EMERIL'S STRAWBERRIES ROMANOFF WITH CHOCOLATE SAUCE



Emeril's Strawberries Romanoff with Chocolate Sauce image

1 pint vanilla ice cream, softened
1 pint sour cream
3 tablespoons brandy
3 tablespoons orange liqueur
2 cups chopped chocolate
4 pints strawberries, hulled

Steps:

  • In a large bowl, combine the softened ice cream and sour cream and mix well. Add the brandy and orange liqueur and mix until well combined. Refrigerate until the ice cream has completely melted and the mixture is a sauce consistency, about 30 minutes.
  • Place the chocolate in a bowl set over a pot of barely simmering water. Make sure the bottom of the bowl does not touch the water. Stir the chocolate until melted and smooth.
  • Pour the ice cream mixture over the strawberries. Drizzle with chocolate and serve.

4 pints fresh strawberries, halved
1 cup water
5 cups sugar
Juice of one lemon

Steps:

  • In a 8 quart stock pot, add the fruit and water and simmer until the fruit is very soft. Add the sugar and lemon juice. Stir to dissolve and bring up to a boil. Maintain at a full rolling boil until the jell point is reached. (*Also a skin will form on the surface as it cools) Remove from the heat. Skim off any impurities and leave to cool for 10 minutes. Using a funnel, pour the fruit into hot sterilized jars. Fill the jars and wipe the rims.. Seal the jars, leaving 1-inch from the top for headroom. Label the jars and store in a cool, dark, and dry place. Spread the jam between biscuits and place on a platter.

1/2 cup super fine sugar
1/2 cup fresh lemon juice
1/2 cup water
1 cup stemmed and halved strawberries
1 cup unflavored sparkling water or soda water
Cracked ice
Fresh mint sprigs, garnish

Steps:

  • In a 2 cup measuring cup, combine the sugar, lemon juice, and water and stir to dissolve the sugar. In the bender, combine the strawberries and sweetened water. Puree on high speed until smooth. Add the sparkling water and pulse to incorporate. Taste and add more sugar if desired, and pulse to incorporate. Place cracked ice in 2 tall Collins glasses. Pour the strawberry crush over the ice, garnish with mint sprigs, and serve.

2 pints strawberries, washed and stemmed
1/4 cup sugar
1/4 cup orange liqueur, such as Grand Marnier or Cointreau
1 pint vanilla ice cream
1 cup heavy cream

Steps:

  • Slice the strawberries. In a large bowl, toss 3/4 of them with the sugar and orange liqueur. Refrigerate for at least 1 hour to macerate.
  • Put the ice cream in the refrigerator to soften.
  • Put the cream and half of the macerated strawberries in a cold mixing bowl. With an electric mixer, whip to soft peak, about 2 minutes. Fold in the softened ice cream.
  • Distribute the cream among 6 chilled bowls. Mix the plain sliced berries with the remaining macerated berries and place on top of the cream.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
2 cups whole milk
4 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
nonstick cooking spray (optional)
1 lb fresh strawberries, hulled and diced (about 3 cups) or 1 lb thawed frozen unsweetened strawberries (about 3 cups)
1 cup sugar
3 tablespoons fresh orange juice
1/2 teaspoon finely grated orange zest

Steps:

  • Preheat a waffle iron according to the manufacturer's instructions.
  • Into a medium bowl, sift the flour, baking powder, and salt.
  • In a separate bowl, beat together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter, and vanilla extract and whisk to combine. Add the flour mixture to the egg-milk mixture and whisk just until blended. Do not overmix.
  • In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute.
  • Using a rubber spatula, gently fold the egg whites into the waffle batter, being careful not to overmix.
  • Coat the waffle iron with nonstick cooking spray, if required, and pour enough batter in the iron to just cover the waffle grid.   • Fresh Strawberry Syrup: In a medium saucepan, combine all the ingredients and bring to a boil. Lower the heat and simmer until the strawberries are soft and the syrup is thickened and reduced by one-third to one-half in volume, 15 to 18 minutes.
  • Remove from the heat and let cool to room temperature before serving. (If thinner syrup is desired, strain the hot syrup through a fine mesh strainer into a clean container and let cool.).
