Strawberries, almonds, cilantro, and spinach take salad to a whole new level. Easy prep and perfect as a gluten-free breakfast idea or a new take on a tired lunch, Strawberry Almond Salad is everything spring and anything but boring.

4 cups fresh spinach leaves, stems removed
1 cup cilantro, diced
3 large strawberries (I used Discoll), quartered
3/4 cup almond slices

1/4 cup olive oil
2 tbsp agave nectar (I used Wholesome!)
1/8 tsp garlic salt
pinch of pepper

Steps:

  • Place spinach on two plates or in two bowls, and then layer with cilantro, followed by strawberry slices. Finally, top with almond slices and drizzle with salad dressing.
  • Serve immediately or store in jars and consume within a day.

1/3 cup sugar
1/2 cup sliced almonds or 1/2 cup slivered almonds
1 bunch romaine lettuce, coarsely cut
1 pint fresh strawberries, stemmed and halved
1/2 medium red onion, sliced thin
3/4 cup mayonnaise
1/4 cup milk
2 tablespoons poppy seeds
2 tablespoons raspberry vinegar
1/3 cup sugar

Steps:

  • In a saucepan, over medium heat, melt 2 tablespoons butter, stir in sugar and almonds and cook until golden brown; remove from heat and allow to cool slightly.
  • Combine lettuce, strawberries, onion and the sugared almonds.
  • Mix dressing ingredients together and toss with salad.
  • Chill for a short time and then serve.

Someone brought this salad to a pot luck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

2 tablespoons sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
½ cup olive oil
¼ cup distilled white vinegar
¼ teaspoon paprika
¼ teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
¼ cup almonds, blanched and slivered

Steps:

  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
  • In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

1/2 cup Marcona almonds
2 tablespoons white wine vinegar
2 teaspoons whole grain mustard
1 teaspoon poppy seeds
1 teaspoon sugar
1/4 cup vegetable oil
Kosher salt, freshly ground pepper
1 cup shelled fresh peas (from about 1 lb. pods) or frozen peas, thawed
3 cups baby arugula or watercress, thick stems trimmed
8 ounces fresh strawberries, hulled, halved or quartered if large (about 2 cups)
1 cup pea tendrils
1 ounce Parmesan, shaved
ingredient info: Marcona almonds are available at natural foods and specialty foods stores. Pea tendrils, also called pea shoots, can be found at Asian markets, farmers' markets, and natural foods stores.

Steps:

  • Preheat oven to 350°. Spread out almonds on a small rimmed baking sheet and toast, tossing occasionally, until golden brown, 8-10 minutes. Let cool.
  • Whisk vinegar, mustard, poppy seeds, and sugar in a large bowl. Whisk in oil; season with salt and pepper.
  • Cook peas in a large saucepan of boiling salted water until bright green and tender, about 5 minutes for fresh peas, or 2 minutes for frozen. Drain; transfer to a colander set in a bowl of ice water. Drain.
  • Add arugula, strawberries, pea tendrils, peas, and almonds to vinaigrette; toss to coat. Top with Parmesan.
