Stir fries come together very quickly and the key to a successful stir fry? Mise en place! Making sure all your ingredients are measured and prepped before you start cooking saves you so much time in this yummy dish.

8 ounces thin rice noodles
3 tablespoons vegetable oil
8 thin-cut boneless pork chops (1/4 inch thick; about 1 1/4 pounds total)
Kosher salt and freshly ground pepper
1/4 cup soy sauce
2 tablespoons sambal oelek, plus more for serving
1 2-inch piece fresh ginger, peeled and sliced into matchsticks
4 scallions, sliced (dark green parts separated)
4 ounces shiitake mushrooms, sliced
2 small carrots, thinly sliced on an angle
4 ounces snap peas, halved lengthwise

Steps:

  • Cook the noodles as the label directs. Drain and set aside. Meanwhile, coat a baking sheet with 1 tablespoon vegetable oil. Generously season the pork chops with salt and pepper and arrange in an even layer on the pan. Whisk together the soy sauce and sambal oelek in a small bowl.
  • Preheat the broiler. Heat the remaining 2 tablespoons vegetable oil, the ginger and the white and light green scallion parts in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring, until nearly tender, about 5 minutes. Add the carrots and snap peas; cook until crisp-tender, about 4 minutes. Add the noodles and sambal sauce and cook, tossing, until the noodles are warmed through and well coated, about 2 minutes.
  • Broil the pork chops until charred, 3 to 4 minutes per side. Divide the noodle mixture among bowls. Top with the pork chops, scallion greens and more sambal oelek.

6 ounces dried soba noodles
3 tablespoons creamy peanut butter
3 tablespoons warm water
2 tablespoons sesame oil, divided
2 tablespoons hoisin sauce
2 teaspoons Sriracha sauce, or more to taste
2 teaspoons soy sauce
1 medium lime, zested and juiced
1 teaspoon crushed garlic
1 teaspoon minced fresh ginger root
1 small red bell pepper, thinly sliced
3 tablespoons teriyaki sauce
1 teaspoon rice vinegar
½ teaspoon red pepper flakes
6 ounces pork tenderloin
1 tablespoon chopped peanuts
1 tablespoon sliced green onion
1 teaspoon sesame seeds

Steps:

  • Bring a large pot of water to a boil, add soba noodles, and cook according to package directions, about 4 minutes. Drain noodles, rinse under cold water, and set aside to cool.
  • Whisk peanut butter, water, 1 tablespoon sesame oil, hoisin sauce, Sriracha, soy sauce, lime zest and juice, garlic, and ginger together in a small bowl for the dressing. Pour dressing over noodles. Add red bell pepper and toss to combine. Refrigerate until well chilled, at least 1 hour.
  • Stir teriyaki sauce, rice vinegar, and red pepper flakes together in a bowl until well combined. Cut pork tenderloin into very thin slices, about 1/8 inch thick, then cut each slice in half. Add pork to marinade, cover bowl, and chill in the refrigerator for 30 minutes or longer.
  • Remove pork from refrigerator. Heat a skillet over medium-high heat, and heat the remaining 1 tablespoon sesame oil until hot. Add pork, separating pieces to cover the skillet's bottom. Cook the pork, occasionally stirring, until cooked through, 2 to 3 minutes. Your time will depend on how thinly the pork is cut, but try not to overcook to retain tenderness.
  • Remove noodles from the refrigerator and give them a good stir. Divide the noodles among 4 plates or bowls. Evenly distribute the pork on top of the noodles and garnish with peanuts, green onion and sesame seeds before serving.

