Yield Makes 12 rolls

Number Of Ingredients 8

3/4 cup plus 1 tablespoon warm milk (105-110°F)
2 1/4 teaspoons active dry yeast (from a 1/4-oz package)
2 1/2 tablespoons sugar
3 cups all-purpose flour
1 1/2 sticks (3/4 cup) unsalted butter, cut into bits
1 1/2 teaspoons salt
1 large egg
Special equipment: a muffin pan with 12 muffin cups

Steps:

  • Stir together milk, yeast, and 1/2 tablespoon sugar and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Pulse flour and butter in a food processor until mixture resembles fine bread crumbs, then stir together with salt and remaining 2 tablespoons sugar in a large bowl. Add yeast mixture and stir just until a dough forms.
  • Turn out dough onto a work surface (not floured) and knead until smooth and elastic, 8 to 10 minutes. Transfer to an oiled large bowl and turn dough to coat. Cover bowl with plastic wrap and let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 1 hour.
  • Punch down dough and turn out onto work surface (not floured). Divide into 12 equal portions.
  • Roll out 1 piece of dough into a 9- by 1-inch strip with a rolling pin, rolling and folding lengthwise and crosswise to make sides as straight as possible. Starting with 1 end, roll up strip and put, a spiral side up, in a muffin cup. Make 11 more rolls in same manner.
  • Cover rolls loosely with oiled plastic wrap and let rise in draft-free place at warm room temperature until doubled in bulk, 1 to 1 1/2 hours.
  • Preheat oven to 375°F.
  • Lightly beat egg with 1 teaspoon water and gently brush tops of rolls with some egg wash.
  • Bake in middle of oven until tops are golden and bottoms are golden brown and sound hollow when tapped, 18 to 20 minutes. Transfer to racks to cool completely.

When I married him, I discovered that my husband's family has the best cinnamon roll recipe! I asked his mom how to make homemade cinnamon rolls, and I've been making them ever since. Serve them with scrambled eggs, and you have a filling breakfast. As a variation, you can replace the filling with a mixture of raisins and pecans. -Shenai Fisher, Topeka, Kansas

1 package (1/4 ounce) active dry yeast
1 cup warm whole milk (110° to 115°)
1/2 cup sugar
1/3 cup butter, melted
2 large eggs, room temperature
1 teaspoon salt
4 to 4-1/2 cups all-purpose flour
FILLING:
3/4 cup packed brown sugar
2 tablespoons ground cinnamon
1/4 cup butter, melted, divided
FROSTING:
1/2 cup butter, softened
1/4 cup cream cheese, softened
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1-1/2 cups confectioners' sugar

Steps:

  • Dissolve yeast in warm milk. In another bowl, combine sugar, butter, eggs, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Mix brown sugar and cinnamon. Punch down dough; divide in half. On a lightly floured surface, roll 1 portion into an 11x8-in. rectangle. Brush with 2 tablespoons butter; sprinkle with half the brown sugar mixture to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 8 slices; place in a greased 13x9-in. pan, cut side down. Cover with a kitchen towel. Repeat with remaining dough and filling. Let rise in a warm place until doubled, about 1 hour. Preheat oven to 350°., Bake until golden brown, 20-25 minutes. Cool on wire racks., For frosting, beat butter, cream cheese, vanilla and salt until blended; gradually beat in confectioners' sugar. Spread over tops. Refrigerate leftovers.

1 cup Butter Flavor Crisco
1 cup firmly packed dark brown sugar
2 large eggs
1 tablespoon vanilla
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 teaspoons cinnamon
4 tablespoons sugar
1 tablespoon cinnamon
1 tablespoon sugar
1 teaspoon cinnamon
2 cups powdered sugar
4 -5 tablespoons heavy cream
1 tablespoon melted butter
1 teaspoon vanilla

Steps:

  • For both cinnamon mixtures, mix (in separate bowls) well, set aside.
  • For cookie dough, combine shortening and dark brown sugar in large bowl.
  • Beat til well blended.
  • Beat in eggs and vanilla til very well blended.
  • Combine flour, baking powder, salt and cinnamon in small bowl.
  • Add to creamed mixture, mix well.
  • Turn dough onto sheet of waxed paper and spread/pat out to a 9x7" rectangle.
  • Sprinkle evenly with Inside cinnamon mixture.
  • Roll up jelly-roll style into a log.
  • Dust all sides with Outside cinnamon mixture.
  • Wrap tightly with plastic wrap.
  • Refrigerate 4 hours or overnight.
  • Heat oven to 375º, spray cookie sheets with butter-flavored cooking spray.
  • Cut cold log into about 1/4" slices. It's ok if you can't slice that thin.
  • Bake for 8 minutes or til lightly browned on top.
  • Cool on cookie sheets for 4 minutes.
  • Then remove from cookie sheets, and cool the rest of the way on wire racks.
  • When cool, mix glaze ingredients well using as much or little milk as needed for a thick yet pipeable consistency.
  • Pipe glaze over each cookie.
  • HINT:.
  • Be careful when rolling this dough. If it starts to crack, smooth them. Roll slowly.
  • Also, I found it easier when you slice them, let the slice rest on the knife when moving them to the cookie sheet. If they fall apart a bit, don't fret, just push them back together! They bake up just fine!
  • Makes 3-4 dozen.

