THYME SALMON WITH SAGE PASTA



Thyme Salmon with Sage Pasta image

This is a family favorite! It's also a great recipe for entertaining as well.

1 ½ pounds skinned salmon fillet, cut into 4-inch pieces
2 tablespoons extra virgin olive oil
4 cloves garlic, crushed
salt to taste
1 teaspoon dried thyme leaves
1 (12 ounce) package egg noodles
2 tablespoons salted butter
½ cup chopped fresh sage
2 cloves crushed garlic
1 tablespoon extra virgin olive oil
2 cups frozen peas, thawed
1 lime, juiced
1 ½ teaspoons salt
1 lime, juiced

Steps:

  • Place the salmon pieces into a mixing bowl. Drizzle with 2 tablespoons of extra virgin olive oil, then toss with 4 cloves of crushed garlic. Refrigerate at least 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Line a baking sheet with aluminum foil. Place the salmon onto the foil, and season with salt and thyme. Fold the foil over the salmon to form a sealed pouch. Bake in the preheated oven until the salmon is no longer translucent in the center, 15 to 20 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink, then return to the cooking pot.
  • Melt the butter in a small saucepan over medium heat. Cook until the butter has browned lightly. Stir in the sage and garlic until the sage has wilted. Stir in 1 tablespoon of olive oil ,the frozen peas, the juice of 1 lime, and 1 1/2 teaspoons of salt. Stir into the pasta, and place into a serving bowl. Remove the salmon from the foil, and place onto the pasta. Squeeze another lime over top to serve.

3 tablespoons olive oil, divided, or as needed
16 jumbo pasta shells
1 pound fresh salmon
1 tablespoon minced onion
1 tablespoon minced garlic
3 tablespoons chopped fresh dill
1 pinch dried parsley
½ cup white wine
½ (8 ounce) package cream cheese, softened
salt and ground black pepper to taste
2 cups half-and-half
½ cup white wine
2 tablespoons cream cheese
2 tablespoons chopped fresh dill
1 tablespoon salted butter
1 tablespoon minced garlic
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a large baking dish lightly with 1 tablespoon olive oil.
  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes.
  • Meanwhile, heat 2 tablespoons oil in a well-seasoned frying pan over medium-high heat. Cook salmon with onion, garlic, dill, and parsley in the hot oil until it easily flakes with a fork, flipping once, about 10 minutes total. Add white wine and cream cheese. Fold into the fish mixture until everything is well coated. Season with salt and pepper.
  • Drain pasta shells. Stuff shells with mixture and place into the prepared baking dish. Cover with foil.
  • Bake in the preheated oven until bubbly and heated through, about 20 minutes.
  • While the shells are cooking, mix half-and-half, wine, cream cheese, dill, butter, garlic, salt, and pepper together in a saucepan and cook the sauce over medium heat until butter and cream cheese have melted, 5 to 7 minutes.
  • Remove shells from the oven and top with cream sauce. Serve.

Steps:

  • Prepare pasta following package instructions.
  • Preheat large saute pan on medium-high 2-3 minutes. Place oil in pan. Season salmon with salt; cook 1-2 minutes on each side or until browned.
  • Add garlic, tomatoes, broccoli, and broth; cook and stir 3-4 minutes or until salmon separates easily with a fork. Cut salmon into small bite-size pieces.
  • Add pasta, lemon juice and zest, feta, dill, and red pepper flakes; toss to combine. Serve.

Creamy Pasta with Salmon image

There was a lot of kitchen improv involved in the making of this recipe! It works as a seafood dish or a pasta dish. It's served with a dilly sour cream sauce!

1 (8 ounce) package spaghetti
2 medium (blank)s lemon, juiced
salt and ground black pepper to taste
½ pound salmon fillet
1 tablespoon olive oil
1 (8 ounce) package fresh green beans, trimmed and halved
1 large shallot, minced
¼ cup sour cream
1 bunch chopped fresh dill
1 cup garden cress, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While pasta cooks, pour enough water into a frying pan to cover salmon; add dill. Strain in lemon juice. Mix and season with salt and pepper. Add salmon to the pan and poach over medium-high heat, flipping as necessary, until it flakes easily with a fork, about 10 minutes. Remove the skin when you flip it the first time.
  • At the same time, heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until the shallots start to brown and the green beans soften, 8 to 10 minutes.
  • Once the salmon is poached, use tongs to set it aside in a shallow bowl, but don't throw the poaching mixture away. Take about 1/4 cup of the poaching mixture and add it to a saucepan. Add sour cream and chopped dill and mix over medium heat until combined. Remove from heat and mix into pasta.
  • Place pasta on serving plates, along with some chunks of the salmon, plus some of the sauteed mixture. Try to get an even mix if possible. Sprinkle with garden cress. Serve immediately!

1 stalk celery
1 medium carrot
1 clove garlic
2 small chilies
2 salmon fillets
1/2 teaspoon rosemary
8 ounces tofu (about 4x3x1 inch)
100 g raw mange-tout (cut in big pieces)
pasta (spaghetti, twists etc. this is a "sticking" sauce so you don't want shells)

Steps:

  • No fat in a CREAMY sauce!
  • Woooo Hooooo!
  • De-seed and almost de-rib chillis, then finely dice with celery, carrot and garlic.
  • Gently saute in a teaspoon of good olive oil for three minutes.
  • Add the rosemary and de-boned/diced salmon and cook for a further two minutes.
  • While this is all going on, pop the tofu into a liquidiser with about 1/2 a cup of milk.
  • Whizz briefly and add more milk until you have a thick cream.
  • Add this to the pan over a low heat and cook gently until heated through.
  • Adjust seasoning and stir in the mange tout, then add straight away to the cooked and drained pasta.
  • Tastes lovely and fresh!
  • (My lady found it had a touch too much heat, so you may want to de-rib the chillis totally) The mange tout were a good addition and added a nice fresh taste and also texture.
