Provided by Dizdezi

Categories     Artichoke

Time 1h15m

Yield 9 artichokes, 6-8 serving(s)

Number Of Ingredients 7

9 baby artichokes
1/2 cup lemon juice
1 cup Italian seasoned breadcrumbs
1/2 cup grated pecorino romano cheese
1/2 cup grated parmesan cheese
8 garlic cloves, minced
1 cup olive oil, divided

NEW ORLEANS STUFFED ARTICHOKES

New Orleans Stuffed Artichokes image

Robust, rich New Orleans tradition. A favorite recipe that my southern dad created. This recipe takes some time and love, but is very much worth the effort! Make sure you have your teeth in for this one!

Provided by Joan

Categories     Side Dish     Vegetables

Time 3h45m

Yield 10

Number Of Ingredients 15

10 whole artichokes
1 cup Italian seasoned bread crumbs
4 ounces provolone cheese, shredded
10 pimento-stuffed green olives, chopped
½ bunch fresh parsley, chopped
5 cloves garlic, minced
1 bunch green onions, finely chopped
2 small stalks celery, finely chopped
½ green bell pepper, finely chopped
1 teaspoon lemon juice
1 teaspoon hot pepper sauce (e.g. Tabasco™)
4 (2 ounce) cans anchovy fillets, chopped
1 teaspoon Worcestershire sauce
1 tablespoon olive oil, or as needed
salt to taste

Steps:

  • Prepare the artichokes by slicing off the bottoms of the stems and trimming the tips of the leaves. It is easiest to use scissors for the leaves. Tear off the small leaves around the base and discard.
  • Place the artichokes into a large pot, and fill with enough water to cover. Place a dinner plate on top of them to keep the artichokes from floating out of the water. Cover with a lid and bring to a boil. Boil for 10 to 15 minutes, or until some of the leaves are floating in the water; drain and cool.
  • In a medium bowl, mix together the bread crumbs, cheese, olives, parsley, garlic, green onions, celery and bell pepper. In a small bowl, stir together the lemon juice, hot pepper sauce, anchovies, Worcestershire sauce, olive oil and salt; stir into the bread crumb mixture.
  • Tear off one large square of aluminum foil for each artichoke. Place an artichoke in the center of a square and tuck about 1/2 teaspoon of the cheese mixture under each leaf. Bring the foil up around the artichoke leaving the top open.
  • Place a wire rack or steamer insert into the bottom of the large pot. fill with about 3 inches of fresh water, or so that the artichokes remain above water level. Set artichokes in the pot upright and bring to a boil. Cover and let artichokes steam for about 3 hours. Remove from the pot and allow to cool to room temperature before serving.

STUFFED BABY ARTICHOKES, IZMIR STYLE

Stuffed Baby Artichokes, Izmir Style image

Provided by Molly O'Neill

Categories     dinner, lunch, appetizer, main course, side dish

Time 5h30m

Yield Four servings

Number Of Ingredients 15

1/3 cup short-grain rice
6 cups cold water
2 lemons
1 teaspoon coarse sea salt, plus more to taste
2 tablespoons all-purpose flour
12 baby artichokes
4 scallions, thinly sliced
1/3 cup extra-virgin olive oil
1/4 cup chopped fresh dill, plus more for garnish
3 teaspoons sugar
Freshly ground black pepper to taste
1 large onion, peeled
1 pound fresh fava beans, shelled and skinned
1 large carrot, peeled and cut into 1/4-inch rounds
Lemon wedges for garnish

Steps:

  • Wash the rice in several changes of water; drain. Place in a small bowl and cover with very hot water. Set aside.
  • In a large bowl, combine 6 cups cold water, the juice of 1 1/2 lemons, 1 teaspoon salt and the flour. Gently smack each artichoke on the edge of a hard surface to open up the leaves. Remove the tough outer leaves and cut off the spiky tips of the remaining ones. Cut off the stems so the artichokes will stand upright. Remove any hard surfaces around each base with a vegetable peeler. Spread open the inner leaves and use a melon baller to scoop out the choke in the center. Place the artichoke in the water mixture as you finish each one.
  • Drain the rice and combine with the scallions, 2 tablespoons of the olive oil, the dill, 2 teaspoons of the sugar and salt and pepper to taste. Drain the artichokes and reserve 1/2 cup of the liquid. Spread open the artichoke leaves and stuff the cavity of each one with the filling.
  • Place the onion in the center of a deep 9-inch nonreactive skillet with a tightly fitting lid or a round flameproof casserole with lid. Surround the onion with the artichokes, fava beans and carrots.
  • In a small bowl, combine the remaining olive oil, the remaining sugar, the reserved 1/2 cup liquid and 2 tablespoons lemon juice and pour over the artichokes. Crumple and wet a 12-inch square piece of parchment paper and lay it directly over the artichokes.
  • Top with an inverted, heatproof plate that just fits inside the pan. Place over medium-high heat and bring the liquid to a boil. Pour 1 cup of boiling water down the inside of the pan. Boil vigorously for 1 minute. Lower the heat, cover with a lid and cook slowly until the artichokes are very tender, about 40 minutes. Remove the pan from the heat and set aside, still covered, until the artichokes are completely cool, about 3 to 4 hours.
  • Discard the onion. Using a slotted spoon, transfer the artichokes, favas and carrots to a shallow serving dish. Spoon some of the cooking juices over them, garnish with the dill and lemon wedges and serve.

