SPRING RADISH SALAD

Number Of Ingredients 15

2 cups grapefruit juice
2 tablespoons chardonnay vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 teaspoon soy sauce
Kosher salt and freshly ground black pepper
1/2 cup olive oil
2 cup mixed thinly shaved radishes, such as red, icicle, Easter egg, watermelon, black, purple ninja, etc.
2 cups watercress
1 bulb fennel, thinly shaved
2 avocados, cut into quarters
1 pink grapefruit, segmented
1 orange, segmented
Kosher salt and freshly ground black pepper
1/4 serrano chile, finely diced

Steps:

  • For the dressing: In a small pot, bring the grapefruit juice to a simmer over medium-low heat. Reduce the juice to 1/4 cup. Set aside to cool.
  • In a medium bowl, whisk together the reduced grapefruit juice, vinegar, mustard, honey and soy sauce and season with salt and pepper. Slowly drizzle in the olive oil and whisk until emulsified.
  • For the salad: Combine the radishes with the watercress and fennel in a medium bowl and toss with a small amount of the dressing. Arrange the avocado, grapefruit and orange on a platter, drizzle with the dressing and season with salt and pepper. Sprinkle on the serrano, then top with the dressed radish mixture and serve.

Feta Snack with Spring Radishes image

Though good with any fresh vegetable, this sharp, creamy feta dip, smoothed with a little buttermilk, is exceptional with crisp spring radishes. Much as in the combination above, salt and fat mellow any heat from the raw radishes. Cheesemaker Mary Rigdon of Decimal Place Farm has been brining her goat's milk feta to order for us every week since Miller Union opened. If you have a local farmers' market that sells fresh cheeses, look there first for good-quality feta. I love the little pink, purple, or red garden variety radishes for this dip.

Yield 1 cup feta mixture

Number Of Ingredients 6

8 ounces goat's milk feta, preferably in brine
1/4 to 1/2 cup buttermilk
1/2 teaspoon flaky sea salt
1/2 teaspoon freshly ground black pepper
Extra virgin olive oil for finishing
Radishes and other vegetables for dipping

Steps:

  • In a medium bowl, crumble the feta. With a rigid whisk, smooth out the feta first, then add buttermilk 1 tablespoon at a time until the mixture is smooth and the consistency of a creamy dip. Spoon the mixture into a small serving bowl and top with flaky sea salt, black pepper, and olive oil. Serve with raw radishes or other crudités.

¼ cup garden cress, or more to taste
3 tablespoons vegetable oil
1 large lemon, juiced
¼ teaspoon salt, or to taste
⅛ teaspoon freshly ground black pepper, or to taste
1 pinch white sugar
2 large hard boiled eggs, sliced, or to taste

Steps:

  • Combine radishes and garden cress in a bowl.
  • Combine oil, lemon juice, salt, pepper, and sugar in a cup. Pour over salad and mix to combine. Garnish with egg slices.

  • Stir-fry them. For all of the ways you can enjoy radishes raw, you can also cook them up in a cinch. When added to an Asian stir-fry, radishes add a level of invigorating heat without going too spicy like jalapenos or cayenne.
  • Sauté them. While stir-fried radishes remain spunky and crunchy, sautéed radishes become soft and mellow, almost sweet. If your radishes are small, cook them whole; otherwise, halve or quarter them to get them down to no larger than 1-inch pieces.
  • Mash them. Like most other root vegetables, radishes can be readily cooked and mashed into a soft, fluffy puree, ideal for trying a new twist on basic mashed potatoes.
  • Hash them. Just as with mashing, root vegetables can be subbed in for potatoes to make great skillet hash. Just chop or grate radishes finely and use in place of taters for any breakfast-inspired hash: scramble with eggs, cheese, mixed vegetables, and even sausage of choice.
