ST. LOUIS BARBECUE SAUCE
St. Louis barbecue sauce is generally thinner and has a more tangy flavor than its Kansas City cousin. Use this recipe to sauce your ribs and more.

Steps:
- Combine all of the ingredients in a medium saucepan over low heat. Stir occasionally and let simmer for 20 minutes. The sauce should be thin but not watery.
- Remove the sauce from the heat and let it cool, about 20 to 30 minutes.
- You can use the sauce immediately after cooling, but it is better if you allow it to sit for a day (refrigerated). Place it in an airtight container in the refrigerator (a squeeze bottle is a handy storage container). The barbecue sauce can be stored refrigerated for up to one week after preparation or three to four months in the freezer.

LAMB SHANKS IN BARBECUE SAUCE
This recipe came from one of the first cookbooks I ever bought, "Casserole Cookbook". The price is still on the cover-$1.25- so you can only imagine how many years I have been cooking and enjoying these shanks.

Steps:
- Wipe the lamb shanks with a damp cloth.
- Remove the rind from the bacon and chop.
- Heat the butter in a flameproof casserole, add the onion and bacon and saute until golden brown, remove from the casserole. Roll the lamb shanks in flour and brown evenly all over in remaining fat in casserole. Return the onion and bacon to the casserole, add the remaining ingredients and bring to a boil. Cover the casserole and cook in a moderate to slow oven for about 2 hours or until the shanks are tender. Serve with creamy mashed potatoes and a green vegetable.

- Melt butter; add onions and celery; cook til soft. Add remaining ingredients. Stir well and heat to boiling.
- For spareribs; remove excess fat from ribs, brown on both sides in hot fat.
- When sauce is boiling, pour over ribs. Bake at 350°F for 1 3/4 to 2 hours.
