Chocolate Frosted Donuts with Sprinkles - soft and pillowy yeasted doughnuts covered with a decadent chocolate glaze and festive sprinkles.

2-1/4 teaspoons (one 1/4-ounce packet) instant yeast
2 Tablespoons warm water
3-1/4 cups all-purpose flour
1 cup whole milk or buttermilk
1/2 stick butter (softened)
3 egg yolks
3 Tablespoons sugar
frying oil (Rice Bran, Vegetable, Canola, Grapeseed etc.)
1/2 cup unsalted butter
1/4 cup milk
1-1/2 Tablespoons corn syrup
2 teaspoons pure vanilla extract
4 ounces semisweet or bittersweet chocolate (chopped)
2 cups powdered sugar (sifted)

Steps:

  • In the bowl of a stand mixer, combine the yeast and warm water, then stir to dissolve.
  • Add the flour, milk, butter, egg yolks and sugar to the bowl and mix on low speed until everything is combined. Turn speed to medium and mix for about 3-4 minutes until the dough is smooth and lump free.
  • Lay out a large silicone mat on the counter or dust work surface with flour. Knead dough into a ball shape. Coat a large bowl with some olive oil and transfer dough to bowl. Cover with a clean towel and let rise until doubled in size, about 1 hour.
  • Once the dough has risen, punch it down. Roll the dough out on the prepared work surface to about a 1/4" thick then cut into doughnuts using a doughnut cutter. Repeat until all the pieces have been cut. Cover and allow the dough to rest for about 15-20 minutes.
  • Heat oil on medium-high heat in a large pot or dutch oven until it has reached 375 degrees (I used a candy thermometer). You can also test if it's ready using the tip of wooden chopsticks or a wooden spoon.
  • Gently place a couple of the doughnuts at a time into the hot oil. When they start to rise and turn golden, flip them over immediately using tongs or a wooden spoon (it should take less than a minute).
  • The second side will turn golden very quickly and faster than the first side.
  • Immediately transfer the fully fried doughnuts to paper towels to blot excess oil.
  • Continue with the remaining doughnuts until everything is fried.
  • To make the chocolate glaze: In a medium saucepan over medium heat, combine the butter and milk over medium-high heat, stirring until smooth. Turn the heat to low and add the chocolate, whisking until melted. Turn off the heat and add vanilla and corn syrup, whisking until smooth. Gently stir in the powdered sugar and whisk until smooth.
  • Quickly dip the donuts into the glaze before it begins to set Allow to dry slightly and dunk again for a thicker glaze and top evenly with sprinkles. Place donuts on a wire rack for the excess glaze to fall and allow glaze to set on doughnuts for 30 minutes before serving.

3 cups confectioners' sugar
1/4 teaspoon kosher salt
6 to 8 tablespoons fresh lemon juice (from 2 to 3 lemons)
1 3/4 cups unbleached all-purpose flour, plus more for dusting
1 3/4 cups bread flour
2/3 cup warm water
1/3 cup whole milk
2 1/4 teaspoons instant dry yeast (one 1/4-ounce package)
1 large egg plus 1 large yolk, room temperature
1/3 cup granulated sugar
2 teaspoons kosher salt
4 tablespoons unsalted butter, room temperature, cut into pieces
Vegetable-oil cooking spray
Vegetable, peanut, or safflower oil, for frying (about 8 cups)

Steps:

  • Lemon Confectioners'-Sugar Glaze: Whisk together confectioners' sugar and salt. Whisk in juice until mixture is smooth and thick, and has the texture of pourable honey. Glaze can be refrigerated in an airtight container up to 3 days; stir until smooth before using. (Makes 1 1/2 cups.)
  • Donuts: Whisk together flours. Combine water and milk in the bowl of an electric mixer fitted with the dough-hook attachment, then sprinkle yeast over top. Stir in 1 cup flour mixture. Cover with plastic wrap; let stand in a warm place until bubbling and doubled in volume, about 1 hour. Add egg and yolk, granulated sugar, salt, and remaining flour mixture. Beat on medium speed 3 minutes. Continue beating while adding butter, a few pieces at a time, beating to combine after each addition. When all butter has been added, keep beating until a shiny, sticky dough forms around hook, about 4 minutes more. Scrape down sides of bowl.
  • Cover dough with plastic wrap. Let stand in a warm place until almost doubled in volume, about 1 hour. Refrigerate at least 8 hours and up to 24.
  • Cut out 24 three-inch squares of parchment. Spray two baking sheets with oil; arrange parchment squares in a single layer on them. Spray parchment. Transfer dough to a lightly floured baking sheet; pat out 1/2 inch thick. Using a floured 2 1/2-inch donut cutter, cut out donuts (or use a 2 1/2-inch cookie cutter to cut out rounds, then cut out holes with a 1-inch round cutter). Transfer to parchment squares. Drape with oil-sprayed plastic wrap and let stand in a warm spot until slightly more than doubled in bulk and very soft, about 1 hour.
  • Meanwhile, pour oil into a large, deep, heavy pot, such as a Dutch oven, until it reaches 2 inches up side, leaving about 2 1/2 inches headroom. Clip a deep- fry thermometer to pot and heat oil over medium to 350 degrees to 360 degrees. Working in batches of 3 so as not to crowd pot, carefully use parchment to transfer donuts to hot oil and cook, flipping a few times, until puffed and golden brown all over, 2 to 3 minutes total for donuts (1 1/2 to 2 minutes for holes), maintaining oil temperature between 350 degrees and 360 degrees at all times. Transfer donuts to a wire rack set in a rimmed baking sheet; let cool 10 minutes.
  • While still slightly warm, dip top of each donut in glaze until halfway submerged, turning as needed to evenly coat one side, then place, glaze-side up, on rack. Let stand until glaze sets and donuts are cool, about 1 hour.

