For the cake
175 g (6oz) butter, diced, plus extra to grease
150g (5oz) dark muscovado sugar
3 level tbsp black treacle
150 ml (5fl oz) semi-skimmed milk
2 balls of stem ginger, grated
225 g (8oz) plain flour, sifted
1 level tbsp ground ginger
11⁄2 level tsp ground cinnamon
11⁄2 level tsp bicarbonate of soda
2 medium eggs, beaten
For the icing
150 g (5oz) golden icing sugar
2tbsp ginger syrup from the jar
1 ball of stem ginger, roughly chopped

Steps:

  • Preheat the oven to 200°C (180°C fan oven) mark 6. Grease a 20.5x 20.5cm (8x8in) cake tin and line with greaseproof paper.
  • Put the butter, sugar, treacle, milk and the grated ginger in a large pan and heat gently until melted, stirring to mix well.
  • Add the flour, spices and bicarbonate of soda, then add the beaten eggs. Quickly mix together, then spoon into the prepared tin. Bake for 30min. Remove from the tin and cool, still in the paper, on a wire rack.
  • For the icing, sift the icing sugar into a bowl, add the syrup and 1tbsp cold water, then mix. When the cake has cooled, pour the icing over, then scatter with the ginger.
  • To freeze. Before icing, wrap well in clingfilm and label. Freeze. To serve. Thaw at cool room temperature. Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix flour, sugar, 1/2 cup nuts and baking soda. Add eggs, pineapple and 2 teaspoons vanilla . Beat until smooth and pour into 9x13 inch baking pan.
  • Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes. Spread icing on hot cake.
  • For the icing: In a large bowl, cream butter or margarine, cream cheese, 1 teaspoon vanilla and confectioners sugar until light and fluffy. Fold in 1/2 cup nuts. Spread on hot cake.

This is a cross between a sticky toffee pudding and a ginger cake. Serve warm with ice cream or cream as a dessert

250g stoned dates , finely chopped
300ml milk
100g butter , plus extra for the tin
140g ginger preserve (you'll find this with the jams)
140g dark muscovado sugar
3 large ripe pears (we used Conference)
175g self-raising flour
50g pecan nuts, reserve 10 and chop the rest
1 tsp bicarbonate of soda
2 tsp ground ginger
½ tsp mixed spice
2 eggs , beaten
85g light muscovado sugar
150ml brandy

Steps:

  • Put the chopped dates in a pan with the milk, butter, ginger preserve and dark muscovado. Heat gently until the butter has melted and the mixture starts to bubble round the edges of the pan. Stir well and set aside for 1 hr to cool.
  • Heat oven to 180C/160C fan/gas 4. Line the base of a buttered 23cm springform tin with baking parchment. Peel and chop the pears into large chunks. Mix the flour, chopped pecans and bicarb with the spices, then stir into the cooled date mixture with the eggs. Pour into the tin and scatter over the pears. Roughly break the reserved pecans and drop on top. Bake for 40 mins, then cover the top loosely with foil and return to the oven for 25-30 mins more until a skewer inserted into the centre comes out with just sticky crumbs - the cake may still look a little wet around the pears.
  • While the cake is baking, make the brandy syrup. Tip the light muscovado sugar into a pan with 50ml water and dissolve over a low heat until syrupy. Stir in the brandy and set aside. When the cake is ready, spoon over half the syrup, then leave the cake to cool before serving with extra syrup on the side.
  • To freeze, cool the cake in its tin, then wrap well and freeze for up to 3 months. Defrost and warm through in a low oven. The syrup can be frozen separately, warmed, then drizzled over as before.

Steps:

  • Heat oven to 400°F. Lightly spray 8-inch square pan with cooking spray.
  • In 1-quart saucepan, stir together 1/4 cup honey, 1/4 cup molasses, the brown sugar, butter and gingerroot. Cook and stir over medium heat until sugar is melted. Remove from heat; cool 5 minutes.
  • Meanwhile, in medium bowl, mix flour, baking soda, ground ginger, cinnamon, allspice and salt. In small bowl, beat buttermilk and eggs. Add egg mixture to honey mixture; stir with whisk. Pour over flour mixture; stir until well combined. Pour batter into pan.
  • Bake 25 minutes. Poke cake every inch with skewer. In small bowl, mix 1 tablespoon honey, 1 tablespoon molasses and the water; brush over hot cake. Cool completely in pan on cooling rack. Sprinkle with powdered sugar.

200g plain flour
175g light muscovado sugar
100g butter , room temperature, cut in pieces
finely grated zest 1 orange
1 tsp ground ginger
100g pack halved pecan or walnuts
85g stem ginger in syrup (from a jar), roughly chopped
1 tsp bicarbonate of soda
284ml carton soured cream
1 egg , beaten
bought Cointreau cream
fresh orange segments
ginger syrup from the jar

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter a 23cm-round ring tin. Combine the flour, muscovado sugar and butter in a bowl, then rub in with your fingers until crumbly and completely blended. Stir in the grated orange zest and ground ginger.
  • Scatter half the nuts and half the chopped stem ginger into the bottom of the ring tin. Break up the rest of the nuts into small pieces and stir into the crumb mix with the rest of the stem ginger. Measure out 100g/4oz of the crumb mix and spoon it into the tin over the nuts. Stir the bicarbonate of soda into the rest of the crumb mixture. Mix the soured cream and egg together, then stir it into the remaining crumb mixture. The mixture will be very soft. Pour this batter over the crumbs (it will come quite high in the tin).
  • Bake for 35-40 mins or until risen and a skewer inserted in the centre comes out clean. Let the cake sit for 10 mins, then take it out of the tin and leave to cool on a wire rack.
  • Cool the cake completely, then wrap it in foil and freeze for up to 2 months.
  • When ready to use, thaw for about 2 hrs at room temperature. Serve in slim slices with dollops of Cointreau cream, orange segments and a drizzle of syrup from the jar of stem ginger.

This recipe takes no time at all to prepare, and is simply delicious. It's perfect for a well deserved tea/coffee break, but equally good served slightly warm with some good vanilla ice cream. My two young children love this cake-my 3 year old son calls it Mummy's special ginger cake! It keeps very well and freezes well too!

500 g plain flour
2 tablespoons ground ginger
1/2 teaspoon ground black pepper
1 tablespoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon salt
250 g muscovado sugar
175 g butter
175 g golden syrup
175 g black treacle
300 ml milk
1 egg

Steps:

  • Set oven to 160°C Grease a 11 x 9" tin with baking parchment.
  • Sift the flour, ginger, baking powder, bicarbonate of soda and salt into a bowl. Place the sugar, butter, syrup and treacle in a pan and heat until the butter has just melted. Don't allow it to get too hot.
  • Stir in the milk then beat in the egg. Pour in the dry ingredients and beat together.
  • Pour immediately into baking tin and bake for 1-1/4 hours until firm to the touch. Allow to cool for 10 minutes, then turn out of tin and allow to cool completely.
  • NB You can also add a few finely chopped pieces of stem ginger to the mix if you wish.
