Simple but so good! My good friend Angel gave me this recipe. It makes an attractive dessert when mixture is served on top of strawberries in large individual glass stems.

3 ounces cream cheese, softened and beaten until smooth
1/2 cup brown sugar, packed
1 1/2 cups sour cream
2 tablespoons Grand Marnier
1 quart strawberry, washed and hulled

Steps:

  • Combine cream cheese, brown sugar, sour cream and Grand Marnier; mix well and chill.
  • Serve as a dip with strawberries or as a dessert.

STRAWBERRIES AND JALAPENOS

1 pound hulled and quartered strawberries
4 tablespoons granulated sugar
2 finely diced jalapenos, seeds and stems removed
1/2 tablespoon lemon zest plus 2 to 4 tablespoons lemon juice
Splash of orange liqueur, optional

Steps:

  • Toss strawberries in sugar and refrigerate, covered, for at least 30 minutes but preferably overnight.
  • Soak jalapenos in 1 cup water with 2 tablespoons lemon juice for 30 minutes (15 minutes if you want more bite); drain.
  • Add jalapenos and remaining 2 tablespoons lemon juice or the optional orange liqueur to the strawberries, toss and let stand 15 minutes.
  • Toss in lemon zest right before serving. Spoon over ice cream and serve.
  • Keep refrigerated in an airtight container (but allow to come closer to room temperature before serving).

Each kind of squash has its own distinct flavor. But because the butternut is all its name promises -- buttery and nutty sweet -- it is perfect for making soup. It is the sweetness of the squash combined with the spicy heat of the chile that makes this soup so unusual and delicious.

6 medium scallions, trimmed
6 whole sprigs thyme
1 medium butternut squash, (about 2 pounds), peeled, seeded, and cut into 1-inch cubes
3 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
1 small Scotch-bonnet chile
Salt and freshly ground black pepper

Steps:

  • Tie scallions and thyme together with a piece of kitchen twine. Place squash, stock, Scotch bonnet, and scallion bundle in a medium saucepan. Bring to a boil. Reduce to a simmer, and cook until squash is extremely tender, 15 to 20 minutes.
  • Remove scallion bundle and Scotch bonnet, and discard. Puree soup. For a very silky soup, pass through a sieve. Season with salt and pepper, and serve.

Dried Hibuscus Flowers, known as 'Jamaica' give the 'tart' component to this summer quencher, and the resulting drink is absolutely, and shockingly, gorgeous. The hibiscus has a very high acidity, which you have to balance with the sweet, fragrant strawberries. This one takes a bit more time to make, but it's worth it. Purchase the 'jamaica' flowers at your local Mexican specialty store - they last quite a long time if stored properly.

2 cups dried hibiscus flowers (jamaica)
4 cups water
2 lbs strawberries, washed, hulled, and sliced (keep the juice!!)
1 cup sugar or 3/4 cup agave nectar

Steps:

  • Combine the flowers with the water in a pan and bring up to a boil over medium high heat. Boil for 6 minutes, then remove from heat, cover, and allow to steep for 2 hours.
  • Clean the strawberries, slice them into a bowl, and cover with sugar, toss, and let stand on the counter for half an hour.
  • Puree the strawberries and the liquid they cast , then strain through a fine mesh sieve into a large pitcher or a sun-tea jar, then pour the hibiscus liquid in and stir well.
  • Taste and adjust with more water or sugar to your taste.
  • Serve over plenty of ice. Keep refrigerated or iced if serving at a party outdoors.

1 cup water
1/2 cup sugar
3 tablespoons fresh lemon juice
1/2 vanilla bean, split lengthwise
1/4 cup plus 2 tablespoons Sambuca
2 pound strawberries, trimmed, then halved or quartered if large

Steps:

  • Bring water, sugar, and lemon juice to a boil in a 2- to 3-quart saucepan. Scrape seeds from vanilla bean into saucepan using tip of a paring knife and add pod. Bring to a boil, stirring until sugar has dissolved, then boil until reduced to about 1 cup, 8 to 10 minutes. Stir in Sambuca.
  • Transfer syrup to a bowl and let cool completely. Stir in strawberries and let stand at room temperature 30 minutes to 1 hour. Discard pod.
