1 1/2 pints strawberries, rinsed and hulled
1/2 cup confectioners' sugar

Steps:

  • Pulse strawberries with sugar and 1/3 cup water in food processor until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl.
  • Pulse remainder until smooth. Stir puree into mixture in bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least 8 hours.

My family does not care for plain strawberry jam, but in combination with oranges, it is gobbled up in no time. Since you are using the zest in this recipe, I only use organic oranges.

4 pints fresh strawberries
2 oranges
4 cups white sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)

Steps:

  • Inspect 8 half-pint jars for cracks and rings for rust; discard any defective ones. Immerse in simmering water until strawberry jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Wash, hull, and crush strawberries in a bowl. Measure berries; you should have about 5 cups.
  • Scrub oranges well under hot running water and pat dry with paper towels. Zest oranges; place zest in a bowl and set aside. Peel oranges and remove all white pith. Divide oranges into segments and remove any white fibrous membranes and seeds. Chop oranges finely and mix into the bowl with the zest.
  • Place crushed strawberries and orange-zest mixture in a large pot over medium heat. Stir in pectin and slowly bring mixture to a full rolling boil. Add sugar and stir to dissolve. Return to a full rolling boil on high heat and boil for exactly 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
  • Pack strawberry jam into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1 pound fresh strawberries, hulled, medium dice (about 3 cups)
2/3 cup granulated sugar
1 tablespoon orange-flavored liqueur
1 cup cold heavy cream

Steps:

  • Blend 2 cups of the strawberries, and 1/2 cup of the sugar in a blender or food processor until smooth. Transfer to medium saucepan and cook over medium heat until bubbling and just thickened. Set aside to cool, then refrigerate and chill for about 1 hour. Stir in remaining 1 cup strawberries.
  • In a medium clean, cold bowl, beat cream with the remaining 2 tablespoons of the sugar and liqueur until stiff peaks form. Fold the whipped cream into strawberry mixture. Chill fool until beginning to set, about 30 minutes.

3/4 cup orange juice
2 teaspoons vanilla
2 cups frozen whole strawberries
2 teaspoons sugar

Steps:

  • Put yogurt, orange juice, and vanilla in a blender.
  • Blend until smooth.
  • Add frozen strawberies and sugar, blend until smooth.
  • Pour into 6 paper cups, filling each about 3/4 full.
  • Place in freezer for an hour.
  • Place a wooden stick in the center of each cup.
  • Freeze completely.
  • Peel cup off each and serve.

1/2 cup vanilla yogurt
1 cup frozen whole strawberries, thawed
lime (optional)

Steps:

  • Stir the orange juice and yogurt together.
  • Process the strawberries in a blender or food processor until smooth, stopping to scrape down sides. Stir into the juice mixture. Spoon mixture evenly into 12(3 oz.) plastic pop molds; insert plastic pop sticks, freeze 8 hours.
  • If you desire, you could place 12(3 oz.) paper cups in a muffin pan. Spoon mixture evenly into cups. Freeze 30 minutes; insert a stick in the center of each. Freeze 8 hours. Peel off cups.
  • To make look like watermelon wedges:.
  • Hollow out lime halves, leaving riinds intact. Spoon pop mixture into lime rinds. Sprinkle with semisweet chocolate mini morsels(to look like seeds), and freeze 8 hours. Cut frozen lime halves in half with a bread knife to make wedges.

6 tablespoons water
1 tablespoon sugar
10 freezer pop molds or 10 paper cups (3-ounce size) and 10 wooden pop sticks
2 cups clementine segments (about 10), seeded if necessary
6 tablespoons orange juice

Steps:

  • Place strawberries, water and sugar in a food processor; pulse until combined. Divide among molds or cups. Top molds with holders; if using cups, top with foil and insert sticks through foil. Freeze until firm, about 2 hours., Wipe food processor clean. Add clementines and orange juice; pulse until combined. Spoon over strawberry layer. Freeze, covered, until firm.
