1 tablespoon (15ml) soy sauce, divided
5 teaspoons (25ml) Asian fish sauce, divided
1 teaspoon (4g) white sugar
4 to 6 fresh red or green Thai bird chilies, divided
6 medium cloves garlic, divided
1 1/2 tablespoons (20g) palm sugar (see note)
1 small shallot, thinly sliced
4 makrut lime leaves, very thinly sliced into hairs (central vein discarded), plus more for garnish (see note)
2 tablespoons (30ml) vegetable or canola oil, divided
2 cups packed Thai purple basil (about 2 ounces; 55g)(see note)
Dried Thai chili flakes or red pepper flakes to taste (optional)
1/4 cup fried shallots (see note)
Kosher salt
Cooked rice, for serving

Steps:

  • Combine beef, 1 teaspoon soy sauce, 2 teaspoons fish sauce, and white sugar in a bowl. Toss to combine and set in refrigerator to marinate for at least 15 minutes and up to overnight.

Spicy Beef Stir-Fry With Basil image

This simple, delicious recipe for a spicy beef stir-fry comes from Leela Punyaratabandhu, a cookbook author who adapted it from Soei, a family-run restaurant in Bangkok. Using thinly sliced beef tenderloin means the dish is ready in just minutes, and you can adjust the heat to taste by reducing or increasing the number of fresh bird's-eye chiles. Made with fresh holy-basil leaves, the classic Thai dish is known as phat ka-phrao. If you can't find holy basil at a Thai market, Indian market or health food store, you could swap in more widely available Thai sweet basil (pictured), and make a dish of phat bai hora-pha. The dish could be one part of a larger meal or stand alone with some jasmine rice and a fried egg.

1 tablespoon Thai thin soy sauce, or light soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce
1/4 cup chicken stock
1 packed teaspoon grated palm sugar, or light brown sugar
8 large cloves garlic
4 to 8 fresh bird's-eye chiles
1 1/2 tablespoons lard, or neutral oil
1 1/2 pounds beef tenderloin, sliced against the grain into 2-inch-long, 1/4-inch thick strips
3 to 4 makrut lime leaves, lightly bruised and torn into pieces (optional)
1 1/2 cups loosely packed fresh holy-basil leaves or sweet Thai basil leaves, sweet Thai basil leaves or other fragrant basil

Steps:

  • If you're making rice with this dish, get it started. In a small bowl, stir together the soy sauce, oyster sauce, fish sauce, chicken stock and sugar. In a mortar or small food processor, grind together the garlic and chiles into a coarse paste.
  • Heat the lard in a wok or large skillet over medium-high heat. Add the garlic-chile paste, and stir until fragrant, about 1 minute. Before the garlic starts to brown, add the beef, and stir-fry to separate the pieces and coat with fat. Add the liquid mixture, making sure not to leave any behind in the bowl, and cook until the beef is only barely pink, about 2 minutes. Add the lime leaves, and continue to cook until no pink remains on the beef, about 1 minute. Add the basil leaves, and stir until they are just starting to wilt, then remove from heat and serve with rice. (You can fish out the large pieces of makrut leaves before serving or put them aside as you eat.)

3 fresh red chile peppers, minced
3 cloves garlic, minced
1 (1 pound) beef sirloin or top round, cut into thin strips
2 tablespoons peanut oil, divided
2 cups chopped asparagus
¼ cup beef stock
1 cup basil leaves

Steps:

  • Make a marinade by combining the fish sauce, chile peppers, and garlic in a shallow dish.
  • Lay beef into the marinade, turning to coat.
  • Marinate beef in refrigerator 8 hours to overnight.
  • Remove the beef from the marinade and shake off excess liquid. Discard the remaining marinade.
  • Heat 1 tablespoon peanut oil in a large skillet or wok over medium-high heat. Cook and stir beef in hot oil until hot but slightly pink in the center, 3 to 5 minutes; remove from oil with a slotted spoon to a plate lined with paper towel.
  • Heat remaining tablespoon peanut oil in the skillet; cook and stir asparagus in hot oil until tender, about 5 minutes.
  • Pour beef stock into the pan and bring to a simmer.
  • Return the beef to the pan. Add the basil and continue cooking until hot, about 1 minute more.

