Spring Greens With Beets and Goat Cheese image

This is a winning recipe that was printed in the April/May 2009 Taste of Home. It is credited to Kristin Lossak of Bozzman, MT. I have not used the goat cheese but have made this several times using crumbled feta. When adding the cheese, I don't measure but give a nice sprinkling. The dressing makes it all come together.

2/3 pecan halves
3 tablespoons balsamic vinegar, divided
1 tablespoon water
1 tablespoon sugar
1/4 cup olive oil
2 tablespoons maple syrup
1 teaspoon whole grain mustard
1/8 teaspoon salt
1 (5 ounce) package mixed baby lettuces and spring greens
1 (14 1/2 ounce) can sliced beets, drained
1 cup crumbled goat cheese, or
1 cup crembled feta cheese

Steps:

  • In a small bowl toss together the pecans, 1 tablespoon balsamic vinegar and water; add to a warmed heavy skillet and heat until nuts are toasted, about 4 minutes.
  • Sprinkle the toasted pecans with sugar and continue to cook and stir for 2 to 4 minutes or until sugar melts; spread on foil lined pan to cool.
  • In a medium size bowl combine the syrup, mustard, salt and remaining 1 tablespoon vinegar; whisk in the olive oil until thoroughly incorporated.
  • In a large salad bowl add the salad greens, beets and goat cheese, sprinkle with cooled pecans, drizzle with salad dressing, toss lightly and serve on chilled salad plates.
  • Any remaining dressing keeps well for a few days in the refirgerator.

2 lbs kale or 2 lbs spring greens, washed and chopped
4 tablespoons water or 4 tablespoons vegetable stock
2 tablespoons peanut oil
1 medium onion, finely chopped
1 medium tomatoes, skinned and chopped finely
1 chili pepper, seeded and finely chopped
sea salt
black pepper
4 tablespoons ground peanuts
2 teaspoons fresh lemon juice

Steps:

  • Put the chopped greens in a large saucepan with the water or stock and cook gently, covered for 10 minutes until tender.
  • Meanwhile, in a medium frying pan, heat the peanut oil and saute the chopped onion, tomato and chili pepper for 2-3 minutes.
  • Place the sauteed onion mixture on the greens, but do not stir it inches Season to taste with salt and pepper.
  • Sprinkle the ground peanuts on top.
  • Cover and steam gently for a further 10 minutes.
  • Add the lemon juice, check the seasoning and serve.

50g unsalted butter
6 anchovy fillets
2 garlic cloves , finely chopped
500g spring greens , washed and shredded
1 lemon , juiced
50g finely grated parmesan
30g hazelnuts , toasted and roughly chopped

Steps:

  • While the lamb is resting, melt the butter in a large frying pan over a medium heat. Once bubbling, add the anchovies and cook for 2 mins until they melt away. Stir in the garlic, fry for 1 min more, then toss in the greens and cook for 8 mins until wilted.
  • Add the lemon juice and parmesan and stir well to melt the cheese. Season to taste, transfer to a serving bowl and scatter over the hazelnuts.

1 can (11 ounces) mandarin oranges, drained

1 tablespoon red wine vinegar
1 tablespoon orange juice

1/2 cup diced ripe tomatoes
3 diced green onions
6 ounces goat cheese, cylinder
1/2 cup seasoned bread crumbs
2 tablespoons basil, chopped
2 tablespoons chives, chopped
2 tablespoons Italian parsley, chopped
2/3 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
salt and pepper

Steps:

  • Cut the goat cheese cylinder into 12 equal sized rounds, pushing into shape with your fingers as necessary.
  • Roll each disc into the bread crumbs, and place them on a baking sheet lined with aluminum foil.
  • Refrigerate until ready to serve.
  • Arrange the greens, tomatoes and onions on four individual plates.
  • Mix the vinegar, oil, mustard,herbs and salt and pepper together until well blended.
  • Turn on the broiler, and place the baking sheet with the goat cheese rounds under the heat.
  • Cook for a minute or two until the cheese rounds are slightly golden and bubbly but still holding their shape.
  • Arrange three goat cheese rounds on each salad plate, and then drizzle with the dressing.
  • Serve immediately with Italian bread.

1/2 cup Italian vinaigrette dressing or 1/2 cup honey mustard dressing
1/2 cup dried breadcrumbs
1/8 teaspoon garlic salt
1 (8 ounce) package monterey jack cheese, cut into 18 (or Chedarella or Co-Jack Cheese)
7 cups mixed baby greens
1 cup fresh herb (such as parsley, basil, mint or cilantro)
3/4 cup cherry tomatoes

Steps:

  • Heat oven to 400°F Line baking sheet with aluminum foil.
  • Place 1/4 cup dressing in shallow bowl. Combine bread crumbs and garlic salt in another shallow bowl. Dip each piece of cheese into dressing; shake off excess dressing. Coat with bread crumbs. Place cheese onto prepared baking sheet. Bake for 3 to 4 minutes or just until soft. (DO NOT OVERBAKE.)
  • Arrange salad greens, herbs and tomatoes on 6 individual salad plates. Drizzle with remaining dressing. Place 3 cubes toasted cheese on each salad. Serve immediately.
  • TIP: The crumb-coated cheese cubes can be made well ahead of time. Refrigerate, covered on baking sheet or in a covered container. Bake just before serving.

2 bunches green onions, chopped

1 cucumber, diced
2 hard-cooked eggs, diced
¼ cup sour cream, for topping
2 sprigs fresh dill weed, chopped

Steps:

  • Fill a large pot about 3/4 full with water; bring to a boil. Add diced potatoes and cook until fork-tender, 8 to 10 minutes. Stir in green onions and cook another 1 to 2 minutes. Stir in spinach and sorrel; cook another 2 to 3 minutes, or until wilted; remove from heat.
  • Pour the beaten eggs into the mixture in a slow and steady stream, stirring constantly, until the soup thickens. Season with salt, sugar, and vinegar to get a slightly sweet and tangy taste. 5 1/2 ounces about 2/3 cup fresh goat cheese
4 teaspoons extra virgin olive oil, divided plus more as needed
1 tablespoon extra virgin olive oil, divided plus more as needed
4 teaspoons dry white wine
kosher salt & freshly ground black pepper
1 1/2 tablespoons chopped fresh herbs (at least two from the following ( parsley, chives, tarragon, dill)
1 1/2 teaspoons finely grated lemon zest
8 baguette, slices cut 1/2 inch diagonally
1 tablespoon white wine vinegar
1/4 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
5 ounces mixed spring greens

Steps:

  • To make crostini:.
  • 1. In a food processor (or mixing bowl with a wooden spoon) add the goat cheese, 4 teaspoons olive oil and the wine. Pulse one or two times, just to blend. The mixture should be spreadable; if too thick, add more olive oil and pulse again. Transfer mixture to bowl, and stir in salt and pepper to taste, herbs and lemon zest. Chill for 30 minutes.
  • 2. Preheat oven to 400 degrees. Place baguette slices on a large baking sheet and brush lightly on both sides with remaining olive oil (using more oil as necessary). Bake for about 5 minutes on one side; turn and bake another 3 minutes on the second side. Set aside.
  • To make salad:.
  • 1. In a small bowl combine the vinegar, mustard, salt and pepper to taste and whisk to blend. Slowly whisk in the olive oil. (feel free to use more olive oil and vinegar if wanted).
  • 2. Just before serving, add dressing to mixed greens and toss gently. Divide among 4 salad plates. Spread a nice schmear of herbed cheese on the toasted baguette slices and place 2 slices on each plate on top of the salads. Serve immediately.
