1 package (12 ounces) jumbo pasta shells
1 large egg, lightly beaten
2 cartons (15 ounces each) ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 jar (32 ounces) spaghetti sauce
Thin breadsticks, optional

Steps:

  • Cook pasta shells according to package directions. Meanwhile, in a large bowl, combine the egg, ricotta cheese, spinach, Parmesan cheese, salt, oregano and pepper. Drain shells and rinse in cold water; stuff with spinach mixture., Place shells in a greased 13x9-in. baking dish. Pour spaghetti sauce over shells. Cover and bake at 350° until heated through, 30-40 minutes. Serve with breadsticks if desired.

30cm/12in bought pizza base
6 rounded tbsp tomato sauce from a jar (we used Loyd Grossman's Tomato and Chilli)
175g washed spinach leaves
about a third or a 290g jar of antipasti mushrooms
50g (or vegetarian alternative) parmesan , finely grated
4 medium eggs (large may overflow)

Steps:

  • To prepare the pizza, preheat the oven to 200C/Gas 6/fan 180C. Put the pizza base on a baking sheet and spread with the sauce.
  • To cook the spinach, put it in a microwavable bowl, cover with cling film and pierce it a couple of times. Put in the microwave on High (850W) for 2 minutes until wilted (or cook in a covered pan for 2-3 minutes). Drain and spread the spinach over the pizza base, then get the mushrooms out of the jar with a fork and scatter them over the top. Season and sprinkle with half the parmesan. Bake for 10 minutes.
  • Make four dips in the spinach with the back of a spoon, and crack an egg into each. Sprinkle with the remaining cheese and bake for a further 6- 8 minutes, until the eggs are just set.

1 pound boneless skinless turkey breast, cut into 8 slices
2 tablespoons canola oil
4 slices Swiss cheese, halved

Steps:

  • Preheat oven to 400°. Place bread crumbs in a large resealable plastic bag. Add turkey; toss to coat. In a large skillet, heat oil over medium heat. Add turkey in batches; brown on both sides. Remove from skillet., Place half of a cheese slice and 2 tablespoons spinach down the center of each turkey slice. Fold turkey over filling; secure with toothpicks. , Transfer to a greased 11x7-in. baking dish. Top with spaghetti sauce. Bake, uncovered, until a thermometer inserted in turkey reads 165°, 12-15 minutes. Discard toothpicks.

1 cup warm water (105°F to 110°F)
2-1/4 cups all-purpose flour, divided
1/4 tsp. salt
2 Tbsp. oil
1 cup whole wheat flour
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
2 eggs, divided
1/4 cup plus 2 Tbsp. KRAFT Grated Parmesan Cheese, divided
16 slices OSCAR MAYER Pepperoni, quartered
1 cup sliced fresh mushrooms
2 Tbsp. KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil

Steps:

  • Heat oven to 375°F.
  • Mix yeast and warm water in small bowl; let stand 10 min. Meanwhile, combine 1-3/4 cups all-purpose flour and salt in large bowl. Add yeast and oil; beat with mixer until blended, scraping bowl constantly. Beat on high speed 3 min., stopping occasionally to scrape bottom and side of bowl. Stir in whole wheat flour with wooden spoon. Knead dough on lightly floured surface until dough is smooth and elastic, mixing in remaining all-purpose flour as necessary to prevent sticking. Divide dough in half. Cover; let rest 10 min.
  • Roll each dough half into 13-inch round on lightly floured surface. Transfer 1 round to 13-inch pizza pan sprayed with cooking spray; press edge of dough to form slight rim. Sprinkle mozzarella onto bottom of crust.
  • Combine spinach, 1 egg and 1/4 cup Parmesan; spread over mozzarella. Top with pepperoni and mushrooms; drizzle with dressing. Beat remaining egg; brush some of the egg onto edge of dough. Cover pizza with remaining dough round; pinch edges together to seal. Score edges with sharp knife. Cut 12 to 14 (1-inch) slits in top crust for steam to escape; brush with remaining egg. Sprinkle with remaining Parmesan.
  • Bake 30 to 35 min. or until crust is golden brown.

1/4 lb butter, melted
1 onion, minced
1 garlic clove, minced
0.5 (10 ounce) package frozen chopped spinach, thawed and squeezed of excess water
1/2 lb mild Italian sausage, cooked and drained (bulk or removed from skin)
1/3 cup sour cream
1/2 teaspoon salt
1/8 teaspoon pepper
4 -6 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Wash mushrooms and remove stems. Dip caps into 6 tablespoons of melted butter and place hollow side up in a buttered 9"x13" glass casserole.
  • Chop 1/2 of the stems and saute in remaining 2 tablespoons of butter with onion and garlic.
  • Add spinach, cooked sausage, sour cream, salt and pepper to this mixture. Fill mushroom caps and sprinkle with Parmesan cheese.
  • Bake for 20 to 25 minutes or until bubbly.

24 ounces boneless skinless chicken breasts
3 medium button mushrooms, sliced
4 ounces cream cheese
1 1/2 ounces goat cheese, you'll need more cream cheese if you leave it out (optional)
4 -5 dashes hot sauce, to taste (I use Cholula)
9 ounces frozen spinach
14 ounces artichoke hearts
3 -4 garlic cloves (pressed or finely minced)
1 tablespoon olive oil
prepared balsamic dressing (I use Bertolli brand)
salt and pepper, to taste

Steps:

  • Thaw, drain and squeeze spinach.
  • Rinse, drain and squeeze artichoke hearts.
  • Saute garlic with olive oil over med/high heat.
  • Add cream cheese, goat cheese, spinach, artichoke hearts, hot sauce, and garlic to med-low sauce pan. Stir until cheeses are melted and everything is combined.
  • Flatten chicken breasts, season with salt and pepper.
  • Put 2-3 tbs of spinach mixture onto each chicken breast, top with sliced mushrooms and then roll it up or fold it over.
  • Brush with balsamic vinaigrette.
  • Bake at 350°F for 15-35 minutes (depends on how thinly you flattened the chicken breasts), taking them out about half way through to brush with more vinaigrette.

¼ teaspoon garlic powder
1 cup fresh spinach
1 tablespoon water
1 (14 ounce) package refrigerated pizza dough

⅓ cup pizza sauce
⅔ cup shredded Italian cheese blend, divided
⅓ cup chopped cooked chicken breast
¼ cup sun-dried tomatoes, cut into thin strips
1 tablespoon butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Mix salt and garlic powder together in a small bowl.
  • Combine spinach and water in a microwave steamer. Microwave on high for 60 seconds. Drain spinach, then squeeze out any excess water.
  • Roll pizza dough on a lightly floured surface to a 14-inch circle.
