Steps:
- Preheat oven to 350 degrees F.
- Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
- Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
- Bake 25 to 30 minutes. Let cool before cutting into bars.

CREAMY STRAWBERRY DESSERT SQUARES
Easy dessert squares. They can be made with any fruit topping but strawberries and cream can't be beat!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
- Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.
- Bake in the preheated oven until crust is light golden brown, 10 to 15 minutes. Cool completely, about 30 minutes.
- Beat cream cheese using an electric mixer on medium speed in a bowl until smooth. Add whipped topping and stir until smooth; spread over crust. Refrigerate.
- Mix sugar and cornstarch together in a 2-quart saucepan; add 1 cup strawberries, water, and vanilla extract. Cook and stir strawberry mixture, mashing strawberries with spoon while cooking, over medium heat until strawberries are softened and mixture is thickened, 10 to 15 minutes.
- Stir food coloring into strawberry mixture and remove from heat; cool for 10 minutes. Gently stir remaining 3 cups strawberries into strawberry mixture; spoon over cream cheese filling. Refrigerate until set, about 1 hour. Serve within 4 hours.

- Slice roughly about half of the strawberries into vertical slices and choose 20 best looking slices. Set them aside. Place all the remaining strawberries and off cuts to a blender together with lemon juice and mix to a smooth puree.
- Transfer the strawberry puree into a small saucepan and bring it to boil. Cook for 5 minutes, over medium-high heat, stirring it often. Add 3 tbsp of sugar and cook again for another 5 minutes until you have thick puree. Transfer the mixture into a large bowl and allow it to cool.
- In a meantime, preheat the oven to 160C (fan) and grease and line the baking tin (leave plenty of baking paper overhanging, as it will help to remove the bake from the tin later).
- In a large bowl, mix the coconut with condensed milk until well combined. Transfer half of the coconut mixture to the bowl with cooled strawberry puree and add the pink food colouring gel (if using). Mix until well combined. Add 4 tbsp of milk to the bowl with remaining coconut and mix to combine.

- Line a 24cm x 13cm x 8cm (9in x 5in x 3in) rectangular baking dish (any dish suitable for brownies or cookie bars will be fine) with parchment paper and pre-heat the oven to 180ºC/350ºF.
