Here's a tasty twist on the classic mimosa. To make this refreshing drink friendly for kids or mamas-to-be, substitute lemon-lime soda or ginger ale for the champagne. -Kelly Maxwell, Plainfield, Illinois

Number Of Ingredients 5

7 cups sliced fresh strawberries (about 2 quarts)
3 cups orange juice
4 cups champagne, chilled
GARNISHES:
Optional: Fresh strawberries and orange slices

Steps:

  • Place half each of the strawberries and orange juice in a blender; cover and process until smooth. Press the mixture through a fine mesh strainer. Repeat with remaining strawberries and orange juice. , Pour a scant 2/3 cup strawberry mixture into each champagne flute or wine glass. Top each with about 1/3 cup champagne. If desired, serve each with a strawberry and an orange slice.

At San Francisco's Contigo, chef Brett Emerson created this muddled soda to showcase the small, sweet strawberries he finds at the farmers’ market.

Yield Makes 1

Number Of Ingredients 6

2 tablespoons fresh lemon juice
1 tablespoon raw sugar
6 fresh basil leaves
5 small strawberries (or 3 large strawberries, quartered) plus 1 thin slice for garnish
1 pinch kosher salt
3/4 cup soda water

Steps:

  • Combine fresh lemon juice, raw sugar, basil, whole strawberries, and salt in a pint glass. Muddle ingredients with a muddler or the handle of a wooden spoon until sugar dissolves. Add ice cubes and soda water and stir until chilled. Strain into a 12-ounce glass filled with ice cubes and garnish with a strawberry slice.

¾ cup strawberry, pureed
4 tablespoons sugar
1 lemon, use ½ for juice and other ½ for zest
2 cups water
4 fresh basil leaves

Steps:

  • Boil water and, once boiling, add sugar and wait for sugar to dissolve. Once it does, turn off the stove and wait for the water to become warm.
  • Once the water cools down, add the lemon juice and zest into it and stir gently. To this, add strawberry puree and portion into glasses.
  • Garnish with ice and basil and serve.
  • Enjoy!
