in the lemon juice, salt, and cayenne and run the blender. Slowly add in the melted butter and continue to blend until the mixture lightens in color. Add more melted butter for thinner consistency.
- Assemble the Benedict by layering the english muffin with the bacon, spinach, poached egg, and hollandaise sauce.
- Top with fresh chives.

- In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. - Heat a large skillet over medium-low heat and add the bacon. Cook it until crispy and the fat is rendered, then remove the bacon with a slotted spoon and let it drain on a paper towel. To the same skillet, add the spinach and garlic and stir to coat it in the bacon grease. Cook until the spinach is wilted 5 minutes. Remove from heat.
- Add all the contents of the spinach skillet to the bowl of a food processor. Add the beans, bacon, flour, eggs, cheese, scallions, salt and pepper. Pulse until the mixture is coarsely chopped, but not fully pureed. Use a spatula to remove the bean mixture from the food processor. Using your hands, form 6-8 patties out of the bean mixture, depending on your size of the bun.
- Heat the same skillet over medium heat and add the olive oil. Add the bean burgers and cook until golden on both sides, 4-5 minutes. Serve the burgers on toasted buns with the avocado cream on top.
- Wipe out the food processor from the bean mixture. Add the yogurt, avocado, salt and pepper and puree until smooth. This will stay good in the refrigerator 1-2 days if tightly covered.
