I found a recipe for Czech Pork on the Facebook group "From Our Czech Kitchens." It was originally in Czech, which I don't read, and even with the site's attempt at translation, I was still confused about quantities and ingredients. With Google translate and the comments, I was able write a recipe I thought would work. Both my husband, who has Czech ancestry, and I thought it was really good.

2 tablespoon(s) olive oil
2 medium onions, diced
1 pork tenderloin, cut into 1" cubes
1-2 teaspoon(s) caraway seeds
2-3 tablespoon(s) flour
1 1/2 - 2 cup(s) good quality beef broth
1 teaspoon(s) salt
1 pinch(es) pepper

Steps:

  • NOTE: Pork tenderloin (same as pork fillet) is the most tender part of the pig. If you use another cut of pork (loin, for example) you will need to cook it longer.
  • Add 1 tablespoon oil to a Dutch oven (with a lid) and heat over medium heat. Add onions, turn heat to med low, and sauté until brown, about 10 minutes. Remove onions and set aside.
  • Add another tablespoon oil and heat. Add the diced pork tenderloin and caraway seed and over med heat, sauté until the meat is nicely browned.
  • Add the flour to the browned meat and continue to sauté for 2-3 more minutes. Add cooked onions back to the pot.
  • Add the beef broth (my favorite is SAM'S beef bone broth that I buy at Walmart), salt and pepper. Stir well, turn to low-med, and cover with lid. Cook for about 50 minutes, stirring occasionally.

KNEDLIKY - CZECH DUMPLING WITH SAUERKRAUT (ZELI)



Knedliky - Czech Dumpling with Sauerkraut (Zeli) image

This was my grandmothers recipe and it has remained a family favorite... It should be served with roast pork, sauerkraut and a nice glass of beer. A very traditional way to eat the leftover dumplings the next day for breakfast or brunch is to chop them up into cubes, pan fry in a little butter; then add eggs and milk, and cook as if you are making scrambled eggs. It's great.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon sugar
3 eggs, beaten
1 ½ cups milk, or as needed
4 cups dry white bread cubes
4 slices bacon, sliced into small strips
1 (16 ounce) jar sauerkraut - rinsed and drained
salt and pepper to taste
1 teaspoon caraway seeds
2 teaspoons cold water
1 teaspoon cornstarch

Steps:

  • In a large bowl, stir together the flour, baking soda, baking powder, salt and sugar. Make a well in the center, and pour in the eggs and 1 cup of milk. Stir to blend, and add enough additional milk to make a moist battery dough, not like pancake batter. Use a sturdy wooden spoon to beat the dough at least 200 strokes, rolling it over and over in the bowl until smooth and an occasional bubble appears on the surface. Add the dry white bread cubes, and stir into the dough until they disappear.
  • Bring a large pot of water to a boil. Place the dough onto a cheesecloth or white cotton cloth, and form into a loaf shape. Wrap the cloth around the loaf, and tie the ends.
  • Place the loaf into the boiling water, and cook for 45 minutes, turning the loaf over about half way through. Remove from the water, unwrap, and cover with a tea towel. Let stand for 10 minutes.
  • Fry bacon in a small skillet over medium-high heat until evenly browned. Set aside. Place the drained sauerkraut into a saucepan, and add enough water to cover the surface. Bring to a simmer over medium heat. Add bacon, and season with salt, pepper and caraway seeds. Stir together the cornstarch and water; mix into the sauerkraut, and simmer for a few minutes before removing from the heat.
  • Slice the dumpling loaf. Drizzle dumpling slices with some of the roast drippings from the pan. Serve with sauerkraut.

Czech roast loin of pork is a national dish served at family dinners as well as in fancy restaurants. Side dishes include bread dumplings and cabbage.

4 pounds boneless pork loin (rolled, or 6-pound bone-in pork loin or 6-pound Boston butt or pork shoulder)
Salt to taste
Black pepper to taste
3 tablespoons lard (or vegetable oil)
1 tablespoon dried marjoram
2 tablespoons caraway seeds
2 tablespoons fresh parsley (chopped)
Optional: 1 large onion (sliced 1/4 inch thick)
Salt and black pepper to taste (for seasoning pan juices)

Steps:

