1/3 cup butter or margarine
1 teaspoon seasoned salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 teaspoon dried mint leaves, if desired
8 cups Corn Chex™, Rice Chex™ or Wheat Chex™ cereal (or combination)
2 cups almonds
1 cup chopped dried fruits, currants or raisins
1/4 cup finely chopped crystallized ginger
3 tablespoons honey, if desired

Steps:

  • Heat oven to 250°F.
  • In ungreased large roasting pan, melt butter in oven. Stir in seasonings. Stir in cereal and almonds until evenly coated.
  • Bake 1 hour, stirring every 15 minutes. Stir in dried fruits and ginger. Drizzle with honey. Cool completely, about 15 minutes. Store in airtight container.

2 cups (500 mL) almonds
1/3 cup (75 mL) butter or margarine
1 tsp (5 mL) seasoned salt
1 tsp (5 mL) ground cumin
1 tsp (5 mL) ground coriander
1/2 tsp (2 mL) ground cinnamon
1 tsp (5 mL) dried mint leaves, if desired
1 cup (250 mL) chopped dried fruits, currants or raisins
1/4 cup (50 mL) finely chopped crystallized ginger
3 tbsp (45 mL) honey, if desired

Steps:

  • In large microwaveable bowl, mix cereal and almonds; set aside.
  • In small microwaveable bowl, microwave butter on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
  • Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes, until mixture just begins to brown. Stir in dried fruits and ginger. Drizzle with honey. Spread on waxed paper to cool. Store in airtight container.

My churro Chex™ mix was a hit at my work. Best part is how easily customizable it is! The Scooby-Doo snacks and Bugles® were a fabulous addition and lent a Halloween look to this mix! Helpful hint: you can get a lot of add-ins from a dollar store!

2 cups crispy rice cereal squares (such as Rice Chex™)
2 cups original flavor cone-shaped corn snacks (such as Bugles(R)), divided
2 cups cinnamon graham cracker sticks (such as bone-shaped Scooby-Doo snacks)
½ cup pecan halves, toasted, divided
¼ cup cookie butter (such as Trader Joe's® Speculoos Cookie Butter®)
2 tablespoons butter
½ cup cinnamon chips, divided
5 cups cinnamon-flavored crispy rice cereal squares (such as Cinnamon Chex™)

Steps:

  • Combine Rice Chex™, 1 cup Bugles®, 1 cup graham cracker sticks, and 1/4 cup pecan halves in a large bowl.
  • Melt cookie butter and butter in a saucepan over medium heat. Add 1/4 cup cinnamon chips and stir until smooth and well combined. Remove from heat and pour mixture over the cereal mixture. Stir gently to coat all pieces.
  • Spread mixture out onto a parchment-lined baking sheet, separating any larger pieces. Allow to cool for about 15 minutes.
  • Combine Cinnamon Chex™ with remaining 1 cup Bugles®, 1 cup graham cracker sticks, and 1/4 cup pecans in a large bowl. Add to the cooled mixture and toss gently to combine.

3 ½ cups bite-size corn square cereal (such as Corn Chex®)
1 cup halved pretzel sticks
½ cup honey roasted peanuts
1 cup unsalted butter, melted
⅓ cup brown sugar
1 tablespoon vanilla extract
1 cup white sugar
2 tablespoons ground cinnamon
½ cup caramels, each unwrapped and cut into 4 pieces

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Line a large baking sheet with parchment paper.
  • Combine rice and corn cereal squares, pretzels, and peanuts in a large bowl; stir to combine. Whisk butter, brown sugar, and vanilla together in a bowl; drizzle over cereal mixture and toss to coat.
  • Whisk together white sugar and cinnamon, and sprinkle over cereal mixture; toss again to thoroughly coat. Add cereal mixture to the baking sheet, and spread out evenly.
  • Bake in the preheated oven for 45 minutes, stirring every 15 minutes. Remove from oven, and cool for 15 to 20 minutes. Stir in caramels, and store in an airtight container.

1/2 cup butter
1 teaspoon seasoning salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 teaspoon dried mint (optional)
4 cups Corn Chex
3 cups Rice Chex
1 -2 cup Wheat Chex, to preference
2 cups almonds
1 cup cashew pieces
1 tablespoon sesame seeds
1 cup combination of chopped dried fruits, currants,and/or raisins
3 tablespoons finely minced crystallized ginger or 1 teaspoon ground ginger
3 tablespoons honey, if desired

Steps:

  • Heat oven to 250 degrees F.
  • Melt the butter in a large roasting pan in the hot oven, then stir in the seasonings.
  • Stir in the dry cereals and nuts until it's all evenly coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • Stir in the sesame seeds, dried fruits, and ginger.
  • Drizzle with honey and stir well; let cool.
  • Store in airtight container.
  • Makes 10 1/2 cups Chex Mix snack.