1 lb boneless beef sirloin, partially frozen (or beef tenderloin)
1/4 cup . toasted sesame oil
1/4 cup soy sauce
1/4 cup peanut oil
1 tablespoon peanut oil
2 tablespoons peeled grated fresh ginger
2 large garlic cloves, minced
4 green onions, including 3 inches of green tops, thinly sliced on the diagonal
1 head napa cabbage, cored and shredded (about 2 lb.)
2 cups chicken broth or 2 cups beef broth
1 tablespoon cornstarch
1/2 lb snow peas, trimmed and halved crosswise
salt
3/4 lb dried soba noodles
1/4 cup sesame seeds, lightly toasted

Steps:

  • Using a sharp knife, cut the beef across the grain into thin slices, then cut the slices into matchsticks.
  • In a bowl, whisk together the sesame oil, soy sauce, 1/4 cup peanut oil, and ginger.
  • Add the beef and stir to coat evenly.
  • Cover and refrigerate, stirring occasionally, for at least 1 hour or up to 3 hours.
  • Bring a large pot of water to a rapid boil.
  • Add 2 tbsp salt and the noodles to the boiling water, stir well and cook, stirring occasionally, until just tender, 5-7 minutes; drain the noodles.
  • Meanwhile, in a wok or large fry pan, heat 1 tbsp peanut oil over med-high heat.
  • Add the garlic and green onions and stir fry until lightly colored, about 1 minute.
  • Increase heat to high, add the beef and its marinade, and stir fry until lightly browned, about 8 minutes.
  • Add the cabbage and 1 1/2 cups of the broth and toss to combine.
  • Cover, decrease heat to med-high and cook until the cabbage wilts, about 4 minutes.
  • In a small bowl, whisk the cornstarch into the remaining 1/2 cup broth.
  • Add the cornstarch mixture to the pan, and stir and toss to incorporate.
  • Add the snow peas, stir and toss to combine, cover, and cook until just tender, about 2 minutes.
  • Take care not to overcook; the snow peas and cabbage should remain crisp.
  • Add the noodles to the pan and stir and toss until well combined.
  • Garnish with the toasted sesame seeds, and serve.

3 1/2 tablespoons soy sauce
1 1/2 teaspoons cornstarch
1 1/2 teaspoons plus 1 tablespoon sesame oil
1/2 boneless center cut pork chops or 1/2 pork sirloin roast, cut across the grain into thin strips
fresh ground black pepper
2 tablespoons rice wine vinegar
1 1/2 teaspoons sugar
1 1/2 lbs sugar snap peas, string removed and cut in half on the diagonal
6 ounces soba noodles
1 bunch green onions with top, thinly sliced
1 tablespoon peanut oil
1 tablespoon fresh ginger, peeled and minced
1/4 teaspoon red pepper flakes

Steps:

  • 1. In a bowl, combine 1.5 tablespoons of the soy sauce and the cornstarch and stir to dissolve the cornstarch. Mix 1.5 teaspoons of the sesame oil. Add the pork and a generous amount of pepper and stir to coat. Let marinate for 15-30 minutes.
  • 2. Meanwhile, in a small bowl combine the remaining 2 tablespoons of soy sauce, remaining 1 tablespoons of sesame oil, the vinegar, and sugar and stir to dissolve the sugar. Set aside.
  • Bring a large pot 3/4 full of water to a boil. Add the sugar snap peas and cook until just tender crips, about 4 minutes. Using a slotted spoon, transfer peas to a bowl. Add the noodles to the boiling water and cook until just tender, stirring occasionally, about 4 minutes. Drain the noodles, and then return to the pot. Add 1/2 of the sauce to the noodles and stir to coat. Mix in the sugar snaps and all but 2 tablespoons of green onions. Cover to keep warm.
  • In a large nonstick frying pan over medium-high heat, warm the peanut oil. Add the ginger and pepper flakes and stir until fragrant, about 5 seconds. Add the pork and separate the pieces. Stir constantly just until the pork is cooked through, 2-3 minutes. Add the remaining sauce and stir until the sauce thickens, about 30 seconds. Immediately add the pork and sauce to the noodles, and then toss to coat. Divide the noodles between 2 warm plates. Sprinkle with the remaining green onions and serve right away.
