Steps:
- Add 2 tablespoons of light soy sauce, 1 tablespoon of salt, and 2 tablespoons of starch to the mashed meat and mix well
- Cut soft tofu into small pieces and spread them out in a bowl
- Beat the eggs and filter, then add 1:1 water and mix well
- Pour the prepared egg liquid into a bowl without the tofu, cover with plastic wrap, and pierce the holes with a toothpick
- Steamed egg liquid over high heat for 8-10 minutes
- Stir-fry the marinated mashed meat, spread it on the egg custard, and drizzle some light soy sauce and chopped green onion, ready to eat

Steps:
- 1. Cut up the tofu into chunks and put into a dish suitable for steaming.
- 2. Mix the beaten egg and seasoning ingredients with the tofu chunks.
- 3. Remove the egg white from the salted egg and leave the egg yolk. Chop this egg yolk into pieces and spread over the top of the tofu mixture.
- 4. Make a slit down the length of the red chilli. Slice the chilli in a tangential fashion after removing the stalk and seeds. Spread chilli over the top of the tofu mixture.
- 5. Steam for 10 minutes.
- 6. Scatter chopped spring onion over the steamed tofu.

- In a medium bowl, whisk eggs gently while slowly pouring in the chicken stock, sake, and soy sauce. Divide the mushroom and chicken evenly between two small tea cups. Pour the egg mixture into each cup until filled.
- Bring about 1 inch of water to a boil in a steamer or saucepan. Reduce heat to a simmer, and place cups into the steamer. Cover, and steam for 12 minutes, or until egg is firm but soft and silky like tofu. Garnish each cup with a sprig of parsley, and serve.