  • Gather the ingredients.
  • Heat the oven to 400 F.
  • Trim excess fat from the pork. Save the fat, if desired, to be rendered later and used for frying. Rub salt and pepper, to taste, into the meat. Heat the 3 tablespoons lard or vegetable oil in a large skillet.
  • When the lard or oil is hot, carefully place the meat in the skillet and brown on all sides.
  • Place the browned meat in a roasting pan large enough to accommodate it, but with the not too much extra room (otherwise the juices will evaporate too quickly).
  • On the meat, sprinkle 1 tablespoon dried marjoram, 2 tablespoons caraway seeds, 2 tablespoons chopped fresh parsley, and 1 cup water. Then lay the onion slices on top of the meat.
  • Place in the oven and roast for 1 1/2 to 2 hours, basting with pan juices every 15 to 20 minutes, and adding water as necessary. If the meat is browning too fast, cover loosely with aluminum foil.
  • When the meat is done, remove it to a serving platter. Skim any fat from the surfaces of the pan juices and add salt and pepper to taste.
  • Serve slices of the pork with sliced dumplings covered with pan juices. Don't forget the side of cabbage-red is preferred! Leftover meat slices make terrific sandwiches. Source: I adapted this recipe from one in "The Best of Czech Cooking" by Peter Trnka (Hippocrene Books Inc., 2009).

2 tablespoons vegetable oil
1 tablespoon prepared mustard
2 tablespoons caraway seeds
1 tablespoon garlic powder
1 tablespoon salt
2 teaspoons ground black pepper
5 pounds pork shoulder blade roast
3 medium onions, chopped
½ cup beer
1 tablespoon cornstarch
2 tablespoons butter

Steps:

  • In a bowl, form a paste using the vegetable oil, mustard, caraway seeds, garlic powder, salt, and pepper. Rub over the pork roast, and let sit about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the onions in the bottom of a large roasting pan. Pour in the beer. Place the roast, fat side down, on top of the onions. Cover the pan with foil.
  • Roast 1 hour in the preheated oven. Remove foil, turn roast, and score the fat. Continue roasting 2 1/2 hours, or to a minimum internal temperature of 145 degrees F (63 degrees C). Remove from heat, reserving pan juices, and let sit about 20 minutes before slicing thinly.
  • In a saucepan, bring the reserved pan juices to a boil. Mix in the butter and cornstarch to thicken, reduce heat, and simmer 5 to 10 minutes. Serve with the sliced pork.

This is an easy recipe for a Czech-style pork shoulder roast! Soft inside, with a crispy crust, tastes excellent anytime.

3 lbs (1,4 kg) pork shoulder (whole)
1 tsp salt
1 tsp caraway seeds (crushed)
2 cloves of garlic (mashed or pressed)
3 onions (medium)
2 Tbsp pork lard (or sunflower / canola oil)
1/2 cup (120 ml) water

Steps:

  • Rinse and dry the pork shoulder. If the meat is irregular in shape, tie it with kitchen string.
  • Peel and mash the garlic. Rub the surface of the pork on all sides with garlic, salt, and crushed caraway seeds.
  • Peel the onion and cut it into wedges. Grease a roasting pan with lard, spread the onions on it. Place the seasoned meat on the onion base. Pour about ½ cup (120 ml) of water into the bottom of the roasting pan.
  • Roast in a preheated oven at 400 °F (200 °C) - lower and upper heating only - for 30 minutes. Then reduce the temperature to 300 °F (150 °C) and roast for another hour and a half. After every half hour or so, baste the meat with the drippings. If there are not enough juices in the roasting dish, add a few tablespoons of water.
  • Set the finished roast aside, transfer the roasted juices and onions to a sieve placed over a clean pot, and strain. Press the rest of the onions through the sieve.
  • Slice the pork shoulder into ½ inch (1,5-2 cm) thick slices and serve.

4 teaspoons caraway seeds, crushed in mortar with pestle
2 large garlic cloves, minced
2 teaspoons salt
1 teaspoon ground pepper
1 3-pound boneless double-loin center-cut pork roast*
3 tablespoons olive oil
1 large onion, sliced
4 carrots, peeled, sliced on diagonal
2 bay leaves
1 2 1/2-pound head green cabbage, quartered, cored, sliced
1 12-ounce can beer
2 tablespoons light unsulfured molasses
1/2 cup canned beef broth
*Boneless double-loin center-cut pork roast is made by tying two boneless pork loins together. If you can't find one, ask your butcher to prepare it for you.

