Time 25m

Number Of Ingredients 21

2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
¼ cup chopped fresh parsley
freshly ground black pepper
1 pound flank steak
1 red onion (sliced)
olive oil
1 tablespoon Worcestershire sauce
4 slices thick-cut artisan bread
2 cups arugula
1 bunch fresh tarragon (divided)
2 shallots (minced)
6 black peppercorns
¼ cup white wine vinegar
¼ cup white wine
3 egg yolks
¼ teaspoon salt
½ cup butter (1 stick, melted)
pinch cayenne pepper

Steps:

  • Combine the olive oil, Worcestershire sauce, red wine vinegar, parsley, salt and pepper in a small bowl. Place the flank steak in a large zipper sealable plastic bag and pour the marinade over the top. Massage the steak and marinade together, seal the bag and refrigerate for at least 2 hours or as long as overnight.
  • To make the Béarnaise sauce: Combine half the bunch of tarragon, the shallots, peppercorns, vinegar and wine in a small saucepan and bring to a boil. Lower the temperature to a simmer and simmer until the liquid has reduced by half. Let the mixture cool and strain it through a fine strainer.
  • Combine the tarragon reduction, egg yolks, and salt in a blender jar. Blend until well mixed. Slowly drizzle in the melted butter.
  • Season with salt and cayenne pepper. Add the leaves from the remaining half bunch of tarragon and buzz in the blender a couple of times. Hold the Béarnaise sauce in a bowl covered with plastic wrap, over a barely simmering water bath.
  • Pre-heat an outdoor grill or grill pan. Grill the marinated flank steak for about 8 to 10 minutes on each side until an instant read thermometer inserted into the center of the steak registers140º F. Transfer the steak to a cutting board and let it rest for at least 5 minutes.
  • While the steak is cooking, prepare the onions and bread. Pre-heat a large frying pan. Add olive oil and sauté the onions until lightly browned, about 5 minutes, seasoning with salt and freshly ground black pepper. Deglaze the pan with Worcestershire sauce and toss to coat the onions. Remove the onions from the pan and cover with foil to keep them warm. Wipe out the pan and add another tablespoon of olive oil. Toast the bread slices in the olive oil on both sides until golden brown.
  • Thinly slice the flank steak on the bias against the grain of the meat. To assemble the sandwiches, place a slice of bread on a serving plate. Top the bread with some arugula and slices of steak. Cover the steak with fried red onions and pour warm Béarnaise sauce on top. Serve immediately.

SIRLOIN STEAK WITH BEARNAISE SAUCE

Sirloin Steak with Bearnaise Sauce image

Provided by Food Network

Yield 4 servings

Number Of Ingredients 9

1 1/2 lbs. boneless sirloin steak, 1-inch thick
kosher salt
freshly ground black pepper
1 cup dry white wine such as Chardonnay
2 Tbs. white wine vinegar
1 small shallot, minced
1 Tbs. olive oil
6 Tbs. unsalted butter (1 Tbs. set aside and the remaining 5 Tbs. cut into small pieces and chilled)
2 Tbs. finely chopped fresh tarragon

Steps:

  • Preheat oven to 400 degrees F. Season steak on both sides with salt and pepper and refrigerate. Combine wine, vinegar and shallot in a small saucepan and bring to a boil. Reduce heat to medium-low and simmer until mixture is reduced to two tablespoons, 15-20 minutes.
  • Meanwhile, heat a large, heavy, ovenproof skillet over medium-high heat. When it's hot, add oil and reserved tablespoon of butter. When butter is melted, add steak and sear for one minute. Reduce heat and continue to cook until the first side is golden brown and beginning to crisp, about three minutes longer. Turn the steak with tongs and sear the other side until well-browned, two or three minutes.
  • Place pan in oven and finish cooking, turning once, 6-8 minutes for medium-rare. Transfer steak to a platter and loosely cover with foil to keep warm. To finish sauce, put it through a fine strainer, pressing on shallots. Whisk the five tablespoons of cold butter a few pieces at a time into warm reduction until you have a creamy sauce. Stir in tarragon to taste and season with salt and pepper. Slice steak into half-inch thick slices across grain, spoon sauce on top and serve.

