Beef Sliders With Horseradish Cream image

3/4 cup horseradish, drained
1/4 cup mayonnaise
2 tablespoons sour cream
1 1/2 teaspoons dijon mustard
1/2 teaspoon sugar
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter
12 slider buns, split
1 1/2 pounds beef tenderloin, cut into twelve 1/4-to- 1/2-inch-thick pieces
Kosher salt and freshly ground pepper
Onion rings, for topping

Steps:

  • Make the horseradish cream: Mix the horseradish, mayonnaise, sour cream, mustard, sugar, 3/4 teaspoon salt and 1/4 teaspoon pepper in a bowl. Cover and chill at least 2 hours.
  • Make the sliders: Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the bun bottoms, cut-side down, and cook until golden; set aside. Melt 1 more tablespoon butter in the skillet and toast the bun tops until golden; set aside.
  • Season the beef generously with salt and pepper. Heat the remaining 2 tablespoons butter in a large cast-iron skillet over medium-high heat. Working in batches, add the beef and cook until browned but still pink in the center, about 2 minutes per side. (You can also cook the tenderloin in one piece: Brown on all sides, then roast in a 425 degrees F oven, 10 to 15 minutes. Let rest, then slice into 12 pieces.)
  • Assemble the sliders: Put a slice of beef on each bun bottom. Top each with a generous spoonful of the horseradish cream, some onion rings and a bun top.

1 (12 ounce) beef skirt steak, thinly sliced
1 (12 count) package Hawaiian bread rolls
½ large green bell pepper, chopped
½ large onion, chopped
¼ cup mayonnaise
8 slices pepper Jack cheese
2 tablespoons butter, melted

Steps:

  • Heat a skillet over medium-high heat. Add steak, bell pepper, and onion. Cook until steak is hot and reaches your desired color, 7 to 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line an 8x8-inch baking pan with aluminum foil.
  • Slice the connected rolls in half widthwise to look like 2 giant slices of bread. Place the bottom half into the bottom of the prepared baking pan. Spread mayonnaise evenly on top.
  • Place 4 slices of pepper Jack cheese over the mayonnaise. Layer the steak mixture and the remaining cheese on top. Cover with the top half of the bread. Spread melted butter on top.
  • Bake in the preheated oven until cheese is melted and bread is browned, about 20 minutes. Slice into individual portions.

1/4 pound blue d'Auvergne or other creamy blue cheese
2/3 cup sour cream
1/3 cup mayonnaise
1 1/2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 loaf health or 7-grain bread
1 1/2 pounds rare fillet of beef thinly sliced, recipe follows
1 bunch arugula
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
1 1/2 pounds whole fillet of beef trimmed and tied
2 tablespoons melted butter
1 tablespoon salt
1 tablespoon coarsely ground black pepper

Steps:

  • For the dressing, mash the blue cheese with a fork and blend with the sour cream, mayonnaise, Worcestershire sauce, salt, and pepper.
  • To make the sandwiches, cut the bread into 8 slices, each slice 1/4 inch thick. Spread 4 of the slices thickly with the dressing. Top with slices of beef and arugula and sprinkle with salt and pepper. Spread the rest of the slices of bread very lightly with butter and place, butter-side down, on top of the beef.
  • Preheat oven 500 degrees F.
  • Melt 2 tablespoons of unsalted butter.
  • Place beef on a baking sheet and pat the outside dry with a paper towel. Using a pastry brush coat the beef with the melted butter. Sprinkle evenly with salt and pepper. Roast for 25 minutes at 500 degrees F for medium rare.
  • Remove the beef from the oven, cover tightly with aluminum foil, and allow to rest at room temperature for 20 minutes before slicing.

1/4 cup olive oil
1/4 cup balsamic
2 tablespoon minced garlic
2 tablespoon whole-grain mustard
10 cracks of pepper
1 pound sirloin or strip steak
4 dinner rolls
1 onion
2 tablespoon olive oil
a wedge of creamy blue cheese
1 jar sundried tomatoes (drained)

Steps:

  • Pour all marinade ingredients into a sealable bag and add steak. Allow to marinate 2-12 hours.
  • About 20 minutes before grilling, remove the steaks from the refrigerator and let sit. Meanwhile, bake your bread, if necessary and heat 2 Tbsp olive oil on medium-low. Add sliced onion and allow to caramelize. Reduce to low, if necessary.
  • Heat your grill to high. Cook 4-5 minutes on first side and 3-4 on other side for medium-rare.
  • Transfer steaks to a baking dish or platter, tent loosely with foil and let rest 5 minutes. Slice thin.
  • Add steak, creamy blue cheese, caramelized onions and sundried tomatoes to each roll!

2 pounds rib-eye steaks, cubed into bite-size pieces
2 tablespoons salted butter, melted, plus 2 tablespoons for the sauce
1 tablespoon steak seasoning
2 teaspoons chopped fresh rosemary
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/4 cup crumbled blue cheese
2 tablespoons prepared horseradish
2 tablespoons chopped chives

Steps:

  • Heat a heavy-bottomed skillet over medium-high heat.
  • Toss together the steak, melted butter and steak seasoning in a bowl. Add to the skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.
  • Lower the heat to medium and add the remaining 2 tablespoons butter to the skillet. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and no longer raw. Add the cream and bring it to the boil. Reduce the heat to low and simmer, then stir in the blue cheese, horseradish, 1 tablespoon of the chives and black pepper to taste. Transfer to a serving bowl.
  • Place the steak bites on a platter with toothpicks, with the sauce on the side. Garnish the plater with the remaining chives before serving.

A perfectly balanced game day appetizer using leftover flat iron steak. Quick, easy and crowd pleasing!

1 1 pound flat iron steak, (cooked rare, cooled and sliced thin)
1/2 Cup Blue Cheese
3 Tbsp Mayo
3 Tbsp Creamy Horseradish (see notes)
1 Cup Arugula
1/2 Cup Tomato Onion Jam (click for link, see notes)
6 Slider Buns
2 Tbsp Olive Oil

Steps:

  • Make the horseradish mayo: Combine 3 tbsp mayo + 3 tbsp creamy horseradish. Set aside
  • Slice flat iron steak across the grain into very thin slices. (Easier to do if steak is cold or using leftovers). Set aside. (see notes)
  • Split slider buns and crumble blue cheese.
  • Gather all components and set aside in a line: Steak and buns, mayo, blue cheese, arugula and tomato onion jam (or balsamic glaze)
  • Heat and oil a griddle pan to 400F
  • Brush olive oil on both the top and bottom of the inside of the slider buns. Add to griddle pan inside down and toast for 1-2 minutes or until golden. (Leave room to cook the sliced steak) Brush the top and bottom lightly with olive oil, flip and toast the outsides (1 minute)
  • While the buns are toasting, add the sliced steak and cook, tossing with tongs occasionally until heated through (1 -2 minutes). Once warm, set to the side.
  • When the buns are done toasting, line them up. Spread 1 tbsp of aioli on the bottom bun, add 4-5 slices of steak (see photo), top with 1- 2 tbsp blue cheese crumbles, then top with arugula. Spread 1-2 tbsp of the tomato onion jam (or 1 tbsp of balsamic glaze) to the top bun and place on top of the arugula.
  • Serve and enjoy!