Steps:

  • Combine 2 teaspoons caraway, garlic, salt and pepper in bowl. Place pork in glass baking dish. Rub pork with spice mixture. Cover and chill up to 24 hours.
  • Preheat oven to 350°F. Heat 1 tablespoon oil in large skillet over medium-high heat. Add onion, carrots, bay leaves and 1 teaspoon caraway; sauté until softened, about 8 minutes. Transfer to roasting pan. Heat 1/2 tablespoon oil in same skillet over high heat. Add half of cabbage and 1/2 teaspoon caraway; sautéuntil cabbage begins to wilt, about 4 minutes. Repeat with 1/2 tablespoon oil, half of cabbage and 1/2 teaspoon caraway. Add to onion mixture; mix to blend. Season with salt and pepper.
  • Heat 1 tablespoon oil in same skillet over high heat. Add pork; brown on all sides, about 10 minutes. Set atop vegetables in pan. Add beer and molasses to skillet; bring to boil, scraping up browned bits. Pour over vegetables. Add broth.
  • Roast pork and vegetables 45 minutes. Turn pork over and roast until thermometer inserted into thick part registers 150°F., about 45 minutes or less Place pork on work surface. Discard bay leaves. Using slotted spoon, place vegetables on platter. Slice pork; place atop vegetables. Transfer Cooking juices to small saucepan. Boil 5 minutes. Spoon over pork.

ROAST LOIN OF PORK WITH CARAWAY, LEMON AND GARLIC

This recipe is a wonderful addition to a celebratory feast, or a weekend winter meal. Some advice if you can't find a loin on the bone: Buy a boneless rolled pork loin and stab it in several places with a knife, then push small amounts of the spice paste into the meat. Smear the rest all over. The aroma of caraway and clove sweetly permeates the meat alongside the sweet-sharpness of the garlic and the out-and-out sharpness of the lemon. The result is robust without being heavy, and the apples roasted alongside the pork provide a juicy edge and a beautiful accompaniment.

1 6-chop loin of pork on the bone (about 5 1/2 pounds), rind scored and bone cracked so that chops cut off easily

  • Heat oven to 425 degrees. Set pork aside at room temperature. Using a mortar and pestle, crush garlic with 1 teaspoon salt to make a paste. Add (but do not crush) cloves, caraway, lemon juice, chili oil and black pepper to taste. Crumble in bay leaves, and mix well.
  • Place pork loin rind-side down; there will be a groove running along its length where chops join with bone. Rub spiced garlic paste into groove. Rub any extra paste around pork, leaving rind dry. Coat bottom of a roasting pan with 1 tablespoon olive oil, and place onion disks in an overlapping line down length of pan. Place pork rind-side up on onion, and sprinkle lightly with salt.
  • Roast pork for 1 1/2 hours. After 45 minutes of roasting, score apples around circumference, and if necessary, trim bottoms so they sit upright without wobbling. Arrange apples in roasting pan, and continue to cook everything together for 45 minutes.
  • To serve, remove pan from heat and allow to rest for 10 minutes. Transfer pork to a carving board, and slice into chops. Serve each chop with a baked apple.

2 lbs boneless pork shoulder (roast)
2 teaspoons caraway seeds
1 teaspoon dried marjoram, crushed
3/4 teaspoon salt
1/2 teaspoon pepper
1 tablespoon cooking oil
1/2 cup water
2 tablespoons vinegar
1 (8 ounce) carton sour cream or 1 (8 ounce) carton plain yogurt
4 teaspoons cornstarch

Steps:

  • Trim fat from roast and cut it to fit into a 4 quart slow cooker if necessary. (I find that its usually not!).
  • Combine caraway seed, marjoram, salt and pepper and rub over roast.
  • In a large skillet, brown roast on all sides in the hot oil and drain off the fat. Place meat in the slow cooker.
  • Add the water to the same skillet and bring to a gentle boil over medium heat, stirring to loosen brown bits from bottom of skillet.
  • Pour skillet juices and vinegar into the slow cooker. Cover and cook on low setting for 8-10 hours or high setting for 4-5 hours.
  • Remove meat from slow cooker and keep warm.
  • For the gravy, skim the fat from the juices left in the slow cooker and measure out 1 and 1/4 cups of these juices (Add water to make up the difference if necessary). Combine sour cream or yogurt and cornstarch and gradually stir in the hot juices.
  • Transfer the gravy to a saucepan and cook over medium heat until thickened and bubbly, stirring constantly. Cook and stir for an additional 2 minutes.
  • Serve the gravy with the pork roast and hot cooked potatoes if desired.

