I tried a stir fried beef recipe that turned out bland & boring. So I improvised, and this is the result. My husband requests it nearly every week and loves taking the leftovers for lunch. Note: rice is not included in prep/cook time

2 cups brown rice
1 lb sirloin steak
2 tablespoons olive oil
1/2 garlic clove, minced
1/2 teaspoon red wine vinegar
1/4 teaspoon kosher salt
1/4 teaspoon fresh coarse ground black pepper
1 onion, sliced (I prefer cippollini)
1 tomatoes, diced

Steps:

  • Cook rice fully before starting meat.
  • Fill large saucepan with 4 c water & 2 c brown rice. Bring to boil. Reduce heat, cover, & simmer 50 minutes. Set aside.
  • Trim fat from steak and cut into small, thin pieces.
  • In a large skillet, heat oil and sauté garlic until garlic is golden.
  • Add steak, vinegar, salt, and pepper. Cook for 6 minutes, stirring beef until brown.
  • Add onion and tomato. Cook until onion is transparent. Stir in rice until well mixed.
  • Note: My husband hates onions, but loves the flavor they do give this dish. To appease him, I cook with the onions & remove them prior to adding the rice.

This Beef Vegetable Stir-Fry is a quick and easy dish to make anytime. Made with tender beef, crunchy vegetables, and a perfectly flavored sauce--it makes for an ideal weeknight dish.

12 ounces flank steak ((sliced ⅛-inch thick into 2- to 3-inch pieces))
1 teaspoon water
¼ teaspoon baking soda
1 teaspoon cornstarch
2 teaspoons vegetable oil
4 cups bok choy ((250g, cut into 1x3-inch pieces, washed and drained))
¾ cup Bunashimeji or Beech mushrooms, washed and drained ((50g))
¾ cup sugar snap peas or snow peas ((65g, washed and drained))
½ cup warm water or beef stock
¼ teaspoon sesame oil
2 teaspoons light soy sauce
1 teaspoon dark soy sauce ((or mushroom flavored dark soy sauce if you have it))
1 tablespoon oyster sauce
¼ teaspoon sugar
3 tablespoons canola oil ((divided))
½ teaspoon minced ginger
2 cloves garlic ((finely minced))
1 tablespoon Shaoxing wine
2 teaspoons cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Mix together the marinade ingredients with the beef until well-coated, and set aside for 30 minutes or overnight. Next, prepare your veggies and set aside.
  • In a small bowl, mix the water (or beef stock, if using), sesame oil, soy sauces, oyster sauce and sugar, and set aside.
  • Heat your wok on high heat and spread 2 tablespoons of oil around the perimeter to coat. Once the wok and oil start to smoke, add the beef, and use your metal wok spatula to spread the beef in one even layer. Sear for 30 seconds. Turn the beef to sear the uncooked sides for another 30 seconds. At this point, the beef should be about 80% done. Turn off the heat and transfer the beef back to the marinade bowl.
  • Next, with the heat back on high, add the ginger and 1 tablespoon of oil to the wok. Cook for 10 seconds, and add the garlic. After 5 seconds, add the mushrooms and stir fry for another 15 seconds, giving them a good sear. Add the Shaoxing wine.
  • Next, add the snap peas and the bok choy, and stir fry on the highest heat for another 20 seconds until the bok choy begins to wilt. Stir in the beef and your prepared sauce mixture. Gather everything in the center of the wok.
  • When everything comes back up to a simmer, and the sides of the wok begin to super-heat, Stir fry everything in a circular motion so the beef and vegetables hit the sides of the wok--this gets you that wok hay flavor!
  • Pour the cornstarch slurry in the center of the wok while stirring. The sauce will immediately thicken, so work fast to stir everything together for another 20 seconds to evenly coat the beef and vegetables in the sauce. There should not be any standing sauce - everything should be clinging to the beef and vegetable stir fry. This is the classic restaurant-style preparation, but you can add more stock and salt or soy sauce to taste if you like a saucier stir-fry.
  • Turn off the heat and transfer your beef vegetable stir-fry to a serving plate; you can also dish it out individually on a bed of rice for a great one-plate meal. Enjoy immediately. Though you probably don't need us to tell you that.

Stir-Fried Brown Rice with Sliced Sirloin Steak and Peas image

If you're using cauliflower rice, omit the 1 cup water and after you add the riced cauliflower, cook for about 3-5 minutes until hot. Adapted from Food and Wine.

Number Of Ingredients 11

1/2 cup sweet brown rice (or 1 1/2 cups riced cauliflower)
3 tablespoons coconut oil
8 ounces thinly sliced sirloin steak
1 large sweet onion, thinly sliced
4 cups swiss chard, thinly sliced
1 cup thawed frozen peas
2 garlic cloves, minced
1 tablespoon minced fresh ginger
3 tablespoons fermented soy sauce (or gluten free soy sauce)
1/4 cup chopped cilantro
Lime wedges, for serving

Steps:

  • Heat 1 tablespoon coconut oil in a medium sauce pan over medium-high heat. Stir in rice and cook until rice just begins to brown, about 2-3 minutes. Add 1 cup water and bring to a boil. Cover pot and simmer over low heat until all of the water is absorbed and the rice is tender, about 20 minutes.
  • Heat 1 tablespoon coconut oil in a large skillet over medium-high heat. Add the sirloin and cook, turning once, until browned on both sides. Transfer to a large plate.
  • Add remaining 1 tablespoon coconut oil in now empty pan and add onions. Cook, stirring occasionally, until the onions begin to caramelize, about 6 minutes. Stir in the chard and peas and cook until chard is wilted, about 2 minutes. Make a well in the center of the pan and add the garlic and ginger. Cook garlic and ginger until fragrant, about 45 seconds and then stir into the rest of the vegetables. Add the beef, rice and soy sauce. Stir until incorporated. Season with sea salt, if needed. Garnish with cilantro and serve with lime wedges.

1 cup boiling water
2 tablespoons cornstarch

1/4 teaspoon pepper
2 tablespoons canola oil, divided
1 large green pepper, julienned
1 cup julienned carrots or sliced celery
5 green onions, cut into 1-inch pieces
Hot cooked rice

Steps:

  • Dissolve bouillon in water. Combine the cornstarch and soy sauce until smooth; add to bouillon. Set aside. Toss beef with garlic, ginger and pepper. In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until meat is no longer pink; remove and keep warm. , Heat remaining 1 tablespoon oil; stir-fry vegetables until crisp-tender. Stir soy sauce mixture and add to the skillet; bring to a boil. Cook and stir for 2 minutes. Return meat to pan and heat through. Serve with rice.

2 teaspoons olive oil
1 beef top sirloin steak (3/4 pound), cut into thin strips
4 tablespoons reduced-sodium soy sauce, divided
1 package (12 ounces) broccoli coleslaw mix
1 cup frozen peas
2 tablespoons grated fresh gingerroot
3 garlic cloves, minced
2 cups cooked brown rice
4 green onions, sliced

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir eggs over medium heat until no liquid egg remains, breaking up eggs into small pieces. Remove from pan; wipe skillet clean if necessary., In same pan, heat oil over medium-high heat. Add beef; stir-fry, 1-2 minutes or until no longer pink.
