SIMPLE BROCCOLI STIR-FRY
Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

- Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
- Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
- Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

PICKLED RED ONIONS
These pickled red onions are easy to make and a great topping for tacos, salads, etc. Keep refrigerated.

Steps:
- Bring water to a boil in a saucepan.
- Stuff onion slices into a pint-size Mason jar. Pour some of the boiling water over the onions. Let rest for 10 seconds. Pour out water through a mesh strainer, keeping onions in the jar. Repeat twice more to cook onions slightly.
- Measure vinegar into a bowl. Stir in salt and sugar until dissolved. Add peppercorns. Pour vinegar solution over onions. Seal and shake well.
- Refrigerate at least 1 hour before serving so that the flavor develops.

- In a saucepan, bring 3 cups water to a boil. Stir in rice. Reduce heat, cover, and simmer for 20 minutes.
- Heat oil in a large skillet over medium heat. Saute broccoli until tender crisp, and add scallions. Remove from skillet. Scramble eggs; return broccoli mixture to pan. Stir in cooked rice, soy sauce, salt and pepper.

- In a small saucepan, bring onions, vinegar, and salt to a boil, covered, and remove pan from heat. Cool onion mixture, uncovered, and drain.
- Bring a kettle of salted water to a boil for broccoli. Cut broccoli into 2 1/2-inch flowerets and cut remaining stems into 1/4-inch-thick slices. Blanch flowerets 3 minutes and drain well in a colander.
- In a large skillet heat 2 tablespoons oil over moderately high heat until hot but not smoking and sauté half of flowerets and stems with salt to taste, stirring occasionally, until crisp-tender, 3 to 5 minutes, transferring to a bowl. Sauté remaining flowerets and stems in remaining 2 tablespoons oil in same manner. Sprinkle broccoli with pickled red onions.

BROCCOLI 'N RED PEPPERS STIR FRIED
The key to a good stir fry is to have the veggies piping hot but still crisp. Cook this to your liking in terms of crispness. If you like a thicker sauce add 2 tsp of cornstarch to the stock. Great with Chicken. If you wish this suitable for vegetarrian diets use veggie stock in place of the chicken stock I have made this again in 2009. I modified the recipe by omitting the sesame seeds, used no oil just a light spray of "no oil." Not caring for a lot of sauce cut out the stock and used 4 tbsp of vermouth with 3 tbsp light soy - It worked.

- In a wok or large skillet Heat oils over high heat.
- Stir fry the garlic and ginger for 30 seconds, remove garlic& ginger and discard.
- Add onions stir fry 1 minute.
- Add mushrooms, stir fry 1 minute.
- Add broccoli, stir fry 1 minute.
- Add red Pepper and stir fry for 1 minute.
- Add stock& soy sauce, bring to a simmer for about 1 minute or until the veggies are cooked to your liking.
- Sprinkle with Sesame seeds and serve.
PICKLED RED ONIONS
These sweet, sour, and slightly spicy onion slices add zest and color to just about any salad or sandwich. They are also a great accompaniment to a roasted meat, paté, or terrine, and they're delicious piled atop quesadillas!

- Bring the sugar, salt, and vinegar to a boil in a small saucepan. Meanwhile, place the jalapeño and onion in a glass or stainless steel bowl. Pour the hot vinegar mixture over the vegetables. Stir to mix, then let them sit until cool. Pour all the liquid back into the saucepan and bring it to a boil. Reduce it by about half, until almost syrupy. Let the liquid cool completely, then stir it into the onions and jalapeños. Place the mixture in a jar or container and store in the refrigerator. These onions keep indefinitely.
