1 bag (12 oz) frozen broccoli cuts
1 1/2 cups shredded Swiss cheese (6 ounces)

Steps:

  • Heat Potatoes, Sauce Mix and remaining ingredients except cheese to boiling in 4-quart Dutch oven over high heat, stirring occasionally and breaking up broccoli with fork.
  • Reduce heat; cover and simmer 15 to 20 minutes, stirring occasionally, until potatoes are tender.
  • Stir in cheese. Cover and simmer about 5 minutes, stirring occasionally, just until cheese is melted.

2 strips bacon, thinly sliced
2 tablespoons unsalted butter
1/2 yellow onion, chopped (about 1 cup)
2 cloves garlic, minced
1/2 teaspoon celery seed
2 tablespoons all-purpose flour
2 cups low-sodium chicken broth
2 cups milk
4 small red-skinned potatoes (about 6 ounces), scrubbed and quartered
1/2 head broccoli (about 10 ounces), broken into florets, stem peeled and sliced
Kosher salt and freshly ground pepper
1 tablespoon Dijon mustard
1 baguette, sliced into eight 1/4-inch-thick pieces
4 ounces Cheddar, cut into 8 thin slices

Steps:

  • Cook the bacon in the butter in a medium saucepan over low heat until it renders slightly, about 2 minutes. Add the onion, garlic and celery seed and cook until soft, about 4 minutes. Scatter the flour over the mixture and stir to coat. Gradually add the broth and the milk, whisking until smooth.
  • Add the potatoes and sliced broccoli stem; increase the heat to medium and simmer, covered, until slightly softened, about 5 minutes. Add the broccoli florets and season with 1/2 teaspoon salt. Continue cooking, uncovered, at a rapid simmer until the vegetables are tender, about 5 minutes; season with salt and pepper.
  • Meanwhile, position a rack in the upper part of the oven and preheat the broiler to high. Spread the mustard on each piece of baguette and top with a cheddar slice. Place on a baking sheet and broil until the cheese melts; serve with the soup.

1 pound scallops, rinsed and drained
2 tablespoons butter
1 bunch green onion, minced
4 ounces fresh mushrooms, sliced
2 tablespoons all-purpose flour
1 cup milk
½ cup dry white wine
1 teaspoon salt
1 pinch ground white pepper
½ cup shredded Swiss cheese
2 tablespoons chopped fresh parsley

Steps:

  • Wash and drain scallops. If scallops are large, cut in half. In a small stock pot, melt butter over medium-low heat. Saute onions and mushrooms until tender.
  • Stir in flour. Pour in milk and stir over medium heat until thickened and bubbly. Add wine, scallops, salt and pepper. Cook over medium heat until thickened. Serve topped with Swiss cheese and parsley.

1/3 cup sliced green onions

2 cups whole milk
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until vegetables are tender., Meanwhile, in another saucepan, melt butter. Stir in flour and nutmeg until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into vegetable mixture; heat through. Sprinkle with cheese.

6 cups chicken stock
10 cloves garlic, crushed
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
½ cup white wine
2 ½ cups shredded Swiss cheese

Steps:

  • Place the stock in a large pot over high heat. Bring to a boil, stir in the garlic and reduce heat to low.
  • In separate skillet over medium heat, combine the butter and flour and stir well for a few minutes. Add the garlic and stock mixture along with the wine, stirring constantly. Bring to a boil to thicken.
  • Stir in the cheese and serve immediately. (Do NOT allow to boil once cheese has been added, and do not allow to sit long or the cheese will separate out.)

1 1/3 ounces Tones Chopped Onion, 1 (9 1/4-ounce) bottle finely chopped
1/4 ounce Morton Salt, 1 (26-ounce) carton
1 1/2 ounces Arrowhead Oat Flour, 1 (24-ounce) container ground
2 cups Meadow Gold Heavy Cream, 1 (1-pint) carton
1/2 pound Kraft Sliced Swiss Cheese, 1 (2-pound) package shredded natural

Steps:

  • 1. Combine carrots, water, chicken, broth, broccoli, onion, and salt in a saucepan bring to boil. Reduce heat cover and simmer 10 minutes. Bring to boil again gradually add oat flour, stirring constantly. Stir in heavy cream simmer for 10 minutes, stirring occasionally. Remove from heat and top with cheese.* To make 1/2 cup oat flour place 2/3 cup old fashioned oats in blender or food processor and whirl until consistency of flour, approximately 60 seconds.

2 cups ham, diced
12 ounces frozen chopped broccoli
1/4 cup onion, minced
1 cup swiss cheese, grated
2 cups water
1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

1 - beef bouillon cube

Steps:

  • Cook ham (about 15 minutes) in 2-3 cups of water, enough to cover ham plus a little more. Reserve 1 1/2 cup of this broth after boiling.
  • add the beef boullion cube and stir to disolve. set the cubed ham aside.
  • Combine the brocolli and the 1 1/2 cups broth and cook brocolli until tender.
  • Add ham, milk, half and half to the broth and brocolli
  • Mix the flour with the 1/4 cup water till smooth then add to the soup mixture.. stir until thickened.
  • Add the shredded cheese and stir until melted.
