Steakhouse Tomato Salad with Blue Cheese image

6 cups halved cherry tomatoes
1 cup blue cheese crumbles
2 Tablespoons olive oil
1 Tablespoon chopped fresh chives

Steps:

  • In a large bowl, toss together the tomatoes and blue cheese crumbles with the olive oil and a pinch of salt and pepper.

Blue Cheese and Tomato Salad image

Number Of Ingredients 7

1/4 cup garlic infused olive oil
3/4 cup (6 ounces) Greek yogurt (fat-free is good here)
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
4 ounces blue cheese, crumbled
Water
4 large heirloom tomatoes, sliced 1/2-inch thick (different colors are best here)

Steps:

  • In a large bowl, whisk together the oil, yogurt, Worcestershire and salt and pepper, to taste. Stir in the blue cheese; and add a little water if it's too thick, until desired consistency. Cover and refrigerate at least 1 hour before serving.
  • To serve arrange the tomatoes on serving plates and season with salt and pepper, to taste. Top with creamy dressing and enjoy!

Steak with Blistered Tomatoes and Blue Cheese image

A quick dip in a simple marinade spiked with garlic and cayenne makes for grilled skirt steak that's tender and flavorful. While the steak rests, grill cherry tomatoes and toss with blue cheese for a warm side salad.

Number Of Ingredients 8

2 pounds skirt steak
1/2 cup olive oil
2 tablespoons garlic, chopped
1/2 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon freshly cracked, black pepper
2 cup fresh cherry tomatoes, (or similar small tomatoes)
1/3 cup crumbled blue cheese

Steps:

  • In a large bowl whisk the olive oil, garlic, cayenne, salt, and pepper. Add the steak and toss it a few times to make sure it is coated in the marinade. Cover with a kitchen towel and let it marinate for about 20 minutes while you light the grill.
  • Bring a grill to medium flame and lightly oil the grate. Grill the steak for about 4 minutes per side, or until it reaches your desired doneness. Remove to a platter and cover with aluminum foil to rest. Place the tomatoes directly on the grill grate and use tongs to gently roll them back and forth for about 1 minute, or until the skins blacken and blister.
  • Carefully remove them to a bowl and sprinkle in the blue cheese. The cheese will start to melt a little and make a chunky sauce.
  • Divide the steak amongst four plates and serve each piece with a scoop of tomatoes and blue cheese on top.

  • Cook green beans, covered, in a small amount of boiling salted water for 5 minutes or until just crisp-tender. Drain; set aside.
  • For dressing: In a small mixing bowl combine balsamic vinegar, honey and 1/2 teaspoon cracked black pepper. Gradually whisk in the oil. Season to taste with salt.
  • Sprinkle steaks lightly with salt and ground pepper. Grill steaks on the rack of a covered charcoal or gas grill directly over medium heat until desired doneness, turning once halfway through grilling. Allow 8 to 12 minutes for medium-rare (145° F) and 10 to 15 minutes for medium (160° F). (You may want to remove the steaks just before they reach the desired temperature; their internal temperature will rise 5 to 10 degrees more as they rest.) Let steaks stand 5 minutes. Thinly slice steaks diagonally across the grain.
  • Meanwhile, in a large bowl, combine mixed greens, green beans and tomatoes. Add half of the dressing; toss to coat. To serve, divide greens among 6 large salad plates. Arrange sliced steak on top of greens. Sprinkle with blue cheese. Pass remaining dressing.