ITALIAN STUFFED ARTICHOKES

Italian Stuffed Artichokes image

"I can remember Mom making this special treat at Easter, Thanksgiving and Christmas," writes Emma Magielda from Amsterdam, New York. "We looked forward to it all year!" TIP: For easy eating, Emma suggests pulling leaves from the artichoke one at a time. Draw each through your teeth slowly, scraping and eating only the tender flesh at the base. Continue until you reach the central cone or heart of tender young leaves. Eat this with a fork.

DEEP-FRIED BABY ARTICHOKES STUFFED WITH PEPPER JACK CHEESE

Deep-Fried Baby Artichokes Stuffed with Pepper Jack Cheese image

Categories     Cheese     Fry     Cocktail Party     Vegetarian     Artichoke     Winter     Gourmet

Yield Makes 24 hors d'oeuvres

Number Of Ingredients 16

For trimming and cooking artichokes
1 lemon, halved, plus 1 tablespoon fresh lemon juice
12 baby artichokes (1 to 1 1/2 lb)
1 tablespoon all-purpose flour
1 tablespoon olive oil
1 tablespoon salt
For stuffing and frying artichokes
About 1 1/2 qt vegetable oil
For deep-frying
3 oz pepper Jack cheese, grated (3/4 cup)
2 large eggs, lightly beaten
1 cup fine fresh bread crumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Special Equipment
a melon-ball cutter and a deep-fat thermometer

Steps:

  • Trim and cook artichokes:
  • Squeeze juice from 1 lemon half into a large bowl of water, then drop same half into water.
  • Cut off artichoke stems and discard. Cut off top 1/2 inch of 1 artichoke with a serrated knife. Bend back outer leaves until they snap off close to base, then discard several more layers of leaves in same manner until you reach pale yellow leaves with pale green tips. Cut off green tips.
  • Trim dark green fibrous parts from base and sides of artichoke with a sharp paring knife, then rub cut surfaces with other lemon half. Drop artichoke into acidulated water.
  • Trim remaining artichokes in same manner.
  • Put 2 quarts water in a 4-quart pot and whisk in flour. Whisk in oil, salt, and remaining tablespoon lemon juice and bring to a simmer.
  • Add trimmed artichokes and simmer, partially covered, until just tender when pierced with a knife, 8 to 12 minutes. Drain in a colander, then invert onto paper towels to drain thoroughly. Pat dry.
  • When artichokes are cool enough to handle, pull out all pointed inner leaves and scoop out fuzzy choke with melon-ball cutter.
  • Stuff and fry artichokes:
  • Heat 2 inches oil in a 4-quart heavy pot over moderate heat until thermometer registers 350°F.
  • While oil is heating, stuff each artichoke with 2 packed teaspoons cheese, pressing leaves around cheese.
  • Put eggs and bread crumbs in separate shallow bowls and divide salt and pepper between them, stirring them in. Dip each artichoke in egg, turning to coat and letting excess drip off, then in crumbs, turning to coat. Transfer to a tray.
  • Fry artichokes in 2 batches (returning oil to 350°F between batches) until golden brown, about 2 minutes. Transfer artichokes as fried to paper towels to drain, then cut in half.

STUFFED ARTICHOKES

Stuffed Artichokes image

Serve these deeply flavorful stuffed artichokes in individual portions or deconstructed in a casserole, from "Mad Hungry" by Lucinda Scala Quinn, for a delicious appetizer or side dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Vegetables

Number Of Ingredients 7

1 lemon, halved
6 whole artichokes
3/4 cup fresh breadcrumbs
1/2 cup grated Pecorino Romano cheese
1 small garlic clove, minced
2 tablespoons chopped fresh parsley leaves
Freshly ground black pepper

Steps:

  • Squeeze the lemon halves into a large bowl and fill the bowl with cold water. Trim the bottom off each artichoke. Trim off the tough outer leaves. Snip the thorny tips off the top leaves. As each one is completed, place it in the lemon water to prevent it from discoloring.
  • In a small bowl, combine the breadcrumbs, cheese, garlic, and parsley and season with pepper. Pull each leaf open slightly from each artichoke and stuff a little filling into the opening. Place the artichokes snugly side by side in a large pan with a tight-fitting lid. Add 1 inch of water to the pot. Cover, bring to a boil, then reduce the heat and steam until the bottoms of the artichokes are tender, 35 to 45 minutes; a knife should insert easily. Make sure the water doesn't boil dry. Add more water if necessary.
  • Serve each artichoke hot, on an individual plate.

SAUTEED BABY ARTICHOKES

This recipe comes to us courtesy of chef and author James Peterson.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 6

18 baby artichokes, (about 2 1/2 pounds)
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
1 medium clove garlic, minced and crushed to a paste
2 tablespoons finely chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper

Steps:

  • Using a sharp paring knife, trim the outermost layer of leaves from each artichoke. Trim stems, and cut off top half of each artichoke. As you trim them, place them in a medium bowl; add lemon juice, and toss to coat.
  • Transfer artichokes to a medium nonreactive saucepan. Add enough cold water to cover artichokes by 1 inch. Using a small heat-proof plate, weigh down the artichokes to keep them submerged. Bring to a simmer over high heat. Reduce heat to low, and simmer artichokes until fork-tender, about 15 minutes. Transfer to a colander to drain.
  • Cut artichokes in half lengthwise. In a large skillet, heat olive oil over medium heat. Add artichokes in a single layer, and cook until hot, about 3 minutes. Add garlic and parsley. Cook, stirring occasionally, for 1 minute longer. Season with salt and pepper. Serve immediately.
