Homemade Strawberry Popsicles are a delicious frozen popsicle treat made with three simple ingredients; strawberries, water, and sugar.

Steps:
- Mix together strawberries and sugar and allow to set for 15-20 minutes. You want the sugar to draw out the juices from the strawberries. Add more sugar to taste if desired.
- Pour strawberries into blender and blend with 1 cup water. Blend until desired textured is achieved. We prefer our popsicles to have some tiny strawberry pieces in them.
- Pour into ice cream molds and freeze until solid.

- In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in molten chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.

- Wash and remove stems from strawberries. Puree. If using frozen, allow them to thaw a little before pureeing.
- Fill each mold with puree. Fill to a 1/4 inch from the top to allow room for stick and expanding during freezing. Place lid on molds, insert sticks. Make sure sticks are straight in each cup.
- When ready, melt chocolate and coconut oil in the microwave (30 seconds at a time, stir in between) This should only take about a minute.
