STRAWBERRY SUN TEA
Black tea brewed in the sunshine with a strawberry muddle mixed in.

- In a 2 gallon or larger pitcher, pour in water and place tea bags in the water. Stir in 1 cup sugar. Cover and place tea in the sun for about 4 to 5 hours to steep.
- Meanwhile, set aside ½ pound of strawberries for garnish. With the remaining strawberries, hull and crush about 3 cups strawberries with a potato masher in a large bowl. Hull and slice the remaining strawberries and add them to the mashed strawberries. Add 6 tablespoons sugar and stir to combine. Cover and set in the refrigerator until the sun tea is done.
- Remove the tea bags and stir tea with a wooden spoon. At this point you can either pour the strawberry compote into the tea or serve the compote into individual glasses. Serve over ice and enjoy.

STRAWBERRY JASMINE SUN TEA
This tea is super refreshing and great for a hot summer day. I never had jasmine tea before, but I loved the flavor and light taste. No extra sugar is needed for this thanks to the sweetness from the honey and mint. But if you like your tea very sweet, you can add sugar when serving. Great for your summer cookout!

- 1. Wash strawberries and mint. Chop leaves/tops off strawberries and cut them in half.
- 2. In large pot, use some of the water to boil strawberries and mint. Reduce, add honey and mix well, and let simmer for about 25 - 30 minutes, until the strawberries lose most of their color.
- 3. In the meantime, wash thoroughly the beverage container you will be leaving out in the sun.
- 4. Pour everything, strawberries and all, into the clear beverage dispenser (glass is best to use, I think). Add the rest of the water (room temp), and the jasmine tea bags.
- 5. Leave container out in the sun for about 4 hours (less time if you are making smaller quantity).
- 6. Serve over ice, add sugar if you wish, garnish with orange or lemon and enjoy!

- Set aside five strawberries. Place the remaining strawberries in blender; cover and puree. Strain into pitcher. Stir in the tea, sugar and lemon juice until sugar is dissolved. Chill. , Serve in chilled glasses over ice. Garnish with reserved berries.

STRAWBERRY MINT SUN TEA
Refreshing and healthy too! This works best on a summer sunny day! In the winter I just make this by heating the water to boiling, then steeping the tea bags for 10-20 minutes. Adapted from the Heart & Stroke Foundation.

Steps:
- Place the cold water in a large clear glass pitcher or jar.
- Add the tea bags and the mint leaves.
- Cover with a small dish towel or washcloth, large enough to keep debris and bugs out.
- Place the tea in direct sunlight for 4 to 5 hours.
- Divide the strawberries and ice between six tall glasses.
- Discard the tea bags and mint.
- Sweeten to taste with sugar or honey.
- Pour the tea into the glasses and serve. Enjoy!