salt & freshly ground black pepper, to taste
4 teaspoons caraway seeds
2 cups white pearl onions
12 medium baking potatoes, peeled and quartered
1/3 cup beef stock or 1/3 cup canned broth
1/2 teaspoon sweet Hungarian paprika

Steps:

  • Rub the pork loin with salt, pepper, and caraway seeds and let it stand for 30 minutes.
  • Meanwhile, preheat the oven to 400°F.
  • Drop the onions into boiling water for 1 minute. Rinse under cold running water and drain. Trim off the root ends, then cut and "X" in the root end and peel. Set aside.
  • Place the pork loin, fat side up, in a roasting pan and roast for 15 minutes. Reduce the oven temperature to 350°F.
  • Scatter the onions and potatoes around the pork and roast, basting with the stock.
  • After 1 1/4 hours, prick the roast with a skewer. If the juices run clear, the roast is done. If not, roast another 10 minutes and test again.
  • Fifteen minutes before the roast is ready, sprinkle the vegetables with paprika. When done, let the meat stand, covered with aluminum foil, for 15 minutes before carving.
  • Carve the meat and arrange on a serving platter, surrounded by the roasted vegetables. Serves 6.

1 tablespoon caraway seeds
1/2 teaspoon black peppercorns
2 (3/4-inch-thick) center-cut pork chops
2 teaspoons vegetable oil
1/4 cup cider vinegar
1/2 cup apple juice
1 teaspoon cold unsalted butter

Steps:

  • Finely grind caraway seeds and peppercorns in an electric coffee/spice grinder or with a mortar and pestle and spread on a plate. Season chops with salt and dredge in spice mixture, coating completely.
  • Heat oil in a 10-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chops until golden brown and just cooked through, about 5 minutes on each side. Transfer chops to a plate. Add vinegar to skillet and deglaze over moderately high heat, scraping up brown bits, until most of vinegar is evaporated, about 20 seconds. Add juice and simmer until reduced by half, about 3 minutes. Stir butter into sauce with salt to taste and pour over pork chops.

I always adapt this original recipe from nutritionist Melissa Diane Smith's book, "Going Against the Grain". It's a terrific recipe. I use a 9x13 pan, 4 chops, as much cabbage mix as will fit in the pan, and lots & lots of caraway. I haven't needed much water, I've found, but I always check anyway. This is so easy, you have to try it at least once! Maybe you'll love it! I do, which is why I make enough to have leftovers. : )

1/2 teaspoon extra virgin olive oil
4 cups coleslaw mix or 4 cups finely shredded cabbage
1 -2 teaspoon caraway seed

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil on medium in a nonstick frying pan and quickly brown pork chops on both sides.
  • Put the pork chops in a covered baking dish.

  • Bake, covered, for 1 hour.
  • Halfway through, check dish and add more water if needed.

3 lb pork loin roast (or 2 1/2 pounds boneless pork tenderloin)
8 medium shallots, peeled and halved
12 to 15 clove garlic, peeled but left whole
1 to 1/2 qt low-sodium vegetable stock
8 large carrots, cut in half and then cut sliced into 2-inch strips
16 baby potatoes, halved
1 to 2 Tbsp sour cream (optional)
PASTE
3 Tbsp mineral salt (or sea salt)
2 clove garlic, finely chopped
2 Tbsp white pepper
1 1/2 tsp caraway seeds (whole)
1/2 medium lemon, zested
4 juniper berries
2 Tbsp pork drippings or vegetable oil

Steps:

  • 1. Preheat oven to 375°C (200°C).
  • 2. Using a pestle & mortar, crush together all of the paste ingredients, stirring a bit to be sure to combine all the ingredients. Rub the paste all over the outside surface of the pork roast. Place coated pork in roasting pan or large oven-proof cast iron skillet. Add the shallots and garlic, and place in oven to roast for 20 minutes.
  • 3. Pour stock into the roasting pan, then add carrots, potatoes so they're surrounding the roast, and return roasting pan to oven to continue to roast another 75 to 90 minutes, basting with pan liquid every 20 minutes. If there's not enough liquid, add more broth or water to roasting pan. To test roast, pierce it with a fork. If only clear juices run through, the roast is done. If pink juices run out, return it to oven to continue roasting at 15-minute intervals until done .
  • 4. Use a slotted spoon to remove all vegetables to a platter, and cover with foil to keep warm. Transfer roast to a serving platter, cover with foil, and let stand 20 minutes before slicing.
  • 5. Strain pan liquid into a saucepan, removing large herb pieces and chunks. Heat liquid over medium heat for 15 minutes or until reduced and slightly thickened. Add sour cream (if using) to the liquid, and stir for 2 to 3 minutes or until heated through. Spoon sauce over pork and/or vegetables.

