STRAWBERRY BROWNIES
These brownies are light and crumbly, with a punch of strawberry flavor. I made them one night with my boyfriend's daughter trying to teach her that there are no limits on what can be used when baking and cooking. I decided to use the fresh strawberries I had just purchased. I wouldn't suggest using frozen strawberries but if you do, defrost and drain well.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie plate.
- Whisk together egg, melted butter, and vanilla in a large bowl. Puree about 1/4 cup of the sliced strawberries and whisk into the butter. Sift together the sugar, cocoa powder, and cake flour. Fold into the butter, and mix until well incorporated. Use more flour if needed to end up with a mixture in between a cake batter and a cookie dough (the strawberries will add additional moisture). Gently fold in the remaining sliced strawberries and pour the batter into prepared pie plate.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes.

STRAWBERRY BANANA CREAM BROWNIES
This beautiful brownie dessert is made with layers of fresh bananas, strawberries, creamy banana cream filling and topped with sweetened whipped cream.

Steps:
- Make, bake, and cool a 9x13-inch pan of brownies.
- Whip cream until soft peaks begin to form. Add powdered sugar. Whip until stiff peaks form. Place in refrigerator.
- Mix dry banana cream pudding mix with cold milk (until thickened, 2-3 minutes. Place in refrigerator to set (15-30 minutes).
- Fold in 1/2 of the sweetened whipped cream with the banana pudding.
- Spread a thin layer of banana cream filling onto the cooled brownies. Place a layer of sliced bananas on top.
- Next, pour and spread the remainder of the banana cream filling on top of the bananas. Spread evenly.
- Add a layer of sliced strawberries on top of the banana cream filling. Top with the rest of the whipped cream.
- Garnish with sliced bananas and strawberries or shaved chocolate.
- Chill for 1-2 hours to allow filling to set. You may serve immediately but it may ooze.
STRAWBERRY BANANA MUFFINS
Lots of strawberries from last summer, and need to make some room in the freezer. I made a triple batch of these for a wedding social, they were gone in a flash!

- Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
- Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.
- Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
- Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
- Stir 1/2 cup white sugar and cornstarch together in a medium bowl. Mix in 1 cup sliced strawberries at a time.
- Combine flour, remaining 1/2 cup white sugar, brown sugar, baking powder, cinnamon, and salt in a large bowl. Stir in melted butter and egg with a fork until crumbly.
- Press 1/2 of the crumble mixture into the prepared pan. Cover with strawberry mixture, then top with remaining crumble mixture.
- Bake in the oven until golden brown, about 45 minutes. Remove from the oven and let cool to room temperature, about 20 minutes. Place in the refrigerator before slicing into 16 bars.

- Heat oven to 350° F (325° F for dark or nonstick pan). Grease or spray bottom of 13x9-inch pan.
- Make brownie batter as directed on box; stir in bananas. Spread into pan. Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely.
