Strawberry Melon Salad with Watermelon Vinaigrette image

This is a delicious, fruit-filled green salad with a fantastic vinaigrette!

½ cup watermelon chunks
2 tablespoons chopped red onion
2 tablespoons white wine vinegar or champagne vinegar
2 tablespoons extra virgin olive oil
1 teaspoon honey
1 tablespoon chopped fresh basil
salt and pepper, (to taste)
2 cups chopped strawberries
2 cups chopped cantaloupe
2 cups chopped seedless watermelon
6 cups mixed greens
¾ cup crumbled gorgonzola cheese or feta cheese

Steps:

  • Combine all ingredients in a blender or mini food processor and pulse until well combined. Add in salt and pepper to taste. Transfer to a bowl, cover and refrigerate until ready to use.
  • In a medium bowl, toss strawberries, cantaloupe and melon together in a medium bowl.
  • To serve, divide greens between 6 salad bowls. Top each with about 1 cup of fruit, and sprinkle with gorgonzola cheese. Drizzle each serving with watermelon vinaigrette.

6-8 strawberries
3-4 mint leaves
pinch of salt
Honey Lime Vinaigrette:
1/3 cup honey
1/2 teaspoon lime peel
1/4 cup fresh squeezed lime juice
1/8 teaspoon ground nutmeg or cinnamon
3/4 cup salad oil

Steps:

  • Cut the watermelon into cubes and place it in a large bowl.
  • Hull and slice the strawberries and add to the watermelon.
  • Cut the mint leaves into slivers and sprinkle on top
  • Add a pinch of salt
  • Vinaigrette Instructions:
  • In a small mixing bowl combine the honey, lime peel, lime juice, and nutmeg.
  • Whisk to mix ingredients, add half of the oil to the honey mixture in a thin steady stream.
  • Continue whisking till mixture is thick, add more oil until you reach the desired flavor.
  • Drizzle over the watermelon and serve.

1/4 cup sugar
2 cups boiling water
1/2 pound fresh strawberries, hulled and quartered (about 2 cups)
12 cups cubed watermelon (about 1 medium)
1 can (12 ounces) frozen lemonade concentrate, thawed
3 tablespoons lemon juice
Ice cubes

Steps:

  • Dissolve sugar in boiling water. Place strawberries and watermelon in batches in a blender; cover and process until blended. Pour blended fruit though a fine mesh strainer; transfer to a large pitcher. Stir in lemonade concentrate, lemon juice and sugar water. Serve over ice.

8 strawberries, hulled and thinly sliced (about 1 cup)
10 cups baby arugula
4 ounces parmesan cheese, crumbled with the tip of a knife (about 1 cup)
1 tablespoon dijon mustard
1 tablespoon sugar
2 tablespoons fresh lime juice
1/4 cup fresh orange juice
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Toss the strawberry slices, arugula and parmesan crumbles in a large bowl.
  • Vigorously whisk together the mustard, sugar, lime juice and orange juice in a medium bowl, whisking between additions to dissolve all the ingredients. Add the olive oil in a thin stream while whisking with the other hand. (This is a perfect time to ask for an extra hand, or place the bowl in the center of a dish towel curled into a circle around the base to stabilize it.) Taste and season with a pinch of salt, if needed, and a grind or two of pepper. Toss the salad with some of the dressing and serve the rest on the side.