UNCLE EMIL'S CZECH-STYLE SAUERKRAUT

Growing up we ate this delicious sauerkraut w/roast pork & roast duck dinners, often w/dumplings as a 2nd side dish. Every family's treasured recipe has a story. My great-uncle Emil (Placek) was Czech by heritage, but American born. 1 dy he walked into a diner in Nebr & was face-to-face w/my Irish great-aunt Loretta (Sullivan). She was cookin up a storm & he was hungry & smitten, so it was a fated marriage of "sweet & sauer". Lots of Irish colleens followed my Aunt Loretta & made great kraut using applesauce & Step #5 below. We all overuse the word "best" if talking about things we love, so I won't do that. This is the BEST! (Noted time is 30 min total for all prep & cooking)

1 (15 ounce) can sauerkraut
4 tablespoons butter
1 medium potato (peeled & grated)
1 medium onion (grated)
1 cup applesauce (Don't use unsweetened)
1 teaspoon caraway seed

Steps:

  • Put sauerkraut & liquid, butter & caraway seeds in a lrg saucepan over med heat. When the mixture begins to bubble slightly, lower heat to simmer.
  • Peel & grate the potato & onion. Add them to top of the kraut & press lightly into the kraut w/the flat surface of a spoon. Do not stir into the kraut.
  • Cover & cont to simmer (add sml amt of water as needed) till the grated potato is cooked. Now combine the pan contents (this process keeps raw potato from scorching &/or sticking to the bottom of the pan).
  • Add the applesauce, mix well & taste. Add more applesauce if you prefer a sweeter, more apple flavored kraut.
  • All we need now is some meat flavor in the kraut. If you have meat drippings for that, deglaze your meat pan & add to the kraut. If not, add a chicken bouillon cube to the kraut. Be sure it's completely dissolved & mixed in well w/the kraut. Serve it up!
  • NOTES: After pan contents are combined in #3, stir freq to ck moisture & prevent any ingredients from sticking to the pan. --- After the last step, you can cont to simmer if you feel the kraut is too liquid, but is unlikely to be needed.

3 pounds pork shoulder or butt, put through medium or coarse grinder
1 tablespoon caraway seeds
3/4 cup dry red wine, like a cabernet sauvignon
1 tablespoon chopped parsley
Salt and coarsely ground black pepper to taste
3 large cloves garlic, minced

Steps:

  • Combine all ingredients, and using sausage stuffer, stuff into casing, twisting and tying at 3- or 4-inch intervals. Prick with fork.
  • Place in boiling water; reduce heat and blanch for 5 minutes after water returns to a boil.
  • To serve, broil or grill. Serve with coarse-grained mustard.

Roast Pork
2 tablespoons vegetable oil
1 tablespoon prepared mustard
2 tablespoons caraway seeds
1 tablespoon garlic powder
1 tablespoon salt
2 tsp ground black pepper
5 pounds pork shoulder roast
pork shoulder blade is best, especially with the bone-in)
3 medium onions, chopped
1/2 beer (add more if liquids dry out too much)
1 tablespoon cornstarch
2 tablespoons butter
DUMPLINGS
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
3 eggs, beaten
1 1/2 cups milk, or as needed
4 cups dried white bread cubes (babi always used white bread crusts removed). I use whatever is on hand
SAUERKRAUT
4 slices bacon, sliced into small strips
1 (16 ounce) jar white wine sauerkraut - rinsed and drained
1 onion diced
salt and pepper to taste
1 teaspoon caraway seeds
2 teaspoons cold water
1 teaspoon cornstarch, or more as req. to thicken

Steps:

