2 1/2 pounds medium new potatoes, (about 8), cut in half
2 cups baby-cut carrots
1 cup frozen small whole onions, thawed
1 corned beef brisket (3 to 3 1/2 pounds)
1/8 teaspoon pepper
1/2 cup water
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Mix potatoes, carrots and onions in 4- to 6-quart slow cooker.
  • Thoroughly rinse corned beef; discard seasoning packet. Place beef on vegetables; sprinkle with pepper. Mix 1/2 cup water and the Worcestershire sauce; pour over beef.
  • Cover and cook on low heat setting 8 to 9 hours or until beef and vegetables are tender.
  • Remove beef and vegetables from slow cooker; cover to keep warm. Pour juices from slow cooker into 1-quart saucepan; heat to boiling. Mix cornstarch and cold water until smooth; stir into juices. Cook, stirring constantly, until sauce has thickened. Serve sauce with beef and vegetables. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 pound) corned beef brisket with spice packet
6 ounces beer
½ head cabbage, coarsely chopped

Steps:

  • Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
  • Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.

½ pound baby carrots
½ pound small yellow potatoes (such as Dutch Yellow® Pee Wee potatoes)
1 sweet onion, cut into bite-size pieces
4 cups water
4 ¾ pounds corned beef brisket with spice packet
3 tablespoons onion powder
3 tablespoons garlic powder
1 bottle Irish stout beer (such as Guinness®)
1 medium head cabbage, quartered and leaves separated

Steps:

  • Spread baby carrots, potatoes, and onion into the bottom of a slow cooker crock. Pour water over the vegetables.
  • Season the lean side of the corned beef brisket with onion powder and garlic powder. Set seasoned brisket onto the vegetables with the fatty side facing upwards. Pour beer over the brisket. Sprinkle contents of the spice packet over the brisket.
  • Cook on Low for 10 hours.
  • Remove brisket to a cutting board. Stir cabbage into the liquid and vegetable mixture remaining in the slow cooker.
  • Cook cabbage on High until tender, 30 to 45 minutes.
  • Slice corned beef and serve with cabbage mixture.

2 -3 lbs corned beef brisket, package juices and spice packet included
2 medium onions, peeled and cut in 8ths
2 cups beef broth
1 (15 ounce) can young's double chocolate stout beer (or Guinness, if you prefer, but the non-bitter Young's is really nice)
1/2 large red onion, sliced thinly

Steps:

  • Peel and cut the medium onions (whatever type you prefer, white or yellow etc) into 8ths, and place them in the bottom of your crock pot.
  • Open up the packaged corned beef and pour all of the juices contained in the bag into the crock pot (the producer's directions recommend using the juices, as well).
  • Place the corned beef on top of the onions, then sprinkle with the spice packet.
  • Pour the beef broth over the corned beef, careful not to dislodge too much of the spice packet ingredients, then do the same with the can of stout.
  • Arrange the sliced red onion over the top of the beef.
  • Put the crock pot on low and cook for 4 hours, then turn the beef over and cook an additional 4 hours (or you can cook on high for 2, turn, and cook an additional 2 or until it is as tender as you'd like).
  • Slice and serve with Simmered Cabbage recipe #100417, carrots, and potatoes of your choice.
  • Note: although you can use Guiness in this instead of the Young's, I recommend trying to find the double chocolate stout because of the delicious, rich, non-bitter taste it imparts to the corned beef! If you'd still like to experience the richness of a bit of chocolate, take 1 1/2 teaspoons of unsweetened cocoa powder and mix it with a bit the beef broth until it's well mixed and smooth, then whisk it into the rest of the broth and proceed as the recipe describes. Wonderful!

1 (3 pound) corned beef brisket
1 large onion, thinly sliced
1 (32 ounce) package sauerkraut
¾ cup beef broth
3 tablespoons brown mustard

Steps:

  • Trim excess fat from corned beef and put in a large enough slow cooker that the brisket can lay almost flat along the bottom. Place onion on top of beef.
  • Drain sauerkraut and pile on top of onion. Mix broth and mustard together and pour over everything in the slow cooker.
  • Cook on Low until brisket is very tender, 7 to 9 hours. An instant-read thermometer inserted into the center should read 160 degrees F (71 degrees C).

1 (12 fluid ounce) can or bottle beer
4 cloves garlic, minced
1 (3 pound) corned beef brisket with spice packet

Steps:

  • Combine water, beer, and garlic in a multi-functional pressure cooker (such as Instant Pot®). Place trivet inside. Place brisket on the trivet and sprinkle spice packet on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 90 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer brisket to a baking sheet, cover with aluminum foil, and let rest for 15 minutes.
