This beef and bok choy stir-fry is an Asian feast enhanced by soy sauce, rice vinegar, grated ginger, and brown sugar.

1 cup long-grain white rice
1 tablespoon olive oil
1 pound flank steak, thinly sliced
kosher salt and black pepper
4 heads baby bok choy, quartered
0.25 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
1 tablespoon brown sugar

Steps:

  • Cook the rice according to the package directions.
  • Meanwhile, heat the oil in a large skillet over high heat. Season the steak with ¼ teaspoon each salt and pepper.
  • Cook the steak, turning often, until cooked through, 3 to 4 minutes. Transfer to a plate.
  • Wipe out the skillet. Add the bok choy and ¼ cup water and simmer, covered, until tender, 2 to 3 minutes.
  • Meanwhile, in a bowl, mix the soy sauce, vinegar, ginger, and sugar. Add to the bok choy in the skillet and bring to a boil.
  • Add the steak and any accumulated juices and cook, tossing, until heated through, 1 to 2 minutes. Serve over the rice.

1 pound flank steak (or your favorite cut of beef, thinly sliced)
⅓ cup cornstarch
2 tablespoons low sodium soy sauce
3 tablespoons vegetable oil (divided)
1 teaspoon ginger (minced)
2 cloves garlic (finely minced)
4 green onions (sliced, whites & greens separated)
4 cups bok choy (whites & greens separated )
½ cup low sodium beef broth (or water)
¼ cup hoisin sauce
2 tablespoons low sodium soy sauce
2 teaspoons cornstarch
1 teaspoon Sriracha (or to taste)
1 teaspoon sesame oil

Steps:

  • Combine beef, cornstarch, and soy sauce in a bowl. Set aside to marinate 20 minutes while you prepare the other ingredients.
  • Combine all sauce ingredients in a small bowl.
  • Heat 1 tablespoon oil to medium-high heat in a large skillet. Add half of the beef and cook just until browned, do not overcook. Remove from the skillet and set aside. Repeat with remaining beef, adding more oil if needed.
  • Reduce heat to medium and add 1 tablespoon oil to the same pan. Add ginger, garlic, and the whites of the onions. Cook just until fragrant (about 1 minute). Add the whites of the bok choy and cook for 2-3 minutes.
  • Stir in the sauce, bok choy greens, and beef. Cook over medium until hot and bubbly.
  • Remove from heat and garnish with green onion tops and serve over rice.

1/4 cup oyster sauce (GF if needed)
2 tbsp low sodium soy sauce (GF if needed)
1 tbsp ginger, minced
1 tbsp garlic, minced

4 tsp. vegetable oil, divided
1.33 lbs. lean sirloin steak, cut into strips
1 lb bok choy, chopped
1 cup mushrooms
4 green onions, chopped

Steps:

  • Add the chicken broth, oyster sauce, soy sauce, garlic, ginger, and cornstarch to a small bowl. Stir to combine.
  • Add half the oil to a pan or wok over high heat. Add the beef and cook for 1-2 minutes until browned but not fully cooked. Remove and set aside.

Steps:

  • Trim fat from beef; cut beef with grain into 2-inch strips.

No need for a wok here. You can use a flat-bottomed skillet or sauté pan instead, the bigger the better. You want as much surface area as possible to get as hot as possible, so preheat the pan for at least five minutes before adding the oil. There should be a forbidding amount of smoke when the ingredients hit the pan (open the windows and turn on the fan before you start). That will give you the deepest sear. Stir-fries are infinitely variable, and you can change up this recipe by using beef or pork, and other green vegetables (asparagus, broccoli, mustard greens, cabbage, spinach or thinly sliced green beans) substitute nicely for the bok choy. Steps:

  • Cut beef crosswise (across the grain) into 1/4-inch-thick slices, then cut slices into 1/2-inch-wide strips.

  • Add beef to hot oil with tongs (discard marinade) and cook, stirring carefully, until slices separate, about 1 minute. Transfer beef with tongs to a colander and drain.
  • Stir-fry beef and bok choy:
  • Reserve 3 tablespoons oil from skillet and discard remainder. Heat reserved oil in skillet over moderately high heat until hot but not smoking, then stir-fry garlic and ginger until fragrant, about 30 seconds. Add beef, soy mixture, and bok choy and stir-fry until sauce is simmering and mixture is just heated through, about 1 minute. Serve immediately.

STIR-FRIED BOK CHOY OR STURDY GREENS



Stir-Fried Bok Choy or Sturdy Greens image

This recipe works equally well with bok choy or sturdy greens, both of which have tough ribs and leaves that have a cruciferous flavor. I steam them for a minute before stir-frying so the leaves won't be too tough.

12 to 16 ounces bok choy or sturdy greens, like collards, or packaged Southern greens mix
1/4 cup chicken broth, vegetable broth or water
1 tablespoon Shao Hsing rice wine or dry sherry
2 teaspoons soy sauce
1/4 teaspoon cornstarch
1 tablespoon peanut or canola oil
3 garlic cloves, smashed with the flat side of a chef's knife or minced
1 slice ginger, smashed with the flat side of a chef's knife or minced
Salt to taste
1/4 teaspoon sugar
1 to 2 teaspoons sesame seeds, to taste

Steps:

  • If using bok choy, trim off the bottoms and separate into stalks. Rinse if necessary and drain on paper towels. Cut crosswise into 2-inch pieces. If using collard greens, stem, discard stems and chop the leaves coarsely. Bring an inch of water to a boil in the bottom of a steamer, and place the bok choy or greens in the steamer basket. Steam 1 minute, remove from the heat and rinse with cold water. Squeeze out excess water and drain on a kitchen towel.
  • Combine the broth or water, rice wine or sherry, soy sauce and cornstarch in a small bowl and place within arm's reach of your pan. Have the remaining ingredients measured out and near the pan.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan, then add the garlic and ginger and stir-fry for 10 seconds, until fragrant. Add the bok choy or greens, sprinkle with salt and the sugar, and stir-fry for about 30 seconds. Stir the cornstarch mixture and swirl into the wok, then stir-fry 1 minute, or until the greens are just tender. Sprinkle on the sesame seeds. Remove from the heat and serve.
