2 vine-ripened tomatoes
Salt
1/2 cup bread crumbs
1 clove garlic, minced
1/4 cup finely chopped fresh basil leaves
Freshly ground black pepper
1/2 cup grated Parmesan
1/4 cup olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Slice tomatoes in half horizontally and scoop out pulp and seeds. Salt insides and rest upside down on a sheet pan lined with a wire rack to extract juices, about 15 minutes. Meanwhile, in a medium bowl, mix together bread crumbs, garlic, basil, pepper, 1/4 cup of the grated Parmesan and oil. Stuff tomatoes with the filling, sprinkle with remaining Parmesan, and bake until tomatoes are cooked through and tops are golden brown, about 30 minutes.

Here's my latest game-day treat: Stuffed Tomato Bites. These zesty little mouthfuls are hollowed-out tomatoes stuffed with a mixture of spinach and cheese!

5 small tomatoes
1/2 cup ricotta cheese
1 egg
1 cup spinach (chopped)
2 glove garlic (minced)
1/2 teaspoon onion powder
1 tablespoon parsley (minced)
pinch of salt & pepper
Olive oil for drizzling
2 pieces provolone cheese

Steps:

  • Preheat the oven to 425 degrees F, drizzle Olive oil into the bottom of a casserole dish.
  • To core the tomatoes use a melon baller, or a sharp knife inserted at an angle. Go around the top of
  • the tomato and then use a spoon to scoop out the core and seeds.
  • In a small bowl, beat the egg and stir in the ricotta. Add the spinach, garlic, onion powder, parsley,
  • and a pinch of salt & pepper. Mix well.
  • Fill each tomato with the ricotta mixture. Drizzle with olive oil and sprinkle a pinch of salt & pepper.
  • Roast for 15-20 minutes, or until tomatoes are soft and filling is set up. Turn the oven off.
  • Top with pieces of provolone and add back to the oven to melt the cheese. (The temperature will be

  • Serve as a light lunch or side dish!

12 Campari tomatoes
3/4 teaspoon kosher salt
12 small fresh basil leaves, chopped
12 mozzarella ciliegine, dried well
1/4 cup panko breadcrumbs
1 1/2 tablespoons olive oil
1/2 teaspoon dried oregano

Steps:

  • Preheat the oven to 450 degrees F.
  • Using a small serrated knife, cut off the top eighth of each tomato and hollow out the insides, leaving the sides intact. (Discard the seeds and insides.) Slice a small sliver off each tomato bottom so it sits flat. Drain well on paper towel, taking care to dry the inside.
  • Sprinkle the tomatoes with 1/4 teaspoon salt. Stuff each tomato with a pinch of the chopped basil and a mozzarella ball and set on a small rimmed baking sheet.
  • Combine the breadcrumbs with the olive oil, oregano and the remaining 1/2 teaspoon salt in a small bowl. Divide the mixture among the tops of the tomatoes.
  • Bake until golden and the cheese is melted, about 10 minutes. Allow to cool for 10 minutes, then serve warm.

1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.

2 Tbsp. panko bread crumbs

Steps:

  • Heat oven 350°F.
  • Cut tops off tomatoes, discard tops. Scoop out pulp from centers of tomatoes, leaving 1/4-inch-thick shells. Reserve 1 cup of the removed pulp.
  • Brown meat with onions in medium skillet on medium-high heat; drain. Return meat mixture to skillet. Add reserved tomato pulp, Italian seasoning and tomato paste; mix well. Cook 3 min., stirring frequently. Remove from heat. Stir in Parmesan.

1 pound mushrooms
6 medium tomatoes
1 small onion, minced
Salt to taste
2 tablespoons chopped parsley, plus parsley sprigs for garnish
2 tablespoons sour cream
9 raw cranberries

Steps:

  • Clean and boil whole mushrooms in salted water for 15 minutes. Drain and mince finely.
  • Wash tomatoes. Cut off a cap from the top of each and reserve. With a spoon scoop out the flesh and seeds.
  • Add the minced onion, salt to taste and sour cream to the mushrooms.
  • Fill the cavities of the tomatoes with the mushroom mixture. Decorate each with chopped parsley, and cover with the cap.
  • Dot each tomato all over with sour cream. Place tomatoes on a serving platter covered with a bed of parsley bouquets and decorated with clusters of raw cranberries.

6 slices bacon
6 medium tomatoes
½ cup chopped green bell pepper
¼ cup grated Parmesan cheese
⅓ cup croutons
salt and pepper to taste
6 sprigs parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch baking dish.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. While bacon is cooking, wash tomatoes and slice off stem ends. Gently scoop out pulp, leaving a 1/2 inch wall. Finely chop pulp and place 1/3 cup of it in a medium bowl. You may discard remaining pulp.
  • Stir crumbled bacon, green pepper, cheese, croutons, and salt and pepper into tomato pulp. Spoon an equal amount of mixture into each hollowed out tomato. Place stuffed tomatoes into prepared baking dish.
  • Bake in preheated oven for 20 to 25 minutes, until heated through. Garnish with parsley sprigs.

1 slice day-old bread
1 tsp chopped thyme
1 tbsp snipped chive or chopped parsley
1 tbsp olive oil
garlic clove , crushed
4 large tomatoes
4 tsp wholegrain mustard

Steps:

  • A big platter of these tomatoes goes well with grilled meat or fish, or serve them as a starter with cured meats and crusty bread.
  • Heat oven to 200C/fan 180C/gas 6. Toast the bread, then remove the crusts and break it up into the food processor to make crumbs. Add the thyme, chives or parsley, oil and garlic, then pulse briefly to mix.
  • Halve the tomatoes and put in one layer in a shallow ovenproof dish. Spread each cut side with a little mustard, then sprinkle a little of the crumb mix on the top. Bake for 15-20 mins until the topping is crunchy and lightly browned.

  • Preheat the broiler to high, with the rack about 6 inches from the heat source.

1 ball (8 ounces) burrata cheese
Extra-virgin olive oil, for drizzling

  • Trim the base of each tomato so they sit flat. Using a serrated knife, slice off top 1/4 inch of each tomato. Scoop out seeds and pulp, then place hollowed-out shells upside-down on a paper-towel-lined plate or baking sheet to drain, about 5 minutes.
