SMOKED HAM WITH FRESH STRAWBERRY SAUCE
Perfect for a buffet any time of year. We created this impressive glazed ham for winter entertaining, but it has become an Easter favorite as well.

Steps:
- Remove skin and trim some fat from smoked whole ham, leaving about 1/4 inch fat. With knife, score fat covering on ham crosswise, just through to the meat, into 1-inch-wide strips. Place ham on rack in large roasting pan (about 17 inches by 11 1/2 inches). Insert meat thermometer into center of ham, being careful that pointed end does not touch bone. Bake ham in 325 degrees F oven 3 to 3 1/2 hours until thermometer reaches 140 degrees F (15 to 18 minutes per pound). If ham browns too quickly, cover with a tent of foil.
- About 30 minutes before ham is done, prepare strawberry sauce: Reserve 1 pint strawberries for garnish. Hull remaining strawberries. In 3-quart saucepan with potato masher or back of slotted spoon, mash strawberries. Stir in brown sugar, cornstarch, salt, and orange marmalade; cook over medium heat until mixture thickens slightly and boils, stirring frequently.
- To serve, place ham on warm large platter. Arrange radish sprouts and reserved whole strawberries around ham. Serve with strawberry sauce.

STRAWBERRY GLAZED HAM

- 1. HEAT oven to 325°F. Score fat surface of ham with sharp knife, making uniform diagonal cuts about 1/8-inch deep and 3/4-inch apart.
- 2. PLACE ham fat side up on rack in shallow roasting pan; bake 1 1/4 to 2 1/4 hours.
- 3. COMBINE preserves, mustard and lemon juice in small saucepan; cook over low heat, stirring until blended.
- 4. BRUSH ham with about 1/2 cup glaze during last 20 minutes of baking time. Let ham stand 10 minutes for easier slicing. Heat remaining glaze and serve as a sauce for the ham.
STRAWBERRY BAKED HAM

- Preheat the oven to 350 degrees F. Place the ham in a large roaster and arrange the strawberries on top. Mix the wine, water, and Creole mustard together, then pour over the top of the ham, and let it drip down the sides. Bake for 1 hour, basting every 20 minutes. After the ham is baked, slice and serve topped with a Strawberry Sauce (see below). For Sauce: In a medium-sized saucepan, mix all the ingredients together and cook covered over low heat until thickened, at least 3 hours, stirring occasionally. CANNED HAM BITES

- Batter: Combine all of the ingredients in a medium mixing bowl.
- Breading: Pulse the crackers and potato chips in a food processor until finely ground. Transfer the mixture to a shallow bowl.
- Filling: Cut the canned meat into chunks and put it into a food processor with the pickle slices. Pulse until the mixture becomes chunky. Do not overmix.
- Roll pieces of the cream cheese into 1 1/2-ounce balls with floured hands to avoid sticking. Fatten each ball with the palm of your hand. Portion out the meat mixture to match the amount of cheese balls. Put a portion of the meat into the middle of a cheese ball and fold the cheese over the meat to enclose. Once you have a ball formed, dip it in the batter and then roll it in the cracker mixture. Repeat with the remaining cheese balls and meat.
- Heat about 1-inch of vegetable oil in a frying pan over medium heat. Gently fry the bites, in batches, until golden brown. Remove them from the oil to a serving platter and enjoy!
STRAWBERRY DAIQUIRI BITES

- Put the strawberries in a mason jar with the rum and soak for 15 minutes in the fridge.
- In a small bowl, combine the sugar and lime zest.
- Remove the strawberries from the jar and cut a small slice from the bottom of each so they stand up; reserve the slices.
- Top each strawberry with some of the whipped cream and sprinkle with the lime sugar. Cap each strawberry with a reserved strawberry slice.
STRAWBERRY CHEESECAKE BITES

- Line a baking sheet with waxed paper.
- Beat together the cream cheese, confectioners' sugar, and vanilla extract in a bowl until smooth.
- Spoon the mixture into a piping bag fitted with a large round tip.
- With a sharp paring knife, cut a cone shape out of the top of each strawberry to leave a small hollow.
- Pipe about 1 tablespoon of the cream cheese filling into each strawberry, making sure that the filling overflows a bit out of the top of the strawberry.
- Place the graham cracker crumbs into a shallow bowl. Dip the filled side of the strawberry into the graham cracker crumbs, coating the exposed filling with crumbs.
- Melt the chocolate and canola oil in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each interval, until warm and smooth, 1 to 3 minutes (depending on your microwave).
- Dip the unfilled ends of the strawberries into the melted chocolate and place on the prepared baking sheet; refrigerate until set.

SKINNY FROZEN STRAWBERRY BITES RECIPE

- In a blender combine the pecans, coconut, honey and olive oil until fully combined and at a desired crust texture.
- Spray a mini cupcake tin with non-stick cooking spray.
- Press the pecan mixture into each individual hole of the tiny cupcake tin.
- Clean blender and add your strawberries.
- Blend until it is a smooth liquid-like smoothie.
- Pour the blended strawberries into a small bowl and fold in the Greek yogurt.
- Fold until it is fully combined.
- Spoon the strawberry mixture on top of the pecan crust until it reaches the top. Do not let it bubble or pour over, because it will make them tricky to get out, or make them look not as cute.