STEAK WITH BEARNAISE SAUCE

Steak With Bearnaise Sauce image

We had this for dinner this past weekend and I cannot begin to describe how scrumptious it was. This is a recipe from Ina Garten / The Barefoot Contessa. I have never liked Bearnaise Sauce -- but I made this as a special treat for my husband. We BOTH absolutely loved this steak AND the sauce, and it will be a special dinner for us from now on. We served this with Rosemary Roasted Potatoes and Pesto Pea Salad. Yum! ** Please note: This has raw egg yolks in the Bearnaise Sauce **

CHEF JOHN'S BEARNAISE SAUCE

Chef John's Bearnaise Sauce image

I adore a good hollandaise and couldn't survive without mayonnaise, but if I had to pick an all-time favorite 'aise, it might just be béarnaise. This tarragon-spiked, shallot-infused hollandaise is absolutely perfect with any and all steaks or roasts, especially lean ones.

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 55m

Yield 8

Number Of Ingredients 15

1 cup fresh tarragon leaves, coarsely chopped
½ cup thinly sliced shallots
1 teaspoon whole black peppercorns
½ cup white wine vinegar
½ cup white wine
⅓ cup water
¼ cup chopped fresh tarragon
1 teaspoon drained capers
1 tablespoon cold unsalted butter
2 large egg yolks
3 tablespoons tarragon-vinegar reduction
8 tablespoons cold unsalted butter
1 tablespoon caper-tarragon compound butter
salt and cayenne pepper to taste
1 pinch freshly ground black pepper

Steps:

  • Place 1 cup tarragon, shallots, and peppercorns in a saucepan. Pour in white wine vinegar, white wine, and water. Place over medium-high heat and bring to a simmer; stir. Reduce heat to medium-low to maintain a gentle simmer and reduce liquid to about 3 tablespoons, 20 to 30 minutes. Remove from heat. Strain into a bowl through a fine mesh strainer, pressing vegetable/herb mixture to extract as much liquid as possible.
  • Place 1/4 cup chopped tarragon and capers in a mortar. Mash with a pestle about 1 minute. Add 1 tablespoon cold butter. Mash and pound with pestle until ingredients are thoroughly combined in a solid mass. Transfer to a piece of plastic wrap; wrap and chill.
  • Place egg yolks in a stainless steel (flameproof) mixing bowl; add 3 tablespoons tarragon/shallot reduction; whisk together. Add cold butter cubes. Place bowl over low to medium heat whisking constantly until sauce thickens, as you hold the bowl with a kitchen towel. After butter melts continue whisking; mixture will turn a lighter yellow color after 8 to 10 minutes. When mixture is nice and thick, reduce heat to low and stir in compound butter broken into chunks. Continue whisking. Remove from heat. Season with salt, cayenne pepper, and black pepper.

  • Season the tenderloin liberally with salt and pepper. Place the tenderloin on the grill and cook until desired degree of doneness. ( I like medium rare which takes about 3-4 minutes per side depending on how thick the steak is.) Transfer the steak to a plate and cover with foil. Allow to rest approximately 10 minutes.
  • While the steak is resting, heat the olive oil in a large skillet over med-high heat. Add the onions to the pan and cook until softened. Add the mushrooms to the onions and cook until both are golden brown. Stir in the beef stock and deglaze scraping the bottom of the pan with a wooden spoon to loosen the brown bits. Cut the beef into bite sized pieces and add to the onion mixture. Stir to combine. Cover the beef mixture with the cheese making a cheese blanket of sorts and allow to melt. Stir in the béarnaise to coat the ingredients completely.
  • Transfer the mixture to the bottom slice of bread. Place the top of the bread on the sandwich and cut into 4 equal pieces. Serve immediately.
