4 cloves garlic, minced, divided
2 teaspoons fresh ginger, grated
1 tablespoon honey
1 teaspoon sriracha
¼ cup lime juice
¼ cup reduced sodium soy sauce
1 block extra firm tofu
2 tablespoons sesame oil
1 cup sliced white onion
1 cup sliced carrot
1 cup sliced red bell pepper
½ cup edamame, frozen, thawed
3 cups soba noodle, cooked
1 tablespoon sesame seed
green onion, chopped, to serve

Steps:

  • In a medium bowl, mix together 2 cloves of garlic, the ginger, honey, Sriracha, lime juice, and soy sauce. Set aside.
  • Wrap the tofu in a dish towel, then place a plate on top. Let drain for 10-15 minutes, then remove the plate, unwrap the tofu, and slice into cubes.
  • In a wok or large frying pan, heat the sesame oil over medium heat. Add the tofu and pan fry for 5-7 minutes, stirring occasionally.
  • Add the remaining 2 cloves of minced garlic and the onion and stir until softened, about 1 minute.
  • Add the carrot, bell pepper, and edamame and cook, stirring occasionally, until tender, 2-3 minutes.
  • Add the soba noodles, reserved sauce, and sesame seeds. Cook for 1-2 minutes, stirring occasionally, until warmed through. Remove the pan from the heat.
  • Garnish with green onions, if desired.

1 package (14 ounces) regular tofu, firm or extra-firm, drained
1 1/2 tablespoons fish sauce
1 tablespoon fresh lime juice
1 tablespoon sugar
1 teaspoon Thai red curry paste
1/2 cup coconut milk
2 tablespoons peanut or canola oil
1 bunch Chinese broccoli, stems trimmed
1 small red bell pepper, seeds and ribs removed, thinly sliced lengthwise
Coarse salt
1/4 cup each whole basil, cilantro, and mint leaves
1/4 cup unsalted dry-roasted peanuts, coarsely chopped

Steps:

  • Cut tofu in half widthwise. Keep the pieces stacked and cut lengthwise into thirds (creates 6 rectangles), and then cut the tofu horizontally (slicing parallel to work surface) into quarters to create 24 cubes, each about 1 inch. Press the tofu. Meanwhile, in a small bowl, whisk together fish sauce, lime juice, sugar, curry paste, and coconut milk until blended; set aside.
  • In a large, nonstick skillet, heat 1 tablespoon oil over high heat. Add the tofu and sear without moving until the cubes have browned, 2 to 3 minutes. Carefully turn the tofu and sear other side until browned, about 2 minutes more. Turn and sear a third side, again for about 2 minutes. Remove tofu to a plate and set aside.
  • Add the remaining tablespoon of oil to the skillet and heat. Add the broccoli, red pepper, 3 tablespoons of water, and salt to taste; cook, stirring frequently, until vegetables are almost tender, 2 to 3 minutes. Return tofu to the skillet and stir in the sauce. Cook to heat and blend flavors, about 1 minute. Serve immediately, garnishing each portion with basil, cilantro, mint, and peanuts.

  • In a large skillet, heat oil over medium-high heat. Stir in onions and cook for one minute. Stir in garlic and ginger, and cook for 30 seconds. Stir in tofu, and cook until golden brown
  • Stir in carrots, bell pepper and baby corn, cooking for 2 minutes. Stir in bok choy, mushrooms, bean sprouts, bamboo shoots, and crushed red pepper, and heat through. Remove from heat.
  • In a small saucepan, combine water, rice wine vinegar, honey, and soy sauce, and bring to a simmer. Cook for two minutes, then stir in cornstarch and water mixture. Simmer until sauce thickens. Pour sauce over vegetables and tofu. Garnish with scallions.

Steps:

  • Cook and drain fettuccine as directed on package.

1 (16 ounce) package firm tofu
4 cups broccoli florets
3 teaspoons toasted sesame oil (olive oil works also)
1 bunch scallion, trimmed and thinly sliced (about 8)
3 garlic cloves, minced
1 small jalapeno pepper, hlved, seeded, and finely chopped (optional)
3 1/2 teaspoons soy sauce
2 tablespoons sliced almonds, toasted lightly
2 cups brown rice

Steps:

  • Make brown rice according to the box's directions.
  • Place tofu on a plate, and top with cutting board. Place several cans of food on top to weigh it down. Let tofu rest while the water is sqeezed out. Cut tofu into small cubes.
  • While tofu drains, lightly steam broccoli until crisp-tender, about 5 minutes. Set aside.
  • Heat 2 tsp of oil in wok or large nonstirck skillet over high heat. When hot, add tofu and cook, stirring constantly, 5 minutes to brown. Transfer to shallow bowl.
  • Add the remaining 1 tsp of oil to pan, followed by scallions, garlic, pepper, and broccoli. Stir-fry 2 minutes over medium high heat. Stir in soy sauce, almonds, and tofu, and gently toss to combine. Serve each with 1/2 cup portion of brown rice.