Make our ultimate classic cinnamon rolls with cream cheese icing to satisfy your sweet tooth. Prepare the day before for warm, sticky buns for breakfast

500g strong white bread flour, plus extra for dusting
7g sachet fast-action dried yeast
1 tsp ground cinnamon
50g golden caster sugar
200ml warm milk
2 eggs
100g butter, softened, plus extra for the tin
2 tbsp golden syrup
150g light brown soft sugar
2 tbsp ground cinnamon
125g butter, at room temperature
50g soft cheese
50g icing sugar
¼ tsp vanilla extract

Steps:

  • Tip all the ingredients for the dough, except the butter and golden syrup, into the bowl of a stand mixer with 1 tsp salt. Use a paddle attachment to combine everything until it begins to come together into a dough, then tip out onto a floured surface and knead until smooth, about 2 mins. Put it back in the bowl and gradually add the softened butter, 1-2 tsp at a time, while mixing on a medium setting. Alternatively, knead the butter in by hand until smooth. Flatten the dough to a square roughly 20 x 20cm, then cover and freeze for 30 mins, or chill for at least 1 hr.
  • Meanwhile, butter and line the base and sides of a deep baking tray, roughly 20 x 30cm. To make the filling, mix the sugar with the cinnamon and a large pinch of sea salt, then set aside 2 tbsp. Beat in the butter to form a thick paste.
  • Lay the dough on a floured surface and roll to a neat rectangle roughly 35 x 25cm. Spread over the filling so it's completely covered. Fold the bottom third of the dough into the middle, then fold over again to cover the top third. For the best results, chill the dough again for another 30 mins.
  • Re-roll the dough to another rectangle about 40 x 30cm, then roll it up along the long edge into a tight log. To get the neatest spirals, cut in half, lift onto a tray and freeze for 15 mins to firm up, then cut into 12 equal-sized slices. Arrange the slices, spiral side-up, in the tin. Leave to prove in fridge for at least 1 hr, or up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Bake the buns for 20 mins, then scatter over the reserved cinnamon sugar and bake for 10-15 mins until deep brown.
  • Meanwhile, mix the golden syrup with 2 tsp boiling water. As soon as the buns come out of the oven, brush them with the syrup glaze, then leave to cool a little. To make the icing, beat the soft cheese, icing sugar and vanilla together, then gradually add 1-2 tbsp boiling water to create a thick but pourable consistency. Drizzle the icing over the buns.

Steps:

  • Combine 1/4 cup milk, sugar, salt, and 3 tablespoons butter in a saucepan; heat until the butter melts. Let cool to 105F-115°F.
  • Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes. Stir in milk mixture, 1 1/2 cups flour, and egg; bat at medium speed of an electric mixer until smooth. Stir in remaining 3/4 cup flour.
  • Turn dough out onto a lightly floured surface, and knead until smooth and elastic ( it usually takes 8-10 minutes). Place in a well greased bowl, turning to grease top. Cober and let rise in a warm place ( about 85 degrees), free from drafts, 1 hour. Dough should double in bulk.
  • Punch down dough, turn out onto a lightly floured surface. Roll into a 12 x 8 inch rectangle; spread with 2 tablespoons butter. Combine brown sugar, and cinnamon, sprinkle ove rectangle. Sprinkle with raisins, if desired. Roll dough up like a jellyroll, starting at the long side. Pinchthe seam to seal, but do nt seal the ends. Cut roll into 1 inch slices' place slices, cut side down, in a greased 8 inch sqaure pan. brush top with melted butter. Use a fork to gently lift the center of the rolls, to from a peak.
  • Cover and let rise in a warm place free from drafts, about 40 minutes 9 they will NOT double in bulk). Bake at 350F for 35 minutes.COmbine powdered sugar and 2 tablespoons milk, stir well. Drizzle over warm rolls.
