Choose any of the following ingredients to make a custom batch of fudge.

1 tablespoon whiskey
1 cup dried cherries, coarsely chopped
1/2 cup sweetened flaked coconut, lightly toasted
1 cup shelled pistachios, toasted and chopped
1 cup shelled macadamia nuts, toasted and chopped
1 cup walnut halves, toasted and chopped

Steps:

  • Follow instructions for chocolate or vanillafudge. If using whiskey, stir it in duringstep 4, and proceed with recipe. Ifusing solid ingredients, stir them in duringstep 5, when the mixture begins tothicken but is still shiny, after you havebeen stirring for about 3 minutes. Continueto stir until incorporated and mixtureloses its sheen and lightens in color,about 2 minutes more. Proceed with recipe.

1 cup butter
12 ounces semisweet chocolate chips
1 (7 ounce) jar marshmallow creme
1 cup chopped walnuts
1 teaspoon vanilla extract
1 ¼ cups evaporated milk
4 cups white sugar

Steps:

  • Line a 13x9 inch baking dish with foil and butter the foil.
  • In the top half of a double boiler combine the butter or margarine, evaporated milk and sugar. Cook on medium heat for 12 minutes or until it reaches a temperature of 236 degrees F (112 degrees C). Remove from heat and stir in the chocolate chips, vanilla and marshmallow creme. Stir until chocolate chips melt then mix in the chopped walnuts. Spread mixture into the prepared pan. Score into squares while still warm. Refrigerate until firm then cut along the scored lines.

2/3 cup heavy cream
1/4 cup butter
1/4 cup granulated sugar
6 ounces semisweet chocolate
2 tablespoons brandy
3 tablespoons superfine sugar
1 orange, rind of, finely grated
6 ounces white chocolate
2 tablespoons orange liqueur
1/4 cup light brown sugar
2 tablespoons coffee liqueur or 2 tablespoons dark rum
1 tablespoon coffee extract (both variations above still require 2/3 cup heavy cream and 1/4 cup butter)

Steps:

  • Heat the cream with the butter and sugar in the top of a double boiler or in a heatproof bowl over a saucepan of hot water. Stir until smooth, then cool.
  • Break the chocolate into the cream. Stir until it is melted and thoroughly combined.
  • Stir in the brandy a little at a time, then cool to room temperature.
  • For White Chocolate Orange sauce:.
  • Heat the cream aned butter with the sugar and orange rind in top of a double boiler, until dissolved,.
  • Follow the above recipe to the end, but use White chocolate and orange liqeuer.
  • For Coffee Chocolate Fudge:.
  • Follow above recipe using the light brown sugar and coffee liquer or rum, Stir in coffe extract at the end.
  • Serve sauces over cream filled profiteroles, or ice cream, or anything you choose.

Yield Makes about 2 pounds

Number Of Ingredients 6

1 tablespoon cold unsalted butter, plus more for pan
1 1/2 cups heavy cream
3 cups sugar
3 ounces best-quality unsweetened chocolate, finely chopped
1/4 cup light corn syrup
1/4 teaspoon salt

Steps:

  • Butter an 8-inch square baking pan; line with parchment paper, allowing a 1-inch overhang. Butter parchment paper, and set aside. Check the calibration of the candy thermometer. Put butter into a large bowl, and set over a wire rack; set aside. Put cream, sugar, chocolate, corn syrup, and salt into a medium heavy saucepan.
  • Cook over medium-low heat, stirring constantly, until sugar has dissolved and chocolate has melted, about 10 minutes. Raise heat to medium. Bring mixture to a boil, washing down sides of pan with a wet pastry brush to prevent sugar crystals from forming. Attach warm thermometer to pan; continue to cook, without stirring, until mixture registers 238 degrees (soft-ball stage), 10 to 15 minutes.
  • Immediately pour mixture into bowl with butter (do not scrape out the bottom of the pan). Attach thermometer to bowl. Let mixture cool, undisturbed, until it registers 110 degrees, about 1 1/2 hours.
  • Remove thermometer. Transfer bowl to a work surface. Using a wooden spoon, begin to gently stir mixture.
  • Continue to stir, gradually increasing speed until mixture thickens, lightens in color, and loses its sheen, 4 to 5 minutes.
  • Pour into prepared pan. Using a small offset spatula, quickly spread fudge to sides of pan, and smooth top. Let fudge cool in pan on a wire rack, about 1 hour. Cover with plastic, and refrigerate until completely set, about 8 hours. Run a sharp knife around nonparchment sides to loosen; lift fudge out. Cut into 64 one-inch pieces. Fudge can be refrigerated between layers of parchment in an airtight container up to 1 week; bring to room temperature before serving.

1 (300 ml) can sweetened condensed milk (not evaporated)
2 teaspoons vanilla
5 ounces white chocolate, coarsely chopped
3/4 cup dried cranberries

Steps:

  • In bowl over saucepan of hot (not boiling) water, melt bittersweet chocolate with condensed milk, stirring occasionally, for 5 minutes or until smooth. Stir in vanilla. Pour into parchment paper-or foil-lined 8-inch square metal cake pan. Refrigerate for about 1 hour or until firm.
  • CRANBERRY TOPPING: In bowl over saucepan of hot (not boiling) water, melt white chocolate; spread over bittersweet chocolate layer. Sprinkle with cranberries, pressing lightly. Refrigerate for about 3 hours or until firm. Remove from pan; peel off paper. With hot dry knife, cut into pieces. Makes 3 lb. about 48 pieces.
  • SNOW-BALL CHOCOLATE FUDGE: Omit Cranberry Topping. Stir in 2 cups miniature marshmallows.
  • CANDY-COVERED FUDGE: Omit cranberry Topping. Sprinkle 3/4 cup candy coated chocolate pieces onto hot fudge; press lightly.
