Top Asked Questions

What's in my steamed clams recipe?
My steamed clams recipe is simple, but loaded with Mediterranean flavors, thanks to a bright white wine broth with onions, garlic, bell peppers, and a couple of spices (including a bit of smoked paprika )! Let's first cover a few questions you may have about preparing and cooking clams at home. Which kind of clams to use?
How do you soak clams in salt water?
Add salt to only 2 of the bowls (⅓ cup of kosher salt to 1 gallon of water), leaving the third bowl of water unsalted. Place the clams in the first bowl of salted water and let them soak for about 20 minutes.
How to cook clams in a wok?
Place the wine in a large, lidded pan that will accommodate all of the clams (a wok with a lid works well). Bring to a boil and reduce by half. Add the clams, cover and cook over high heat, shaking the pan from time to time, for 2 to 3 minutes, until the clams open. Remove from the heat. Discard any clams that have not opened.
How do you cook clams with wine?
A drizzle of olive oil or squeeze of lemon juice for serving (optional) Rinse the clams in several changes of water and scrub with a small brush, such as a toothbrush. Discard any that are open or that have cracked shells. Place the wine in a large, lidded pan that will accommodate all of the clams (a wok with a lid works well).
