STARBUCKS POWER/ENERGY BAR
This recipe was given to me by a friend who knew someone that had worked for a company that prepared baking for Starbucks. It is said to be the recipe they use for their Power/Energy Bars.

Steps:
- Combine the first 6 ingredients in a large pot. Stir frequently while mixture melts over a medium heat setting. When everything appears well blended and creamy, turn off heat. Add vanilla and stir well.
- Add remaining ingredients. Stir, with a large wooden spoon, until all the add-ins are coated with the peanut butter mixture.
- Transfer mixture onto a large jelly roll pan. (I sometimes spray pan with Pam or line with parchment paper.) Spread evenly and cool before cutting. (I sometimes run a rolling pin over the surface to ensure a uniform thickness.).
- * Pea Butter may be substituted for peanut butter, in the case of a peanut allergy.
- ** Honey may be substituted for corn syrup.

TRAIL-TESTED POWER BARS
Trail-tested power and energy bars. These granola-style bars are my mix and mod of a couple of recipes, mostly Amy E's "Bird Seed Energy Bars"... they made it 6 days from Mammoth to Yosemite Valley.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x14-inch baking pan.
- Mix rolled oats, whole wheat flour, cereal, brown sugar, and cinnamon together in a large bowl.
- Whisk banana, eggs, oil, applesauce, maple syrup, honey, vanilla extract, and salt together in a separate bowl until evenly blended. Stir into the oat mixture. Stir in flax seeds, sesame seeds, sunflower seeds, chocolate chips, banana chips, walnuts, almonds, and peanut butter.
- Use your hands to mix the ingredients, and press into the prepared pan.
- Bake in the preheated oven until edges are golden brown, 20 to 25 minutes. Cool completely in the pan, about 30 minutes. Cut into 2-inch bars.

EASY ENERGY BARS
This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

- Stir oats, chocolate chips, flax meal, peanut butter, honey, vanilla extract, and salt together in a bowl. Roll into 24 balls and refrigerate until firm, at least 30 minutes.

SUPER ENERGY BARS
This recipe was inspired by the Super Energy Bars made by the coffee roastery down the street - they're my absolute favorite for a work-day pick me up! This is the 2nd version... it's a recipe in progress. The original used oatmeal instead of flour and no applesauce - it was tasty, but more like granola than bars. I'll keep adjusting and updating the recipe!

Steps:
- Preheat oven to 350.
- Mix all dry ingredients together.
- Add peanut butter, honey, and vanilla - mix well. (I used my mixer - it's pretty dense).
- Grease a 13x9 baking pan - spread mixture into pan (should be about an inch thick).
- Bake for 15-20 minutes.
- Cool and cut into squares. I'm going to refrigerate them (in the hopes they will hold together a little better).
- Enjoy -- yummy & healthy!
