SQUID INK CHITARRA WITH SEA URCHIN, DUNGENESS CRAB, AND JALAPEñO
Matt makes a point to return to Italy every year for inspiration. On a recent trip, he happily returned with the idea for this sea urchin pasta dish, the only cold pasta we serve. I love sea urchins, or ricci. They are a delicacy of many seaside regions in Italy, such as Puglia and Sicily, but many aficionados say that the best sea urchins come from the waters off Southern California. Cooked lump crab meat is readily available at seafood stores and in the seafood sections of high-end grocery stores.

Steps:
- Combine the pine nuts, jalapeño peppers, onion, and olive oil in the bowl of a food processor or the jar of a blender and purée to form a paste. Scrape the paste into a bowl.
- Fill a large saucepan or pasta pot with 6 quarts of water, add 6 tablespoons salt, and bring it to a boil over high heat. If you are not using a pasta pot, place a colander in the sink or have a pair of tongs handy to lift the pasta out of the water. Fill a medium bowl with ice water.
- Reserve 4 of the best-looking sea urchin tongues for garnish and put the remaining 12 tongues, the crab meat, and 1/4 cup of the jalapeño pesto in separate piles in a medium bowl, discarding the remaining pesto or reserving it for another use. Drizzle the pesto with 1/2 cup of the finishing-quality olive oil and set aside at room temperature while you cook the pasta.
- Remove the chitarra from the refrigerator or freezer and drop it into the boiling water. Stir to prevent the strands from sticking together, partially cover the pot so the water returns to a boil quickly and continues boiling, and cook the pasta until it's al dente, about 2 minutes. Lift the pasta out of the water or drain it and plunge it in the ice water, leaving it there for 5 or 10 seconds to stop it from cooking. Use tongs to lift the pasta out of the ice water, and transfer it to the bowl with the sea urchin and crab meat. Using a rubber spatula, gently fold the pasta to coat it with the sauce. Drizzle the lemon juice and sprinkle the sea salt over the pasta and gently fold the pasta to distribute the seasonings evenly.
- Use tongs to lift the chitarra out of the bowl and onto the center of each of four plates, dividing the pasta evenly, and twirling it as it falls onto the plate to form a tight mound. Spoon the sea urchin and crab meat remaining in the bowl over the pasta. Place one of the reserved sea urchin tongues on top of each serving of pasta, drizzle 1/2 teaspoon of finishing-quality olive oil over and around each plate, top with a pinch of sea salt, and serve.

LINGUINE WITH CRAB, LEMON, CHILE, AND MINT
To make this pasta sing, use the freshest, best-quality crab available, such as jumbo lump crabmeat, Dungeness, or king crab. Adjust the heat from the chiles and the amount of lemon juice to your liking.

- Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid.
- Meanwhile, melt 1 tablespoon butter with 1 tablespoon olive oil in a large skillet over medium heat. Add shallots and stir until just soft, 3-4 minutes. Add garlic and 1 chile and cook, stirring often, until fragrant, about 1 minute.
- Add 1/2 tablespoon lemon juice and 3 tablespoons pasta cooking liquid to shallot mixture; add a pinch of pepper. Stir until liquid is almost evaporated, about 1 minute.
- Transfer pasta to skillet and add 1/2 cup reserved pasta cooking liquid. Increase heat to medium-high. Cook, tossing pasta or stirring with tongs, until liquid is almost evaporated and pasta becomes glossy, about 2 minutes. Add the remaining 3 tablespoons butter, 1 tablespoon oil, 1 tablespoon lemon juice, 1 teaspoon lemon zest, crab, half of mint, and more chile rounds, if desired.
- Stir pasta until butter melts and pasta is well coated, adding more pasta cooking liquid if dry. Divide between bowls; top with remaining 1 teaspoon lemon zest and mint. Sprinkle with more lemon juice if desired.
SEA URCHIN WITH JALAPENO AND YUZU

- Lightly toast bread pieces until crispy on the outside but still chewy inside; butter one side of each piece of toast and set aside.
- In a small bowl, whisk together cornstarch with 2 tablespoons water. Place 1/2 cup yuzu juice in a small saucepan and whisk in cornstarch mixture. Bring mixture to a simmer over medium heat. Remove from heat and whisk in remaining 1/2 cup yuzu juice. Pour yuzu mixture immediately into a bowl set in an ice water-bath. Let cool completely.
- Top each piece of buttered toast with 1 or 2 pieces of sea urchin and a piece of jalapeno. Spoon over cooled yuzu mixture; serve immediately.
SQUID INK CALAMARI RECIPE BY TASTY
Take dinner time deep down under the sea with these ink-hued dishes. Start with crispy fried calamari dredged in an activated charcoal batter and served with a garlicky squid ink aioli. Then for the main course, it's homemade squid ink fettuccine in a white wine sauce with plenty of mussels. Finish with a no-bake activated charcoal cheesecake studded with black sesame seeds. The food may be dark, but the flavors are anything but!

- Make the calamari: In a large bowl, toss the calamari with the lemon juice. Let sit for 30 minutes to help tenderize the calamari.
- While the calamari tenderizes, make the aioli: In a medium bowl, stir together the mayonnaise, garlic, white wine vinegar, lemon juice, squid ink, and salt until smooth. Transfer to a serving bowl and chill until ready to serve.
- In a large bowl, whisk together the flour, cornstarch, salt, pepper, activated charcoal, black sesame seeds, and smoked paprika.
- In a medium bowl, whisk together the buttermilk and squid ink until fully combined.
- Heat the vegetable oil in a large pot over medium-high heat until it reaches 375°F (190°C).
- Working in batches, transfer the calamari to the flour mixture and toss to coat. Transfer to the buttermilk mixture, toss to coat, then return to the flour mixture and toss until fully coated.
- Immediately transfer the calamari to the hot oil and fry for 2-3 minutes, until crispy. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Repeat with the remaining calamari.
- Transfer the calamari to a serving platter. Sprinkle with the parsley and garnish with lemon wedges. Top the aioli with more black sesame seeds and serve alongside.
