MEXICAN STEAK TACOS

Mexican Steak Tacos image

¡Tacos de Bistec!! Or Mexican Steak tacos. If you have been to Mexico you have seen the taco stands at night with lights hanging from the roof, and people around it like bees on a honeypot.

Provided by Mely Martínez

Categories     Antojitos

Time 30m

Number Of Ingredients 8

2 pounds thinly sliced Steaks of Rib eye or Sirloin (or Diezmillo at your local Latin Store.)
12 corn tortillas
1 tablespoon vegetable oil or lard (Lard is better for an authentic taste)
1 medium onion finely chopped (about 1 cup)
1 bunch of cilantro finely chopped
Salt and pepper to taste
A good spicy salsa to top the tacos
Add salt and pepper to the steaks.

Steps:

  • On a heavy skillet at medium high heat add the vegetable oil. Place the steak when the oil is hot and brown the steaks.
  • Cook for about 2 minutes and turn. If you are making several steaks, wrap the cooked ones in aluminum foil and keep warm in an oven while you finish cooking the rest of the steaks. Do not over cook.
  • While the steaks finish cooking, start warming the tortillas in a medium heat skillet and wrap them in a kitchen towel.
  • Chop the meat into small pieces and place some of the meat into each warm tortilla. (Some taco stands warm their tortillas in the same skillet the meat was cooked to absorb the flavor and some also add more oil to the skillet while warming the tortillas). Top each taco with the chopped onion and cilantro.
  • Add the chopped steak to the skillet. Mix and serve on warm corn tortillas, top with chopped cilantro and onion. Now, you are ready to enjoy a real taco!

Citrus Marinated Steak Taco Bowls Recipe image

Orange and lime juice marinated grilled steak, combined with a serrano chile fueled guacamole, gives these tacos a spicy zestiness that pairs perfectly with a Corona™ Familiar.

Provided by Old El Paso

Categories     Fajitas     Tacos

Time 1h35m

Yield 8

Number Of Ingredients 12

1 beef flank steak (about 1 1/4 lb)
3 tablespoons orange juice
3 tablespoons fresh lime juice
3 cloves garlic, finely chopped
1 package (1 oz) Old El Paso™ original taco seasoning mix
2 large ripe avocados, pitted and peeled
1 medium serrano chile, seeded, finely chopped
1/2 cup chopped red onion
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon salt
1 package (8 count) Old El Paso™ soft tortilla bowls, heated as directed on package
1/2 cup chopped tomato

Steps:

  • Place beef in large, resealable food-storage plastic bag. In small bowl, mix orange juice, 2 tablespoons of the lime juice, the garlic and taco seasoning mix. Pour marinade over beef. Seal bag; refrigerate at least 30 minutes but no longer than 4 hours.
  • Heat gas or charcoal grill.
  • Remove steak from marinade; discard marinade. Place steak on grill over medium heat. Cover grill, and cook 11 to 16 minutes, turning once, until beef is of desired doneness (at least 145°F). Let stand 5 minutes. Cut beef across grain, into thin slices.
  • Meanwhile, to make guacamole, in medium bowl, mash avocados. Add serrano chile, 1/4 cup of the red onion, the cilantro, remaining 1 tablespoon lime juice and the salt; gently stir to combine.
  • Divide steak among tortilla bowls. Top with guacamole, remaining 1/4 cup red onion and the chopped tomato.

GRILLED STEAK TACOS

Grilled Steak Tacos image

"Carne Asada" literally means "grilled beef" so let's make steak tacos the authentic way.... on the grill!

Provided by Old El Paso

Categories     Tacos

Time 30m

Yield 5

Number Of Ingredients 8

1 ripe avocado
1 Old El Paso™ Restaurante Steak Carne Asada Soft Taco Dinner Kit
2 tbsp (30 mL) water
1 tbsp (15 mL) vegetable oil
1 tbsp (15 mL) white vinegar or lime juice
3/4 to 1 lb (375 to 500 g) whole sirloin steak (about 3/4 to 1-inch/2 to 2.5 cm thick)
1 large red bell pepper, cut into chunks
Suggested Toppings: chopped white onion, fresh cilantro, squeeze of fresh lime, drizzle of taco sauce or salsa

Steps:

  • Scoop avocado from peel and mash with a fork in a small bowl. Add Guacamole Seasoning (from kit) and stir until well blended. Press plastic wrap onto surface of guacamole and refrigerate. Stir again before serving.
  • In medium bowl, combine 2 tbsp (30 mL) water, 1 tbsp (15 mL) each vegetable oil and white vinegar with contents of Steak Seasoning pouch (from kit).
  • Place entire steak (unsliced) in bowl, flipping and moving around until well coated on both sides.
  • Heat gas or charcoal grill. Before cooking steak and peppers and while the grill is clean, toast the soft flour tortillas (from kit) directly on the grill for 15 to 20 seconds per side (or until lightly golden and toasted); wrap tortillas in foil to keep warm until ready to assemble.
  • Cook steak over medium-high direct heat for 6 to 8 minutes, turning once. The length of grilling time will vary depending on your desired doneness and the thickness of your steak (we prefer medium-rare/145°F). While cooking steak, place chunks of red pepper directly on the grill around the steak. Turn occasionally until slightly charred and softened.
  • Remove both steak and peppers from the grill and allow steak to rest for 5 minutes. Slice steak across the grain into strips and slice pepper into strips.
  • Place steak and pepper strips onto each warmed and toasted tortilla. Top with guacamole, chopped onions and cilantro and a squeeze of fresh lime or a drizzle of taco sauce or salsa.

  • Mix your marinade and rub it all over your meat. I recommend mixing it together in a bag or a bowl that you can add the meat to, so you don’t lose any of the ingredients by shifting them from bowl to bowl. Just don’t curt the meat.
  • Refrigerate this for at least one hour. Again, if you need to make it the night before or before work that’s perfectly fine too.
  • Make your chimichurri by blending all the ingredients together in a small blender. Make sure it is all well chopped and combined. Set it aside in the refrigerator. Again, make this before or even the night before. The longer it sits, the longer the flavors have to marry and the better it will taste.
  • If you want to make the honey radishes, slice your radishes and add them to a bowl with the other ingredients for at least 10 minutes. Make sure they are all covered and the honey and vinegar are well mixed.

  • On a cutting board, cut the steak into ½ inch cubes and place into a bowl. Coat with 1 T oil and toss well. Apply the dry rub carne asada seasoning liberally and toss well until the beef cubes are richly seasoned. I used about 1 ½ T of the rub and applied more during cooking.
  • Reserve the steak covered in a refrigerator for several hours if possible, if not proceed to the searing stage.
  • In your best heavy-bottomed saute pan, drizzle in a little oil to coat the bottom of the pan well. Bring the heat up to high. Add 1 c. of the steak cubes and spread them out with a wooden spatula.