¾ cup scalded milk
⅓ cup granulated sugar
¼ teaspoon salt
1 (.25 ounce) envelope active dry yeast
¼ cup warm water
4 cups sifted all-purpose flour
1 teaspoon freshly grated nutmeg
⅓ cup butter or margarine
2 eggs, beaten
oil for deep frying
2 cups confectioners' sugar
6 tablespoons milk

Steps:

  • In a medium bowl, stir together the scalded milk, sugar, and salt. Set aside to cool until tepid. If using nutmeg, stir it into the flour, and add 2 cups of the mixture to the milk, and beat until well blended.
  • In a small bowl, dissolve the yeast in warm water. Stir into the milk and flour mixture, then mix in the butter and eggs. Mix in the remaining flour 1/2 cup at a time. When dough is firm enough, turn it out onto a floured surface, and knead for 3 to 4 minutes. Place into an oiled bowl, cover and allow dough to rise until doubled in bulk. This should take 30 to 45 minutes.
  • On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into circles using a donut cutter, or round cutter. Set aside to rise for 30 to 40 minutes, or until light.
  • Heat one inch of oil in a deep heavy frying pan to 375 degrees F (190 degrees C). Fry donuts a few at a time. Cook on each side until golden brown, then remove to drain on paper towels. Glaze while warm, or just sprinkle with sugar.
  • To make the glaze, stir together the confectioners' sugar and 6 tablespoons milk until smooth. Dip warm donuts into glaze, and set aside to cool.

1/2 cup warm milk (105 to 110 degrees F)
1/4 cup warm water (105 to 110 degrees F)
2 1/4 teaspoons (1 packet) active dry yeast
1/4 cup plus 1 teaspoon sugar
3 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
Zest of 1/2 orange
1 large egg plus 2 yolks, lightly beaten
1 teaspoon vanilla extract
6 tablespoons unsalted butter, at room temperature
Canola or vegetable oil, for the bowl and frying
1 cup raspberry jam
1/2 tablespoon rose water, or to taste
1 1/2 cups powdered sugar, plus more if needed
2 tablespoons whole milk, plus more if needed
1 teaspoon vanilla extract
A pinch of kosher salt
1/4 cup food-quality dried rose petals

Steps:

  • For the dough: In a medium bowl, combine the milk, water, yeast and 1 teaspoon of the sugar and give it a little stir. Let it sit for about 5 minutes, until it becomes foamy on top.
  • Meanwhile, in the bowl of stand mixer fitted with a dough hook, mix together the flour, salt, cardamom, cinnamon, orange zest and remaining 1/4 cup sugar. Add the eggs, vanilla and yeast mixture and mix to form a very very stiff dough. It will seem like the dry ingredients aren't all going to get incorporated, but try as best you can. Knead for a few minutes and then with the mixer on, begin gradually adding the butter, tablespoon by tablespoon. This, too, will seem like it isn't going to incorporate into the dough, but keep on mixing for 8 to 10 minutes more, scraping down the dough hook occasionally, until your dough is smooth and slightly sticky. Transfer the dough to an oiled bowl, cover it with plastic wrap and let it sit at room temperature (or in the fridge, see notes) until it has doubled in size, about 2 hours.
  • Turn the dough out onto a work surface and roll it out to 1/2-inch thickness. Cut out 2 1/2-inch circles and transfer them to a baking sheet lined with parchment. When re-rolling scraps, first press them together and then allow the dough to sit for about 10 minutes before proceeding. Cover the circles with plastic wrap or a dish towel and let rise for another hour, until doubled.
  • In a large heavy pot fitted with a thermometer, heat 3 to 4 inches oil to 350 degrees F. Fry the donuts in batches of 3 or 4, for 1 1/2 minutes on each side. Transfer to a wire rack to cool.
  • For the filling: Meanwhile, in a small bowl, combine the jam and rosewater. Taste and adjust as desired. Fill a squeeze bottle or piping bag with the jam.
  • For the glaze: Whisk together the powdered sugar, milk, vanilla and salt until smooth. It should be the consistency of a slightly thicker glue; if it's too thick, add a little more milk, and if it's too thin, add a little more powdered sugar. Dip the cooled donuts into the glaze and let any excess drip off (if the glaze has a hard time sticking to the donuts, that means it's too thick and that you should add more milk). Stick the squeeze bottle straight down into the center of each donut, wiggle it around to make space and fill up with jam. Top with a sprinkle of pistachios and rose petals and enjoy!
