1 tablespoon coarse-grained mustard
1 clove garlic, finely chopped
3/4 teaspoon kosher (coarse) salt

1 bag (5 oz) mixed spring greens
1/4 red onion, thinly sliced
1 cup croutons, if desired

Steps:

  • In small bowl, mix oil, vinegar, molasses, mustard, garlic, salt and pepper with whisk.
  • In large bowl, toss greens with desired amount of dressing. Top with onion and croutons. Serve with remaining dressing.

2 Tablespoons fresh squeezed orange juice
1 Tablespoon white wine vinegar
1/8 teaspoon garlic powder
1 teaspoon orange zest ((approx.amount from 1 orange))
dash salt
dash pepper
4 cups fresh spring greens ((I used mixed variety and romaine))
1/4 cup crumbled feta cheese
sliced red onion ((to taste-I use 2 thin slices, chopped into smaller pieces))
10-15 roasted almonds (, sliced lengthwise)
1/4 cup dried cranberries
1 small orange

Steps:

  • Make vinaigrette: In a small bowl, whisk together the vinaigrette ingredients until fully blended. If making vinaigrette ahead of serving time, cover and chill until ready to use.
  • Place chilled salad greens in serving bowl.
  • Sprinkle salad greens with feta, red onion, sliced almonds,cranberries and top with orange slices. When ready to serve, whisk the vinaigrette well to mix, then drizzle over salad, and toss to coat. Enjoy!

Steps:

  • In a small bowl, whisk together the mustard, garlic, vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified.

5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries
1/4 cup Champagne wine vinegar
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil

Steps:

  • Drain Mandarin oranges and reserve juice. In a large bowl, combine salad greens and fruit. Set aside.
  • To make the dressing, in a small saucepan over medium-low heat, combine vinegar, 1/3 cup reserved Mandarin juice, salt, and sugar. Gently heat until sugar is dissolved. Remove from heat. Stir in white chocolate until melted. Set aside to cool. Do not refrigerate, as white chocolate will set.
  • Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.

1/4 teaspoon crushed red-pepper flakes

4 ounces Boston lettuce, 1 small head
4 ounces frisee
1 Kirby cucumber, thinly sliced into rounds

Steps:

  • Make the vinaigrette: Peel the mango, and slice sides away from pit; use a paring knife to remove the peel. Slice one side into 1/8-inch-thick slices, and reserve. Chop remaining half, place in blender with lemon juice, and puree until smooth. Transfer to a medium bowl, and whisk in olive oil. Add red-pepper flakes, and season with salt and pepper.
