Steamed Artichokes With Lemon Butter image

Large, plump artichokes are generally better for steaming than smaller ones. They may take longer to soften, but you'll end up with plenty of meaty petals to pull off and dip into the lemon butter. This recipe gives instructions for steaming the artichokes in a traditional pot, but a pressure cooker (either electric or stovetop) is a faster option if you have one. See the Note below for instructions.

2 large artichokes, or 4 medium artichokes
1 whole lemon, halved, plus 2 tablespoons lemon juice
1 garlic clove, finely grated or minced
Large pinch of kosher salt
4 tablespoons melted butter

Steps:

  • Pull off any brown or very tough outer leaves from one artichoke. Use a sharp knife to cut off the top 1 inch of artichoke, then rub with the cut side of the lemon. Use kitchen shears or scissors to cut the pointy tops off the remaining outer layer of leaves. Use a vegetable peeler or paring knife to peel the stem down to its tender pale-colored core; immediately rub the stem with a lemon half. Use your fingers to separate the center leaves to expose the fuzzy pale choke sitting on top of the heart. Use a grapefruit spoon (or other spoon) to scoop out the choke, and rub a little lemon juice over the exposed flesh. Repeat with the remaining artichokes.
  • Fill a medium pot with 2 inches of water, place a steamer basket inside, and bring water to a simmer. Place the artichokes bottoms down on the rack, cover with a tight-fitting lid, and simmer over low heat until you can easily pull off an artichoke leaf, 45 minutes to 1 1/2 hours. Remove from the steamer basket and transfer to a serving platter.
  • Meanwhile, in a small bowl, whisk together the lemon juice, garlic and salt. Slowly whisk in butter. To serve, have everyone pull off the leaves and dunk the meaty bottoms into the lemon butter, swirling to mix butter with each dip (the butter will separate as it sits).

8 trimmed and stemmed large globe artichokes
1 whole head of garlic
1 cup water
1 cup mayonnaise
1 tablespoon finely grated lemon zest
2 tablespoons fresh lemon juice
1/4 teaspoon white pepper
A pinch of sugar

Steps:

  • Pack artichokes upright in a large pot. Add garlic. Pour in water. Bring to a boil. Reduce heat. Simmer, covered, for 35 minutes. Transfer to a plate; let cool. Peel and mash 4 steamed garlic cloves (reserve remainder for lamb). Stir in mayonnaise, zest, lemon juice, pepper, sugar, and salt. Remove artichoke leaves (reserve hearts for stuffing). Refrigerate leaves and aioli separately until ready to serve.

⅓ cup mayonnaise (such as Hellman's®)
½ teaspoon dried parsley
½ teaspoon smoked paprika
7 cloves garlic, peeled, divided
4 large whole artichokes
1 cup water
2 sprigs fresh parsley
salt and ground black pepper to taste
1 bay leaf

Steps:

  • Juice 1 lemon half into a bowl. Roughly chop the skin; place in a medium bowl of cold water.
  • Place mayonnaise in a small bowl and add 1 tablespoon lemon juice, dried parsley, and paprika. Finely chop 2 garlic cloves and add to the bowl. Mix well and refrigerate aioli for at least 1 hour.
  • Cut 1 inch off the top of the artichokes and pinch off any dry leaves. Snip off the spikes with kitchen shears. Place artichokes in the lemon water for 30 minutes to prevent the chokes from oxidizing.
  • Chop the remaining lemon half and place in the bottom of a multi-functional pressure cooker (such as Instant Pot®) along with any remaining lemon juice. Add 1 cup water, 1 whole garlic clove, fresh parsley, salt, pepper, and bay leaf. Place 1 garlic clove in the center of each artichoke.
  • Place a steam rack inside the pot and place the artichokes stem-side up onto the rack. Close and lock the lid. Select Manual function; set timer for 11 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Serve artichokes with the aioli.