4 teaspoons cornstarch, divided
5 teaspoons vegetable oil, divided
1/4 teaspoon salt
Dash white pepper
1 small white onion
2 medium tomatoes
12 leaves fresh basil
1 teaspoon minced garlic
2 tablespoons hoisin sauce

Steps:

  • Cut the beef lengthwise into thin 2-inch long strips. Toss the beef with 2 teaspoons cornstarch, 1 teaspoon vegetable oil, the salt, and pepper. Cover and refrigerate for 30 minutes.
  • Cut the onion into 1-inch squares. Cut the tomatoes into 8 wedges. Wash the basil and pat dry. In a small bowl, combine the remaining 2 teaspoons cornstarch and 1 tablespoon water and set aside.
  • Heat a nonstick skillet over high heat. Add the remaining 4 teaspoons vegetable oil, the beef, garlic, and onion and stir-fry for 1 minute, or until the meat browns. Continue stirring for about 2 minutes over high heat. Stir in the hoisin sauce and cornstarch mixture. As the mixture begins to thicken, after about 1 minute, add the tomatoes and basil, stir for 1 minute. Divide among plates and serve.

4 tablespoons oil
2 cups basil, stems removed
3 tablespoons minced garlic
4 tablespoons minced shallots
2 -3 tablespoons minced red chilies
500 g beef sirloin or 500 g flank steaks, thinly sliced
200 g green beans
5 cm ginger, peeled and cut into thin strips
1 tablespoon fish sauce
1 1/2 tablespoons oyster sauce
1 tablespoon sugar
95 g roasted unsalted cashews (optional)

Steps:

  • Heat the oil in or skillet over medium heat until hot and stir-fry 1/2 of the basil leaves for 2 to 3 minutes until crispy. Remove and drain on paper towels. Set aside.
  • In the same pan, heat the leftover oil over medium heat and stir-fry the garlic, shallots and chillies for 2 to 3 minutes. Add the beef and stir-fry for 2 to 3 minutes until just cooked. Add the green beans and ginger, and season with the fish sauce, oyster sauce and sugar. Continue to stir-fry for another 2 to 3 minutes until the green beans are tender and cooked. Stir in the remaining basil leaves and remove from the heat.
  • Transfer to a serving platter, garnish with cashew nuts and the reserved crispy fried basil leaves, and serve hot with steamed rice.

• 10 to 15 Thai bird's eye chiles, finely sliced
• 2 garlic cloves, finely sliced (optional but desirable)
• 1 tablespoon fresh lime juice (optional)
• Good pinch of chopped coriander
Minced Beef with Chiles and Holy Basil
• 4 garlic cloves, peeled
• 4 to 10 Thai bird's eye chiles
• Good pinch of salt
• 3 to 4 tablespoons vegetable oil
• 2 e's
• 6 ounces coarsely minced or ground beef (preferably minced
by hand)
• 2 tablespoons fish sauce, to taste
• Large pinch of white sugar
• ¼ cup beef stock or water
• 2 large handfuls of holy basil leaves (substitute Thai basil
if holy basil is unavailable)
• Steamed jasmine rice, for serving
• Chiles in fish sauce, for serving

Steps:

  • 1. Make the chiles in fish sauce: In a small bowl, combine the fish sauce, chiles and garlic and set aside until ready to use.* Just before serving, stir in the lime juice and the coriander. 2. Make the beef: Coarsely chop the garlic and the chiles and mix them with the salt. 3. Heat a well-seasoned wok over high heat, then turn down the heat and add 2 tablespoons of the oil. Crack in one of the eggs and fry gently, pushing the egg around the wok with a spatula to prevent it from sticking, until it has cooked to your preference. Spoon some of the hot oil over the egg to ensure that the yolk cooks evenly. Using a spatula, carefully lift the egg out of the wok and place it on a warmed plate. Repeat with the second egg. Keep the eggs warm while you cook the beef. 4. Add the rest of the oil to the wok. When the oil is hot, fry the garlic and chiles for a moment, but don't let them color. Add the beef and continue to stir-fry for about a minute until just cooked through. Season to taste with the fish sauce and sugar but be careful not to add too much fish sauce or the dish will become too salty. 5. Add the stock or water to the wok and simmer for a moment. Don't let the mixture boil for too long or the meat will toughen and too much liquid will evaporate (there should be enough liquid to form a sauce). 6. Stir in the holy basil; as soon as it wilts, remove the wok from the heat. The beef should taste rich, hot, salty and spicy from the basil. 7. Divide the beef on two plates and top each with a fried egg. Serve with plenty of steamed jasmine rice and the the chiles in fish sauce on the side.
