STUFFED ONIONS WRAPPED IN BACON RECIPE
These bacon-wrapped stuffed onions are insanely good, a perfect beef meatball stuffed inside an onion, then wrapped in bacon.

Steps:
- Top and tail each onion and then remove the skin.
- Core each onion. I prefer the method of using a sharp knife as a 'drill', poke into the centre and twist. Repeat from the other cut side, then push with your thumb, the center should pop out.
- Then use your fingers to work around the remaining onion until you leave a shell just 2-3 onions layers deep.
- Coarsely chop a third of the removed onion and discard the rest. (Don't throw it away though, freeze it for stocks, stews or soups).
- Mix the chopped onion with the minced beef.
- Dice the chilli pepper as finely as you can and add it to the beef.
- Throw in the Worcestershire sauce, thyme, fennel seeds, salt and pepper, then mix well.
- Stuff the onions with the minced beef mixture.
- Wrap each onion with 2 strips of streaky bacon.
- Take half of the BBQ sauce and brush it over the bacon wrapped onions.
- Add the onions to a hot grill and cook for an hour in an indirect heat 'zone' at around 160°C-170°C or 320°F-340°F.
- Brush with the remaining BBQ sauce and move to the direct heat section of the BBQ for a final 5 minutes.
- Place the onions on a baking tray and place in a preheated oven at 170°C or 340°F and cook for an hour.
- Remove the onions from the oven and then turn it up as hot as it will go, flip it to fan mode if you have that option.
- Brush the onions with the remaining BBQ sauce and cook for a final 7-10 minutes or until nicely coloured.

- In a large bowl, combine the ground beef, crumbs, egg, milk, ½ cup BBQ, onion, salt, pepper, and garlic powder. Mix together with your hands until thoroughly combined. Cut top and bottom off onion, cut in half, and peel off skin. Then separate the onion into "layers". Use the larger outside layers. Stuff your meatball mix between two onion Layers (essentially making an onion seal around a large meatball). Wrap each "bomb" with 3 slices bacon and secure with toothpicks. - Preheat oven to 375°. In a Dutch oven, bring a small amount of water to a boil. Peel onions; using a slotted spoon, place onions in boiling water. Cook for 4-6 minutes more until softened; remove and let stand until cool enough to handle. Cut a 1/4-in. slice off the top of each onion. Remove center, leaving a 1/2-in shell. Chop centers and tops of onions; set aside. In a skillet, cook bacon until crisp; remove to paper towel to drain. In the drippings, saute chopped onion until tender. Stir in bread crumbs and parsley. Add the butter and mushrooms; cook until mushrooms are tender. Add bacon, salt, pepper and nutmeg. Stuff onion shells; place in an ungreased shallow 1-qt. baking dish. Pour broth around onions. Bake, uncovered, until tender, 45 minutes, basting frequently during the first 15 minutes. If desired, sprinkle with parsley.

- Boil the onions in plenty of water for 15 minutes, until slightly tender. Remove from the pan and allow to cool. Remove the top 1 inch of each onion and reserve. If need be, slightly trim the stalk end of the onion so that they sit flat on a roasting tray.
- Cut about a heaped tbsp out from the inside of each onion, keeping the outside intact. Finely chop along with the reserved onion top.
- Pre heat the oven to 400°F.
- Heat a frying pan and add a little olive oil, garlic, chopped onions and a little chopped rosemary. Fry for a couple of minutes then turn the heat down and add the cream. Remove from heat and stir in the parmesan and season to taste.
- Wrap a rasher of bacon around each onion and secure with the sharpened rosemary twig or half a cocktail stick.
- Place the onions on the roasting tray and spoon some of the filling inside each one. Bake for 25 minutes.
- Place the onions on a warmed serving plate, warm through any remaining filling and serve on the side.
BACON-WRAPPED BAKED ONIONS
This may take a little time to make but well worth the little extra effort, very impressive to serve to your dinner guests, this is one of the best recipes for baked onions you will ever have! The onions may be boiled and the insides removed ahead of time and refrigerated to finish filling and baked later. The original recipe called for only for 4 onions, but I increased and "tweaked" the recipe slightly.

- Cook the onions in boiling water until tender, but not falling apart (about 25 minutes).
- Remove from pot with a slotted spoon and cool.
- When cool enough to handle, cut off about an inch off of top of onions with a very sharp knife, and finely chop the tops.
- Trim the root end of the onions slightly, just enough so they can stand straight.
- Scoop out about a heaping tablespoon from the center of each onion (make certain to keep the inside intact) and finely chop the center, adding to the rest of the chopped onions.
- Transfer the hollowed onions to an oiled baking dish (I use an 11x7-inch for 8 onions, if you are only making 4 onions, then use an 8x8-inch).
- Set oven to 375 degrees.
- In a skillet over medium heat, saute the chopped onions for about 3 minutes in oil.
- Stir in whipping cream and remove from heat.
- Stir in the Parmesan cheese, salt and pepper.
- Fill the whole onions with some of the sauted onion and Parmesan mixture, then spoon the remainder of the mixture around the onions in the baking dish.
- Wrap a piece of pancetta or a bacon slice around the middle of each onion and secure with a toothpick.
- Bake the onions for about 40-50 minutes (depending on the size of your onions).