4 large artichokes (about 2 1/2 pounds)
½ cup mayonnaise
1 ½ tablespoons chopped fresh herbs, such as chives and/or parsley

Steps:

  • Cut off the top inch of leaves from the artichokes. Remove the outer layer of small, tough leaves from the stem end. Snip all remaining spiky tips from the outer leaves. Cut off and discard the stems.
  • Bring 2 inches of water to a boil in a large pot fitted with a steamer basket. Add the artichokes. Cover and steam until tender, adding more hot water as necessary, 30 to 35 minutes.
  • Whisk mayonnaise, herbs, lemon juice, mustard, garlic, salt and pepper in a small bowl. Serve with the artichokes.

My Instant Pot artichokes with dipping sauce are the perfect appetizer or side dish! With homemade lemon garlic aioli, these steamed artichokes will win over any crowd!

2 medium to large size artichokes
3/4 cup mayonnaise ()
1 clove garlic (grated or very finely minced)
zest and juice of 1 lemon (save lemon halves for the poaching liquid)
pinch of cayenne pepper
salt and pepper to taste
2 cups water
1 cup chicken or veggie stock
1/4 cup white wine
2 lemon halves left over from the aioli

Steps:

  • In a small mixing bowl, make the lemon garlic aioli by combining all ingredients and stirring to combine. Will keep in an airtight container in the refrigerator for 1 week.
  • Prep the artichokes by cutting off the top 1" of the artichoke, bottom 1/4" of the stem, then snipping off the pointy part of each leaf to get rid of the thorns.
  • In your dutch oven (or any large pot with a lid), heat up all ingredients of the poaching liquid over medium high heat. Add in the artichokes, stem side down so the top of the artichokes face up. Cover with a lid, and simmer the artichokes over medium heat for 45-50 minutes. After the artichokes are fully steamed, remove them with tongs, turn them cut side down on a dish towel or paper towels to drain off excess liquid. Allow to cool for 3-5 minutes.
  • In your Instant Pot, heat up all ingredients with the poaching liquid on the saute function. Add in the artichokes, stem side down so the top of the artichokes faces up. Turn off saute mode. Cover with the Instant Pot lid, and cook on high pressure for 10 minutes for a small artichoke, 15 minutes for medium artichokes, and 25 minutes for large artichokes. After the artichokes are fully cooked, release the pressure manually until all the steam is released. Remove the artichokes from the Instant Pot with tongs and turn them cut side down on a dishtowel or paper towels to drain off excess liquid. Allow cooling for 3-5 minutes.
  • Serve immediately while warm or later while cooled with the lemon garlic aioli.

Summer is the perfect time to grill artichokes! Add this sunny lemon dill aioli for a perfect side dish, or add crusty french bread and make it a meal.

2 large Artichokes, (trimmed and cut in half stem to tip)
1/2 cup Olive oil
2 tbsp Garlic, (crushed)
2 tsp Black pepper
1/2 cup Mayonnaise
3 tbsp Lemon juice
1 1/2 tsp Dried Dill, (or 2 tbsp Fresh Dill )

Steps:

  • To steam the artichokes, start a large pot, filled about 2 inches full of salted water, to boil. Heat BBQ to medium heat
  • Trim artichokes by cutting off the sharp tips off of the leaves, and trim the stem. Cut the artichokes in half stem to tip, and clean out the fuzzy artichoke center.
  • Steam, covered, in lightly salted water for about 30 minutes, cut side down, in a steamer basket.
  • Remove the fuzzy choke center with a spoon
  • Mix olive oil, garlic, and pepper together in a small bowl. Remove artichokes from the pot and drain. Coat all over with olive oil mixture. Grill for about cut side down about 4 to 5 minutes or until lightly browned. Turn and cook an additional 3 to 5 minutes. Do not over cook. If the artichokes are done you will be able to easily pierce the stem.
  • Combine mayonnaise, lemon juice, and dill in a small serving bowl and mix well. Add more to taste, if desired. Set aside until ready to serve.Can be made up to 3 days in advance and refrigerated.
  • Remove artichokes from the grill and place on a plate or shallow serving dish, together with the lemon dill aioli and serve. Can be served hot or at room temperature. Cut in quarters for appetizers.

