SEAFOOD PAN FRIED NOODLES
Our restaurant-style Seafood Pan Fried Noodles recipe is a classic Cantonese version made with crispy Hong Kong noodles and the perfect amount of sauce.

- For this dish, we used scallops, shrimp, and prepared frozen squid that was already cleaned and cut. You can also prepare fresh squid. Do this by cutting the cleaned squid open lengthwise and lightly scoring it with a diamond pattern. See the technique we used in our Stir Fried Squid with Pickled Vegetables.
- Prepare the sauce by mixing together your hot chicken stock with the sesame oil, salt, sugar, oyster sauce, white pepper. Set aside. Separately, mix the cornstarch and water into a slurry and set aside.
- Cut the ends of your choy sum, wash it them well in cold water, and set aside. These will be left whole as they are served in Chinese restaurants.
- Bring a large pot or wok filled with water to a boil. If using fresh noodles, blanch them for 30-60 seconds. If using dried noodles, follow the package directions for cooking times, but make sure they remain al dente. In both cases, place the noodles directly into a cold water bath to stop the cooking and drain thoroughly in a colander.
- Next, heat your wok or nonstick frying pan until hot. Add a tablespoon of oil and swirl it around so it coats your cooking surface. Spread out the noodles in a thin, even layer, and fry for 3 to 5 minutes or until crispy.
- Use a spatula to loosen the noodles. Take a peek under the noodles to ensure they're golden brown. Use a spatula to flip the noodles over. If you can't get it in one shot, flip it over in sections.
- Add another tablespoon of vegetable oil around the sides of the pan, and crisp the other side to get the noodles evenly browned. Transfer the noodles to a serving plate.
- Bring 6 cups of water to a boil in your wok (you can also use the water you boiled the noodles in), and add a tablespoon of oil to the water. Blanch the choy sum for 30 seconds. Remove with a Chinese spider or strainer shaking off the excess water and place around the noodles.
- Next, blanch the shrimp, scallops, and squid by slowly stirring them in the water until just opaque (about 20 seconds). Transfer to a plate. The seafood should be just 70% cooked, since they will be cooked again in the stir-fry step of the dish.
- Start with a clean, dry wok over medium low heat. Spread 1 tablespoon of oil around the perimeter of your wok. Add the ginger and cook for 10 to 20 seconds.
- Stir in the garlic, scallions, carrots and mushrooms, turning the heat up to the highest setting. Next, add the shrimp, scallops, and squid. Stir-fry for 10 seconds, and add the wine.
- Next, add the sauce mixture, and bring to a simmer. Stir the cornstarch slurry to ensure it's combined, and add ⅔ of it while stirring the contents of the wok. Cook for 15 seconds. The sauce should be thick enough to coat a spoon. Add the rest of the cornstarch slurry until the sauce is your preferred consistency.
- Pour the entire mixture over the noodles and serve immediately. Serve with hot chili oil on the side!

- In a small bowl, combine the cornstarch, broth and soy sauce until smooth; set aside. Cut off and discard root end of bok choy, leaving stalks with leaves. Cut leaves from stalks. Slice leaves; set aside. Slice stalks., In a large skillet or wok, stir-fry shrimp in 1 tablespoon oil until shrimp turn pink. Remove and keep warm., Stir-fry the ginger, garlic and pepper flakes in remaining oil for 1 minute. Add the onion, mushrooms and bok choy stalks; stir-fry for 4 minutes. Add bok choy leaves; stir-fry 2-4 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add shrimp; heat through. Sprinkle with chow mein noodles. Serve with rice if desired.

SHRIMP AND VEGETABLE STIR-FRIED NOODLES

- Heat the olive oil in a large saute pan over high heat until shimmering. Add the snow peas, garlic, ginger, carrots and scallions and saute. Add the shrimp and cook until pink, 2 to 3 minutes. Deglaze the pan with the oyster sauce and rice wine vinegar. Add the noodles and toss until heated through and all ingredients are fully coated. Top with the peanuts and serve.
NONYA HOKKIEN STIR-FRIED NOODLES
The Singaporean cookbook author Sharon Wee, who wrote "Growing Up in a Nonya Kitchen," customarily makes these slick noodles tossed in a savory sauce for Lunar New Year's Eve to mark the beginning of the two week-long celebrations. Her mother taught her how to throw proper Peranakan feasts, which include a unique blend of Malay, European and Chinese influences. They spent weeks pickling vegetables in spiced vinegar, making pork liver meatballs and braising duck in a tamarind gravy. This simple stir-fry is anchored by juicy pork belly and shrimp, and topped with pale yellow egg strips, bright red chiles and vibrant mustard greens. It is best enjoyed with a dollop of sambal belacan, which gives it a hit of heat, and served with braised cabbage and chicken curry.

- Bring a large saucepan of water to a boil. Add the noodles and cook just until tender, 1½ minutes. Drain well, rinse under water and drain again.
- Whisk the eggs in a bowl and add a pinch of salt. Brush ½ teaspoon oil on a nonstick frying pan and set over medium-low heat. When the oil is hot, pour in the eggs and tilt the pan so that the eggs form a thin and even film. Cook until firmly set, 4 to 5 minutes. With a spatula, ease the omelette off the pan and flip onto a cutting board. When the omelette is cool enough to handle, gently roll it and slice into thin strips, cutting longer strips in half.
- Heat a large wok or very large skillet over medium-high and add the remaining ¼ cup oil. Add half of the sliced shallots and continuously stir until they are crispy and light golden brown, about 5 minutes. Turn off the heat and transfer the fried shallots using a slotted spoon to a paper-towel-lined plate, and save for garnish.
- Heat the wok with the oil over medium and add the fermented soybean paste, garlic, and remaining shallots. Stir until the mixture is fragrant, about 40 seconds. Add the pork, shrimp and 1 cup chicken broth. Raise the heat to high and bring to a boil.
- Add the mustard greens, lo mein noodles and bean sprouts. Toss well to combine, and cook until the pork and shrimp are cooked through, about 3 minutes. There should barely be any broth left, but if you prefer a soupier consistency, add up to 1 cup more stock. Season with 1 teaspoon salt and the white pepper, then taste and season with more if you'd like. Transfer to a serving platter.
- To serve, garnish with the egg strips, fried shallots, chiles and cilantro. The noodles are best enjoyed with a side of sambal belacan.
SEAFOOD STIR-FRY

- Cook pasta according to package directions. - Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in noodles and return to a boil. Cook until the pasta floats to the top, 1 to 2 minutes; drain.
- Heat oil in a large skillet over medium-high heat; cook and stir onion and garlic for about 1 minute. Add broccoli and bell pepper; cook and stir until just tender, about 3 minutes. - Fill a medium pot with water and bring to boil. Add noodles to boiling water and cook for 3 minutes (or according to package instruction for fried noodles). Drain water from noodles. Add some vegetable oil to the noodles and mix it around if it will be sitting for a while prior to cooking. This will prevent the noodles from clumping and sticking together.
- Heat up wok under high heat. Add ~1/2 tbsp vegetable oil. Once wok is heated up, add defrosted shrimp (make sure it is pat dry) and cook for a few minutes until shrimp is done. Remove shrimp from wok.