  • >ROAST PORK Form paste with veg. oil, mustard, caraway seeds, garlic powder, s/p. Rub on pork roast, sit 30mins. Preheat oven to 350F Place onions in roasting pan. Add beer. Place roast, fat side down, on top of onions. Cover pan with foil. Roast 1 hr in the preheated oven. Remove foil, turn roast, score the fat. Continue roasting, fat side up 2 1/2 hours uncovered , or to a minimum internal temp of 160F. (add more beer if pan is drying out) Remove from heat, reserve pan juices. Let sit about 20 mins. In saucepan, bring pan juices to boil. Mix butter and cornstarch to thicken, reduce heat, simmer 5 to 10 mins. >DUMPLINGS Stir flour, baking soda and bak. powder, salt and sugar. Make a well in center, and pour in the eggs and 1 cup of milk. Stir to blend, add enough additional milk to make a moist battery dough, not like pancake batter. Use wooden spoon to beat the dough 200 strokes, rolling it over and over in the bowl until smooth and an occasional bubble appears on the surface. Add white bread cubes, stir into the dough until they disappear. Bring large pot of water to a boil. Place dough onto a cheesecloth or white cotton cloth, and form into a loaf shape. Wrap cloth around the loaf, and tie the ends. Place the loaf into the boiling water, and cook for 45 minutes, turning the loaf over about half way through. Remove from water, unwrap, and cover with a tea towel. Let stand for 10 minutes. >SAUERKRAUT Fry bacon/onion over med-high heat until bacon cooked and onions golden. Set aside. Place rinsed/drained sauerkraut in saucepan, and add enough water to cover the surface. Bring to simmer over med heat. Add bacon, season with s/p and caraway seeds. Stir together the cornstarch and water; mix into the sauerkraut, and simmer for a few minutes before removing from the heat. Slice the dumpling loaf. Drizzle dumpling slices with some of the roast drippings from the pan. Serve with sauerkraut.

2 cups sauerkraut with liquid

Steps:

  • Cut pork loin, if necessary, to fit in the slow cooker. Season with caraway seeds, and salt and pepper to taste. Pour sauerkraut over the roast.
  • Cook on High for 1 hour, then cook on Low for 5 to 6 hours. Internal temperature of the roast should be at least 145 degrees F (63 degrees C).

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°), divided
1/4 cup packed brown sugar
1 tablespoon caraway seeds
1 tablespoon canola oil
2 teaspoons salt
2-1/2 cups rye flour
2-3/4 to 3-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add brown sugar, caraway, oil, salt and remaining water; mix well. Stir in rye flour and 1 cup all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half. Shape each half into a ball; place in 2 greased 8-in. round baking pans or ovenproof skillets. Flatten balls to a 6-in. diameter. Cover and let rise until nearly doubled, about 30 minutes. Bake at 375° for 25-30 minutes or until golden brown.

One 6- to 7-pound bone-in pork loin rib roast, cut from the blade end (chine bone removed and reserved)
Kosher salt and freshly ground black pepper
2 tablespoons caraway seeds
1 tablespoon bacon fat
1 medium onion, peeled, cut in half, and julienned
5 garlic cloves, peeled
3 tablespoons tomato paste
5 cups chicken stock, hot
1 tablespoon "quick mixing" flour, such as Wondra

Steps:

  • Preparation Preheat the oven to 300-degrees. Season the pork generously with salt and pepper and sprinkle with the caraway seeds. Melt the bacon fat over medium-high heat in a roasting pan placed over 2 burners. Add the pork and the chine bone and brown on all sides, about 10 minutes. Remove the pan from the heat. Place the onion in the pan and arrange the pork roast, bony side up, on top of the onions. Leave the chine bone in the pan and put the pan in the oven. After 1 1/2 hours, remove the pan from the oven. The onion should be browned and caramelized. Turn the roast over to the other side and add the garlic, tomato paste, and chicken stock. (Don't worry about stirring globs of tomato paste into the stock since you'll be whisking the gravy later.) Return the pan to the oven for another hour. After 2 1/2 hours of roasting, an instant-read thermometer inserted into the meat should read about 165 degrees. If the temperature is lower, continue to roast the pork until the thermometer reads 165 degrees, then remove the pan from the oven. Transfer the pork to a platter and set it in a warm spot, loosely covered with foil. Place the roasting pan on 2 burners over medium-high heat and bring the liquid to a simmer. Gradually sprinkle in the flour, whisking constantly. Continue whisking for about 5 minutes, until the flour taste is cooked out, any lumps of tomato paste are smooth, and the gravy is barely thick enough to coat a spoon. Also whisk in any juices from the platter that have collected around the roast. You can strain the gravy if you prefer. Transfer the pork to a cutting board and cut it into portions between the bones. Pile the pork on a platter and pour about a quarter of the gravy over the meat. Pour the rest of the gravy into a sauce boat and serve the pork accompanied by gravy and dumplings.