Artichokes are trimmed and steamed ahead of time and then grilled to smoky tender perfection and served with scrumptious creamy lemon dipping sauce. This is a fantastic summer appetizer recipe that everyone loves!

3-4 large globe artichokes
2 lemons, cut in half crosswise
Olive oil for brushing
Kosher salt and freshly ground black pepper
1/3 cup mayonnaise (I like Hellmans best)
1/3 cup low fat greek yogurt
1 tablespoon plus 1 teaspoon fresh lemon juice
1 teaspoon finely minced garlic
1/4 teaspoon kosher salt
2 teaspoons of slivered basil or mint (optional)

Steps:

  • In a small bowl whisk all of the aioli ingredients except herbs. Store in the fridge, covered for up to 24 hours. Sprinkle freshly-cut herbs on top right before serving.
  • Fill a large (8-quarts or more) pot with water, 2/3 of the way up, and bring to a boil.
  • Trim one artichoke at a time, making sure to rub all of the freshly cut parts with a halved lemon as you go, to prevent discoloration. First cut off the very tip of the stem. Next, carefully slice off or shave (with a vegetable peeler) the tough outer skin of the stem. Using your scissors and starting at the bottom of the artichoke, snip off the thorny tip of each leaf (about 1/2 inch) until you get to the top of the artichoke, where the leaves are too crowded to separate.
  • Lay the artichoke on its side and slice it in half, starting from the stem. Don't forget to keep wiping the cut parts with lemon. Lay each half cut-side down and slice off 3/4 of an inch from the top, to remove the last bunch of thorny tips. Lemon, lemon.
  • Carefully drop the artichoke halves into the boiling water. When it returns to a boil, cover the pot and cook the artichokes for 20 minutes. Don't worry if they aren't all completely submerged. Those parts will cook in the steam. Using tongs, gently transfer the artichoke halves, cut side down, to a bowl (letting the water drip off of them) and let them cool for 15-20 minutes. When they're cool enough to handle, use a teaspoon to carefully scoop out the chokes (the hairy part near the heart). They artichokes are now ready for grilling or you can refrigerate them, covered with plastic wrap, for up to 48 hours before grilling them.
  • Heat the grill to medium-high. (If you chill the artichokes overnight, allow them to sit at room temperature for 1/2 hour before proceeding.) Brush artichokes generously on both sides with olive oil and season with salt and pepper, to taste. Grill artichokes for about 5 minutes per side, outside first, until the cut side has grill marks and is nicely browned in spots.
  • Serve the artichokes warm or at room temperature. I like to set the artichoke halves out on a big platter and let everyone help themselves. Make sure each person has a small plate, a fork and knife to eat the heart, and a small bowl of aioli for dipping. I usually put out one or two large communal bowls for the discarded leaves.

  • Fill a large bowl two-thirds full of water. Halve one of the lemons and squeeze all the juice into the water; toss in lemon rinds too. Halve another lemon and set on cutting board.
  • With a vegetable brush, gently brush artichoke leaves and stem in an upward motion under cold running water (watch out for thorns). Next, use a large, sharp knife to slice 1-inch from the top of artichoke. Immediately squeeze lemon juice over the fresh cut. Next use kitchen scissors to trim thorny tips of artichokes leaves. Immerse prepped artichoke in lemon water. Repeat process until all artichokes have been prepped.
  • Fill a large stock pot with 2-inches of water, add a steaming basket, cover, and bring to a boil. When water's boiling, add artichokes so that the stems are pointing up. Recover pot. Steam artichokes 20 - 30 minutes, or until leaves peel off easily and the base of the stem is easily pierced with a fork. (Depending on size, cook time can vary – keep a close eye out toward the end.)
  • Remove from pot and serve right away with a small bowl of roasted garlic aioli (recipe below) and remaining lemon cut into wedges.
