Dinner for breakfast! This steak and egg hash is full of vegetables and protein, the perfect start to your day! Sear off the steak fresh, or use leftovers from the night before to make this dish even easier to pull together.

2 lb yukon gold potato, peeled and cut into 1/2 in (1 1/2 cm)
cold water, for cooking potatoes
1 ½ tablespoons kosher salt, divided
1 top sirloin steak
1 ½ teaspoons freshly ground black pepper, divided
2 tablespoons unsalted butter, divided
1 tablespoon canola oil
½ small yellow onion, thinly sliced
8 oz cremini mushroom, steemed and quartered
1 small red bell pepper, seeded and diced
1 teaspoon fresh oregano, chopped
1 cup cherry tomato, halved
4 large eggs
1 tablespoon fresh parsley, minced

Steps:

  • Add the potatoes to a large pot and fill with enough cold water to cover by 1 inch (2 ½ cm). Season with 1½ teaspoons of salt and bring to a boil over medium-high heat. Boil for 5 minutes, then drain and run under cold water to stop the potatoes from cooking further. Dry the potatoes with paper towels and set aside.
  • Place a rack in the lower third of the oven. Preheat the oven to 350°F (180°C)
  • Blot the steak dry with a paper towel and season on both sides with 1½ teaspoons of salt and 1 teaspoon black pepper.
  • Heat a 10-inch (25 cm) cast iron skillet over high heat until smoking. Reduce the heat to medium-high. Add 1 tablespoon of butter and the canola oil to the pan and melt the butter completely, about 1 minute. Add the seasoned steak and cook, without disturbing, for 2 minutes on each side. The steak will be rare, but will finish cooking in the oven. Transfer to a cutting board to rest for at least 5 minutes before slicing into ¼-inch (6 mm) strips.
  • Reduce the heat to medium and melt the remaining tablespoon of butter in the same skillet. Add the onion, mushrooms, red bell pepper, and ½ teaspoon of salt. Cook, stirring occasionally, until the onions are slightly caramelized and the mushrooms have released their liquid, 8-10 minutes.
  • Add the potatoes to the skillet and season with the remaining teaspoon of salt, ¼ teaspoon black pepper, and the oregano. Stir to combine and cook, without disturbing, for 4 minutes, until the potatoes are golden brown and crisp on one side. Add the cherry tomatoes and stir to combine.
  • Make 4 wells in the hash using the back of a spoon and carefully crack an egg into each well.
  • Scatter the sliced steak on top of the hash and transfer to the oven. Bake for 10 minutes, or until the egg whites are set but the yolks are still runny.
  • Remove the hash from the oven and season with the remaining ¼ teaspoon pepper. Garnish with the parsley.
  • Serve warm.

1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons canola oil
3 medium potatoes (about 1 pound), peeled, cooked and diced
1 cooked steak, diced (about 1 cup)
1/4 to 1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 cup shredded Monterey Jack cheese
4 eggs

Steps:

  • In a large skillet, saute the green pepper and onion in oil until tender. Stir in potatoes. Reduce heat; cover and cook over low heat for 10 minutes or until the potatoes are heated through, stirring occasionally. , Add steak, garlic powder, salt and pepper. Sprinkle with cheese. Cover and cook on low 5 minutes longer or until heated through and cheese is melted; keep warm. Prepare eggs as desired. Divide hash among four plates and top with an egg.

4 large russet potatoes (each about 10 ounces)
Olive oil
Coarse kosher salt
1 10-ounce rib-eye steak, trimmed
2 tablespoons olive oil
2 bell peppers (preferably 1 red and 1 orange), cut into 1/4-inch-wide strips
1 large onion, halved, thinly sliced
2 red jalapeño chiles, halved, seeded, very thinly sliced crosswise
1 cup heavy whipping cream
2 teaspoons chopped fresh marjoram
4 teaspoons butter
Fresh marjoram sprigs (optional)

Steps:

  • Preheat oven to 400°F. Rub potatoes with olive oil; sprinkle with coarse salt. Place on baking sheet. Pierce with fork. Bake until tender, about 1 hour.
  • Sprinkle steak with salt and pepper. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add steak and sear until brown but still very rare, about 2 minutes per side. Transfer steak to plate. Reduce heat to medium. Add bell peppers, onion, and jalapeños to skillet. Sauté until peppers are soft and onion caramelizes, about 30 minutes.
  • Cut steak crosswise into 1/4-inch-thick slices. Halve slices lengthwise into strips. Add cream, chopped marjoram, and steak to pepper mixture. Simmer until steak is heated through and cream thickens slightly, about 1 minute. Season to taste with salt and pepper.
  • Cut cross in potatoes and press on sides to open slightly. Add salt, pepper, and 1 teaspoon butter to each and mash slightly with fork. Top each with steak mixture. Garnish with marjoram.

  • Place steak tips in a shallow bowl then whisk together the rest of the ingredients for the marinade. Pour marinade over steak tips, cover and place in the fridge to marinate for 8 or more hours.
  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper, toss sweet potatoes in melted ghee and sprinkle with salt and place evenly throughout the baking sheet. Bake for 25-30 minutes, tossing them half way through to help brown on all sides.
  • While the sweet potatoes bake, place a large cast iron skillet over medium heat. Add 1-2 tablespoons of ghee to the pan and once it is very hot, use tongs to place steak tips in the pan, making sure not to crowd the pan. This will let the beef brown and cook evenly, without steaming it. Cook steak on both sides for 2-3 minutes, depending on the size and thickness of the steak tips. Once cooked to your liking, place on a plate and set aside. Repeat until all beef is cooked through.
  • Once beef is done, add another 1-2 tablespoon of ghee to the pan (if needed) then add the bell peppers and onions. Toss and cook for about 10 minutes, until the onions are translucent and peppers are slightly browned. Then add garlic and cook for 2 more minutes. Lastly, add the sweet potatoes and the beef to the cast iron skillet with the veggies and cook for another 2 minutes to warm everything through and combined.
